tonight on Kitchen Nightmares warden travels to Montclair New Jersey we're after two years in a coma the owner returns to find that her restaurant is near death this restaurant her son has run the restaurant into the ground and he is in complete denial there's nobody in control this restaurant I disagree oh my gosh the menu is massive not always food the food is a disgrace or it's that and the kitchen is a health hazard and unbelievably even the cooks think the food is subpar how does that taste I don't like person when a chef doesn't like his own food out of about to expect the customer Chef Ramsay is in for a huge challenge she's got ingredients from last Thanksgiving will he be able to get through to this lazy owner Michael I need you to step up now moving his ailing mother see her life's work under no circumstances and wait continue to serve food get completely trashed shut the place down that's tonight on Kitchen Nightmares Montclair New Jersey an affluent suburban community just 20 minutes from Manhattan in the heart of town sits an Italian eatery called Leone's open more than a decade ago by Rose Leone when my mom first open Leone's in 1996 Leone's was the place to go if you want to Italian food joosep reservation people will wait in line I was here 8 o'clock in the morning till 12:00 at night I did everything okay cleaning mama treated this restaurant like her child this restaurant was her life about two years ago my mother waiting for a routine kidney stone the operation went bad and she went into a coma which was very very difficult when rosie was ill it was a bad moment you look around you don't see Rosie there's nothing here and that's what hurts without Mama Rose everybody was just scrambling to make it work Michel stepped in and he says he's the boss but doesn't do anything boss worthy he shows up around 6:00 walks around hands out of sambuca songs you're 21 it's my treat watch this little football gets dinner that goes home All Right see you later Michael's not taking care of this restaurant so basically I do everything I do ordering i coordinate staff you suppose the way the menu states my goal does not show any concern about this restaurant and when everybody sees that they do the same ticket Smith if they take naps out of the bag they play soccer after Michael took over the food went to [ __ ] there's no paper the taste just wasn't there anymore business nowadays is awful we are very slow last week if we had 1215 tables on a Friday night and that's back your reservations but I listen to so much patience two years later my combats almost had a heart attack everything I see what's dirty so if this is filthy I'm afraid about what the kitchen will talk kitchen out of control that's crazy they destroyed everything I worked for of my life there was no management in the restaurant nothing y'all 1,400 for the meat over the past month I eat Michael to me come honey you gotta do something like home you told me what do you want me to do but eat Chef Ramsay to come in and straighten them out Chef Ramsay hazily my voice if doesn't work out I will have no other choice but [Music] all right Leone's here we go you think of New Jersey you think of your target how are you doing my White's gonna see to me I'm first name is Michael Michael good to see you guys so you are color owner yeah I think and what's that thing there that's my old television that I watch all the games are old you watch games on there yes sir seriously yes sir but this is the main entrance right yes sir wow this business that flat that you're watching games and trying to deal with customers at the same time yes I do chef really yes Wow you outside yes I come back in in ten seconds okay a little table for one sir I'm busy let's go would you mind I'll see myself busy I'm just trying funny game it's so important because this is far more important than running my business seriously honestly Michael do you get the message I mean it just do you think that's a good impression the customers looking in for the first time no no Chef Ramsay looked at me in such a way like what is this rodent doing next to a television in a restaurant it was just embarrassing is that baby yeah I mean they say that there's never an ugly baby I think I just found one that's not you is it nothing we had one of the worst of course I've ever seen the creepy baby keeps me up at night I don't know who my mother was thinking against everything you see every artwork right my mother's actually owner and I was kind of like the general manager until she got sick everything so you're sick yes I'm saying this rose okay yes okay we meet please I mean are you feeling better yes okay and how long were you back of the business so you just come back now how long were you out for already Wow I'm sorry um how long you have the restaurants in your mind what's wrong with the restaurant what is it [Music] everything okay let's get the group together and let's have a little meeting and a catch-up and I'd like to hear from everybody so I can get my head around this okay yeah can we get the chefs and yeah everybody please Michael so this is John John courtesy are you I'm Shirley truly right how do you do I'm a waitress a waitress I'm sorry John would you do I'm a waiter waiter Lizabeth hostess host s cuz I've met the man that's in charge of the TV control Chef Ramsay is going to tear Michael new [ __ ] I would hope that Michael knows that he has it coming but it is Michael so he probably doesn't know that he has it coming okay good first of all I can't start to even think about turning this place around until I get to the bottom of the issues who'd like to go first Wow Trudy the major problem here is there's no manager there no nobody in control this restaurant