to see me out guarantee and I've got some things I've got to do here I think I'm doing right yeah started making this rule you got to make a rule when you're gonna cook anything that's worth it don't go those cages safe or worth a damn whatever you know and I got to put this rule the way I can get it going to I put all these things in it and in here I'm gonna finish a turtle stew now if you've never eaten turtle meat you really haven't ever lived real good I'm 10 years to the end of this rule that's most cooked because it takes a long time to cook the roux and get it that pretty and that's a pleasure and see that shine that's when you know it's done you're looking then see yourself in there like a mirror you really can't so what I'm gonna do is just kind of harden up a little bit and put some on y'all in there cook them until they're more or less transparent till they totally doing actually you know my judges will start with these on your right now could help a little juice to this end to clean or wash them yesterday I know and you always get mixed up in this beautiful brown Roux we got we want a nice dark brown room for turtles dude I like turtles too with a light room or a dark room so many different just so I've got the turtle to put it you know when you're when you're cooking and you add anything always stir stir every time you add anything so we keep it mixed right stuff you got to start tell me anything stir yeah that's a little beautimous very beautifui I guarantee oh boy get over there now this is a cup of green onion stir just keep it this keeps me without having to take exercise stirring rules and things like that partially that's a cup of chopped parsley nobody I left some bell pepper onion green onion chopped parsley partly had a wonderful flavor and it's very good for you they tell me easy for both I need anything is good for me a lot of things in a so it's fun oh boy when I get this going good and we'll make a blueberry cobbler and I love blueberry I really do I love compliment out anything I'll make it out an apple anything oh gosh peaches apricots any kind of good fruit strawberry strawberry make good you really do looking good looking to do it now what I've got to do while I'm letting this cook a little bit you remove this right down and put some water in down it better be water now this is about ten cups of water and into that I'm gonna put if they put a fire on it got to put a fire on that not too high they put that on a medium fire medium low then I got about a cup and a half I think of good wine dry white wine put that on down put the heat up a little bit let me put that heat up just a little bit I'm doing it but just one up a little bit Oh y'all doing good just hate the bar because I've got to me you know what I see that flat spoon it's got that we're making news then into this I'm going to pull some water clean water to be sure that really is gonna be smooth smooth it's gonna be smooth though and I'm most probably gonna put a little salt in it but in this I'm putting soy sauce but you got to be careful if you put soy sauce is very salty you got to wait and taste it got a tasting spoon you know and go oh that roots coming a little all right might as well put the rest of the water in the Hat hold and all of it right now that's coming along boy hot up a little bit and get to it on you the way to look like you're doing he may not be the end of this water and wine I'm gonna put about three tablespoons full of soy sauce I've got watering this I never put garlic in anything chopping garlic until I have some liquid of course garlic if you put in just greasy it doesn't doesn't have any flavor can't even tell his daughter you tell it something but if you lose the good flavor of garlic and it's so good for you you look at a healthy man on the counter garlic on 10 I love it I make garlic salmon just just delight in a really do oh yeah you come along fine rule I like you a lot now into this I got a teaspoon full of dried mint I used mint instead of bay leaf because it done he's going to flavor eyes it doesn't taste like minute just helps help increase the flame or anything you cook it or now this is getting hotter went to you that a little bit yeah that takes care of it but that mint has a flavor that doesn't keep the volume of everything else you know I don't like things to do now this right here is a tablespoon and a half of fresh lemon squeeze just a little bit ago put that in there and I got to stir that violator one good down now over here I've got a little turtle either got just about oh I would say about three to four about a little bit over four pounds and I'm gonna take that turned on my hand to clean and wash them yesterday but just turning that fire off a little bit daddy you know get all this to going good and his beautiful turtle meat believe me I know when I'm told I cut that up myself help clean that turtle caught in Louisiana waters very fine Cajun turtle ain't no question about that I've seen people who need to paint a turtle instead of skinning it like we did like I believe you know I believe in skinning it takes hot water and just use that and say that was good enough but I'm not good enough for me I like the skin it because it's better to do it well come here to me when you're trying to hide like that got you thank goodness for Monday's down he healed so now we'll stir that in there but I'm gonna turn the fire off and get that going pretty good oh man dude I'm gonna put potatoes in this because my good friend jr. modeling on says it gonna start making a blueberry cobbler another little Bluebird I love carpet I really do I make my lemon juice with most people I find out to kill my tasting good so I'll kept making them like that your big room to use that self-rising flour you get your sturdy and it's good mmm want that meat stick into the room and won't the roux stick it to the beat cuz in the dog you don't spread that flavor like want to get all that in there we possibly can the car I made it to go in there and we're gonna get it all in there too and this weekend me you can make this up total to different from this if you want to you make you ruin in a pot like that and add the meat and write down a little bit more to some people parboil it they totally I don't in fact this recipe says powerful and I wrote that in there and I erased it so I don't I don't fireball it's gonna need