basically the staff is running this restaurant right now I I disagree I believe the problem is is that I believe the decor is a turn off the deck hmm this is ridiculous she got sick I had a step up to the plate I take care of payroll I take care of ordering I can't take care of old payables receiving doing the menus Wow it's not right what would happen if Trudy feli oh god forbid where in the hell would we be I don't know the answer that I sure if I don't know do you want it you don't do you yes I do are you incapable I think I am kept warm so why have you done it when I see the business not busy it's hard for me to really show that have you ever had the passion yes I don't think I ever have he's never had Wow is that true I don't think so chefs I fell into it hoping that Michael somewhere along the line as we've learned from me but he hasn't made the initiative Michael please I think the bottom line said that everyone can do more I think the server's can do more I think the Busboys can do more and the chefs can do more are you here every day except Monday yeah I'm here we go except Monday let's say you're here six days a week across those six days a week you're in here you're here what 12 14 hours a day no family I work the dinner shift from like five to ten fact alone so five hours a day out of those five hours a night how many of them do you sit down depending on the situation roughly two so you on your feet with two hours a day yes holy crap what's the break-even per week in this restaurant twelve thousand dollars what we taking currently a week eight thousand we're losing four grand a week sir drowning we've already drowned doesn't cover the expense there is always you can't let Wow okay I'm gonna have a look round I'm gonna be back in 20 minutes okay so do me a favor just make me one of everything on that menu our menu is 15 pages let's go and I just because I knew it was going to look like a freaking Chinese buffet I need one of every pot on the venue we need chicken parm shrimp parm eggplant parm all farms really one of every pizza please don't forget besides I think the pizzas top cop notch and I think most of the food is outstanding ninety or six days a week don't forget you a piece of special - there you go I appreciate it all right more please Oh tea in the window [Music] okay rice oh my gosh holy crap look all this food coming up Leone serves a dangerous dose of indigestion now blow your lungs out that thing and later Gordon's kitchen investigation like y'all confirms his worst fears the raw fail next to the coke chicken which threatens the future of Leone's coming up on Kitchen Nightmares I need to go to speed so I'm gonna keep it simple just make me one of everything after a meeting with the staff Chef Ramsay is anxious to get up to speed on the food I need one of every pot but when he returns he makes a shocking discovery a dining room full of food how many items on the menu over 100 hundred I mean physically their parents Jesus Christ I have a knife before please maybe a bag a [ __ ] sick bag Chef Ramsay I would like to apologize in advance it's just everything's just wait to start here what's what sweet onion pie with a basic cheese pie crust looks very dark is that normal that all this is II just having an off day the oven gets very hard so you tasted that how bland is that I think the texture I don't want put the pace you like the taste we don't like the texture yeah Jesus is that right - that's risotto risotto oh come on guys let me [ __ ] do me a favor what's things here what's that smell is that you no sir what don't think so just know that it's very sad I know what you smelling that no no not not with your state of health I don't want you back in a coma hey sit down mine's full of grit spongy spongy most great then I even cleaned yeah are you crunching great yes yes dirt sands how do you clean a clam if it's steel you run them on the [ __ ] cold water oh yeah Lord only knows what those clams came from at least it was just Sam that's all I'm saying what is that that's our Riviera why is all the vinegar on there keep the light that recipe they love it actually oh my god the chilies the garlic I mean that is a [ __ ] disaster next row what the [ __ ] is that what the [ __ ] is it it's chicken in balsamic sauce yeah production taste it they should come with a [ __ ] warning that will blow your lungs out myth and whereabouts in Italy is that from I don't know oh come on what is this one possible joke there's no seasoning in there everything's bland bland bland pastas bland ah sir like a [ __ ] flip-flop look at the garlic in there too much garlic smell of garlic hissing we're going way too much garlic how many bombs the garlic's in there a lot of garlic yeah are they trying to put me I'll smoke for two years I mean it's bad it's bad I mean honestly give me the chef's out here will you please check my food or even though I think it needs help it's definitely not that there I eat it myself it's not as bad as a chef sir who made this I did it have you tasted it have you ever sat down and tasted your own food sit down where they were happy with what happened sit down come on quickly I leave you taste it I know sit down please yes welcome to the owners there we are I know it is how does that taste no you're not eating that no no I'm not be responsible put you back in hospital sit down you are not eating that how does that taste how does it taste I don't like prison Donna you don't like you no no no how was that it's very vinegary have you tasted your risotto yes I do taste your reserve like yeah stay there never a little taste yeah just have a taste that without usual you've night before I'm a little taste how does that taste Wow it's [ __ ] disgusting and if that's class as a risotto here in New Jersey dude you've got to get out more what if any dish do you like on these tables madam nothing at all [Music] when a chef doesn't like his own food how the [ __ ] do you expect the customer to for me that says it all even your chefs don't like their food and pickle time do you think it's good are you in denial or you Leone's menu is more of a quantity than quality Chef Ramsay returns to observe dinner service and news of his arrival in Montclair has spread and the restaurant is busy for the first time in years Shaya oh you're Michaels wife yes well then he do well yeah yes right tonight won the place as normal I'd like to see how this thing functions I've tasted it yeah now I want to see how it works take it to the kitchen show me the line please they get each other bordering - [ __ ] at once my cowboy sugar hot here's our um fire area salads and desserts yep bad Diana Diana quickly great and how long we've been here I've been here seven minutes seven years yes Wow okay great the main problem with the rest of is what the kids say the main problem is the food the food I like the only thing they work here and I try to take pride in my work but I don't think the food is good Michael needs the eye-opener pick it out okay here we go [Music] while diners try to digest their food Gordon is having a hard time digesting what he sees in the kitchen is that how we heat it we blast it in the microwave that's very Italian that's cooked chicken so you have the roll field next to the cooked chicken come on the Cubs are to blame for their part if they make a mistake I can live with that but something by being irresponsible and neglectful there's no excuse look at that crap in here bloody house bells what's that in there is that calamari that said the air comes in definitely fresh now that I know for a third fresh it's frozen you buy this in fresh it is not fresh calamari we user here is all frozen [Music] what is that in there why is that I think it's real stuff you figures feel pretty sure it's do you put it in there not in powder what is up it looks like meat thrown in the pan or what is it though I don't know it's now labeled hey forget the orders for five minutes and come here dude Daryl to come round don't worry about the cooking for now I've got more [ __ ] issues whereas last time this was organized as in bit organized oh come on what's that molasses molasses Thanksgiving boss it's July what's that oh my god oh [ __ ] mrs. Bruhl Paul it's not my fault that you served me is it that's on there old pork of their left are there that's the old pork when's this one from not Thanksgiving again stuff what mushroom smell that smell let's [ __ ] older than me smell it yours that's your sauce Taral what in the [ __ ] is this oh my god is that flounder that's my office definitely old it's great smell laughs it was embarrassing was mortifying he comes in something that so easily identifiable and no one noticed how is that possible show you something for two seconds tomorrow I am absolutely horrified that's from Thanksgiving and that's a slimy bye old sticky flounder and a sour disgusting cream sauce I mean honestly this restaurant has been run like a pigsty you may be resistant to change but what's become very clear is that your resistance to quality Michael should have been a boss to begin with and have dishwashing you have it done should have been done Oh all of you come here let's go come here how can we work like that you've got ingredients from last Thanksgiving did you smell the flounder yes did you see that cooked chicken the raw pork the raw video it's a joke you should be ashamed of yourselves under no circumstances can we continue to serve food shut the place down after discovering disgusting and dangerous practices at Leone's kitchen under no circumstances can we continue to serve food Chef Ramsay has no choice but to shut the place down you go in the dining room now and just apologize get [ __ ] cleaning get it going Jay tell them no more service for the rest of the night are you still there done cleaning what do you think not at all just embarrassed I'm [ __ ] embarrassed everybody everybody I'm sorry to interrupt you everybody I'm sad to say and embarrassed to say that we're closing down the only for the night not up to par it's not me you deserve so I apologize for you inconvenience I thank you for choosing Leone's but right now is the bus my [ __ ] down shut it down you shut it down sorry guys never mentioned very last by pantyhose this thank you them sorry Victor sorry about that ladies I'm feeling disappointment I feel they merely telling everyone that they can't eat up my own restaurant you sit down please [Music] that's the lowest batting practice kitchen I've ever seen that's very neat it says no a Michael yeah I caught you let it happen on a daily basis do you need to run your business I capture knowing your mother's eyes you don't have you ever walked into your kitchen and opened the door to your refrigeration units and call them hours night ed but I want to acquire enough are they say oh my stop it ma stop it you're oblivious it's happening under your own nose they don't give a [ __ ] because you don't dialer is he lazy yes John is he lazy yes sir truly is amazing yes mama yes right now we have a room full of individuals that don't believe in your conviction to run this place prove to me and more importantly to your mother and you'll stop that you are ready to lead like a manager who doesn't manage my gas [Music] telling me a rag with some soap and water I don't feel like I've given up but I feel like I'm broken I'm angry at myself I think as the boss of the restaurant it was just irresponsible is he capable taking care of this restaurant for myself