four ball now stir that as I tell y'all quick little story while I'm stirring this I have a this happened on the airplane I was on one time and it was there was a kid you know I never been on an airplane before and his ears began to hurt him a little bit down I had a nice little flight attendant and she said something the matter with you mister she said he told me my ears are just killing me oh she said I'll give you some gum so she gave him some chewing gum just as the flight landed he put on him felt the hell he's light and she finished it what's the matter something wrong he said would you mind telling me how I'm gonna get this gum out of my either that's good that looking good remove this pop come out of my weight and I'm gonna put your potato in there and then I'm gonna go over then start on that beautimous you them with a little of blueberry cobbler I love any kind now I use my hands they're clean now these are chopped just the right size you know this and I would taste this in my tasting spoon for salt I think it may need a little salt even though I've got 3 tbsp of soy sauce in this I think this is gonna need a little more salt get this pool to get this pool to get some fancy parties it persone eat some salt like XML that's gonna need salt you know that I'm not gonna put much softer than just a couple of teaspoons full and that's a teaspoon and I know this in doubt and Thomasine is out there they don't believe I'd measure teaspoon full of salt in my hand but I did want you to take a good look at that and that is teaspoonful that's it I'm gonna put another teaspoon just like that in stir put this right I think it needs a little hot sauce in there cayenne pepper to taste this is cayenne pepper mr. Tate not taste that's just about a teaspoon full nothing it's not quite a teaspoonful client that will put the lid on this and turn my fire down and let it cook while I go take the big picks that beautimous beautimous that put this on simmer that don't look like similar to me but had yeah that's that to simmer then we got I'm going to to make this cobbler I got the right one what do you know about that in this I put a stick of margarine I use Martin instead of butter because it doesn't burn as quickly it really doesn't into meat taste is good what in the world is blueberry cobbler I'm gonna make eight to ten servings you see it's wrong a little bit is what I'm gonna put it in right down mean get one stick of margarine or butter you're putting me like that and you stir that around and melt it down cuz we gonna put a lot of other things with distance in him I'm gonna put a half a cup you know that's a whole that's a cup and a half of sugar I'm a meld into this this Margaret let's call it butter just for fun but um I have my recipe when you I'd love to create things and I don't ever try to remember my people and I read them in put them in cookbook and they come out all right now into this don't you know you stay right there cup and a half of sugar sugar I'm gonna put just a little bit of flour two teaspoons full of all-purpose flour some more all-purpose you know murder this so I don't want any of this self riding because I wouldn't know how to make anything it rises by itself there's no way for me to do that that's pretty stuff flour but that tell you how many now just about 2 tablespoon all-purpose flour I'm spread it around in there and store it in your lap in the help that he'll get into this I'm gonna put a half a teaspoon full of salt I hate to throw anything with a half a teaspoon but that's what's all the salt you need and believe me that's a half a teaspoon I'll be willing to bet anything you want to it now put that in there like that and then come the blueberries we gonna put them in now in sternum a little bit and we also gonna put 3/4 cup of brandy brand-new toilet in there you will let this cook a little bit he fourth cup if I turn the fire down so down to low I want y'all to cook cook all about all out of that bread and all I want you to do now I'm gonna let that cook while I'm doing something else I'm gonna mix up the topping but it's the crust now cook baby go ahead and cook you look for me I'll tell you that but you got to cook in this bowl I have some more Martin into that it tells me I got to put me put this way and see it I got to put dog 3/4 cup of sugar there it is red there you know makes it good but all at once you don't wanna I'm gonna make it dissolve dissolve itself got you hmm make that crust it goes on there and it's so good come on get with it get the movie in with you yes sir let's go into this I got to put some flour one and a half cup of all-purpose flour goes in there along with some baking powder I think it's about a teaspoon two teaspoons oh no one teaspoon for baking powder it's all I need and stir mmm oh you kid do it all right now into this I put fruit juice so we got put a little salt I got to put about 3/4 teaspoon salt will marry that carefully do got it in there put this in there like that and put the fruit juice and stir it in good I use pineapple and apple juice I mix those two together and they make a very delightful taste in this in this crust I'm gonna just stir this up real good didn't want to taste some of this you know it and I am all right Justin leaves on a hot enough that bluebirds I'm gonna pull you in this little little casserole dish and pull this on top of it let it go all the way through it just have to put you right over here out of my way while I poured this shut it off I'm gonna put this in this casserole dish come out of there did you hear me tell you to come out of here put that in there it's pretty good spill if you own he'll eat them later but that there like that put you back there out of my way and we pour the batter over it and believe me when I tell you it works there we go you know then we put it in the oven and cook it till this batter Browns that's all it is to it just the easiest thing in the world and I'm gonna sit out and taste me some of it I don't care what anybody says wrap this minute put that there like that sit myself down I'm here to me well you there's nothing in the world but a little blueberry cobbler guarantee i'ma have to use my same spoon to taste this wonderful turtle stew but I'll lick it real good and go back in there mmm turtle stew come here boy turtle meat all the wine yet to see that's a double ship oh man [Applause]