I don't know I think seeing is believing what's the matter what's the matter huh we're gonna turn the ship around my mother put in almost 20 years of my life in this place her spirit her money I'm crushed that I might learn out I want to make it good but the truth is I don't know if I could turn it around and it's a scary feeling it really is get out of a get some rest okay okay after shutting down Leone's chef ramsay realizes Michael and his staff need to have their eyes opened and he's arranged something appropriate at an art gallery only half a block away take a look at this amazing exhibition come in look at that what do you see food what kind of food you see on there what will in town very pleasurable to the eye is it inviting yeah this is your competition only blocks away from the owners Michael I went to five restaurants this morning lovely thank you I took the pictures and trust me after shooting those dishes I ate everything they don't only look great Wow that was delicious but they taste amazing I was glad that Michael got to see what else was in the neighborhood instead of living in the denial that food is fantastic your dishes set an impression and they remain in people's memories so let's take a look at these dishes from another local restaurant these restaurants called that's right Leone's great guys the food yes Wow I've never seen such an outdated mess in all my life take a look at that and then turn around and have a look at your competition come on Trudy what's the message I'm trying to get across get your [ __ ] together your food is no comparison to what's in the neighborhood I can't believe it but I'm embarrassed to serve food like that chefs open my eyes to to the neighboring competition and I think it takes someone outside the family and your friends to tell you how it is today we move in this direction let's get back to the earnest and get started let's go I think it's time for change and I gonna be the best Italian restaurant in town with Michael finally realizing how much his restaurant has slipped Jordans next move is to push Michael to better understand his business when was the last time you cooked anything never and that means working in the kitchen I want you here to watch me now cook a delicious Phil chop and are simple capellini but know what to do with me you don't need to be an amazing chef to understand when your chefs going badly wrong use your hands continue being blindsided by your brigades I need you to start leading from the helm you start running your business okay Phil chop let's go to be the man of the house I have to take all the responsibility I mean I have to take a kick in the ass a lot of people depend on me back he's following me every step of the way touch of olive oil in there you salt and pepper put on the bone why we cook it on the bone more flavor right get that pan nice and hot how do you know when the oils major a light smoke come up there got the sear in there Wow leave that searing away there's never crossed your mind to come in a cook from time to time I sort of know it's one of those things as the Italian Prince my mother always did the cooking it even s from my mind it is very embarrassing I don't want different positions my restaurant I think it's time for change the most important things to see you know I'm leave my pride aside I want to do that really nice there there we go into completely seven minutes okay capellini pushed him it was very good for Michael Tolleson so what do you think of the Veil the veil was excellent yeah it's probably the best food that's ever come out of that kitchen the staff when they seemed to food they looked at me in a different light knowing that I could do the job and I wasn't just a bump on a log that gets in the front I don't think I've seen Judy peor smile in about two years for the first time Danny tried it's like I couldn't believe it you may recognize him from Sally's ass outside watching television that guy's gone now yebin you Michael let's go after feeling a little more positive about Michael Chef Ramsay's team works through the night transform Leone's from a sleepy and dated restaurant into a modern Italian bistro good morning today we are relaunching the new Leonys are you ready I'm ready let's go [Music] [Music] now big deep breath gone is the dated salmon color now we have something sort of contemporary we have some elegance with the tablecloths red and white chairs the new lampshade cool contemporary fabulous god the walls laced with hideous artwork we used the phrase and put in Prince of Italy very nice as soon as I open the door it was like a whole different world it's amazing beautiful surrounding that makes you feel like you're in Italy I love that campaigns of deplore in this room no more I have another big surprise this is gonna make your life so much easier I have for you the most amazing state-of-the-art point-of-sale system [Music] provided by zephyr hardware and POS lavell it is the state-of-the-art latest touch screen cell device number little each and every dish has been photographed and programmed on that you go to the tables you take you change the order from Wireless touch before you've left the table the orders in the kitchen I might have to cry asking them to get any kind of computer here for years does handwritten stuff has to go and thank God it's finally gone we're like a real restaurant before Gordon Ramsay came here this was an outdated New Jersey restaurant after Gordon Ramsay restaurant fits right in it's just this modern classic Italian bistro in addition to revamping Leone's decor Chef Ramsay has overhauled their massive and stale menu and replaced it with fresh and innovative modern Italian dishes these dishes are good enough to go in any gallery when I seen the food I really was excited the most i popping dishes I've seen in a long time it's exactly the first way I start what I saw yeah now they start off on the top hole in tomatoes with cucumber and a sherry vinaigrette then a delicious capellini yeah fresh crab I love it when you think of Italian classics you think of a chicken cacciatore polenta olives mushrooms and tomatoes vibrant fresh my delicious shrimp scampi i roasted pan-seared cod very nadir a menu 1/3 of the size with 45 dishes that can change frequently got it yeah you happy good where'd you get some knives and forks and dig in oh my good Wow well this food is a complete 180 from my we're serving here before I'm very happy right now I absolutely love all the dishes on this menu and you just could taste the difference of the freshness as soon as it goes in your mouth we're back back in business coming up its relaunch night State the court and it's the restaurants last chance Michael finally step off do you know what you're doing overly destroying Leone's reputation for good we don't get anywhere Chef Ramsay Michael [Music] it's relaunch night at Leone's and after an overhaul of the menu and the decor Chef Ramsay is encouraged by Michael's new attitude and so he expects him to take complete control of his restaurant tonight we're gonna get it done I want you expertise I want you holding the fort together sure yeah king of the castle you mean yeah we get in the weeds we get out you gotta stake it together as a team yeah I'm nervous I'm excited I got the butterflies but I think it's time for me to make this business from the way should I know what I can do it tonight Unitas we're gonna get it done Leona's once a famed restaurant in this community had lost its way tonight with news of the relaunch diners are streaming in ready to give it another chance are we ready to order what would you like okay Pizza Mexico pizza I'm so impressed by this I adore the pls just it was really cool I mean the ease of ordering it was six okay Michael is off to a good start ensuring quality dish after dish is quickly leaving the kitchen and diners are thrilled with the new menu how does everything luck and everyone's loving it I mean loving him but the kitchen has hit a roadblock this right here is Table three as Michael in an attempt to push food out fast has lost control and is sending an order to a table that has already received its food oh come on we're not getting anywhere guy we've already sent the appetizers just shake our was that sex gaming xx their check since it's not the same table now just check yeah we're sending food out twice [ __ ] sake come on Michael Table six and three are eating do you know what you're doing Mike [Music] Michael needs to step up to the plate I know it everyone else Chef Ramsay Virgil I need you to step up stop panicking you're right it's something difficult I now bring the team together the guide to shop for the clean rope you got it good this line to do is mistakes are gonna happen it all depends on how you handle the mistake John April 10 did they get all their appetizers yes they did Alex did you bring this the 19 right and olives in a column area table 19 do I got to keep it together get my head on straight have confidence in myself and stick to the game plan right now listen I need one part deli one Cod one hour check tight and then we'll worry about is flowing into the dining room again at a steady pace [Music] no snags a spray and no complaints don't know how is everybody out there they're loving it everybody's loving it they're loving it yeah gotcha you give me a chicken parm with no home is it shrimp coming with it it's incredible having Michael finally step up he's doing a good job actually sounds like a boss today that's a first you guys are doing a great job too looks absolutely gorgeous okay go thank you my car is now working together with us hey guys come on baby one more and the finish line is here there's supposed to be like that we're looking for for a long time how'd everything go okay oh my god excellent you're back on the map [Music] okay how you feeling good yes yes free back they love the food the old customers right mama Rose I hope you want to bet huh be happy look after your son let him fool you now you need to sit and relax and go around the corner of a little game of bingo he's good enough to take you over I'll look around see my canteen of wars and hopefully things work out and be bed I'd like a new word with you yes sir okay three important words but right now I need you to remember stay the course if you don't do that we're coming off track and we're gonna slip back day by day to always stay the course stay there Portia I can't hear you stay the course take a big deep breath and shout at me chef in my restaurant I'm gonna stay the course good welcome thank you sir good nice thing this was just a phenomenal experience and if you think they choose me to Moses Chef Ramsay that's a God's honest truth stay the course you've got a brother good eye good night he believed in me and he said I can do it I truly believe I can do it you bother me yeah thank you okay you're in good hands hello Wow when I first arrived I saw a lazy owner sat in his pizzeria watching TV we made a lot of changes not just to the restaurants but to the owner Michael found his voice and finally he's now speaking not just for himself but for his mother Wow that baby was [ __ ] ugly only days after Chef Ramsay left Alex him use silverware wrap somewhere Michael took his advice to heart and stayed the course here's your veal chop tear go get a baby and under his leadership guys he needs help jump it Franco help him Leo DS is once again a popular spot in Montclair ask for Rose she can finally rest easy
