like to know what I'm talking now I like this good I believe in easy cooking ability [Applause] IOR you know having done a Cajun year in a long time that's a good Cajun yell guaranteed and today we're gonna have sausage succotash and we'll make a potato salad without potatoes I'll show you how it's done and it's good to a guarantee but I'm gonna start off with solid sausage succotash you know it's hard for Cajun to say those two words at the same time now I have here some sausage and some corn and some butter bean and tomato and onion can't make anything good without on your that's for true and the first thing I want to do is put some olive oil in this pan here this this is a fish fry pan skillet whatever you want to call it put that in there this recipe says 1/2 a cup of olive oil and I'm not gonna wear there got one board for me in nice event don't takes quite enough that's why I got the bottle here just in case you like to take a little bit more than a half a cup more to cover the bottom of that pot very good got it on the end of this I'm gonna put about tuck a cup of chopped onion and I'm gonna turn the fire on underneath this too and I got to always look at this fire you see which on I got it never having on it which one is wish you know but that there out of my way but I want to turn this fire on and I think it's this one right here you know I was wrong again I'll put that on about a medium-low flame I don't want it to cook too fast and I'm gonna start a little business to be sure that this onion get clear all in one time you know and to that I'm gonna add about 1/2 a cup of bell pepper sweet pepper whenever you anything you got to stir my hand to clean walk them I think I might have to do that and I'm gonna stir around the way it's gonna get all of that you've got to kind of get to dump everything you're doing with it you not gonna be clear you know that but they go get done and then I turned to there so about a cup of green on y'all oh yeah on y'all come out of there the Ewing that's going and stir but it's sausage I have here don't have any sodium glutamate in it you know I know whatever Bible smokes I'll just have that in I thought some people it doesn't agree with it agreed with me but I just didn't want to take any chances on anybody not heaven this right here is Rotel that is spicy tomatoes and it's a very good then that answer that's right stir it up real good while we're going I got a story I'm gonna tell y'all after a while I got to get this food to going good though we've that smelling good already you know these are peel Tomatoes they come up on him in there now put them in there right now okay and of peeled tomatoes because yeah I don't like peel to me about tan tomato they don't eat these these are good you see that and they chop real easy we just go and not stir a little bit after chopping a little bit then chop them some more yeah it's the chopping good time had by everybody out your auntie now I'm gonna put some whole grain corn you can scrape it off the cob if you want to you can get it in a can it tastes about the same in this soup rotational I'll tell you that I'll need every every gram all I need you know got it put that there like that stir you can put that spoon down Justin you know better than that and that's gonna smell good mmm tastes good I'm gonna eat some of it I should tell you that for true now these are lima beans in a good succotash lima beans always has a place they need to have a place if you really oh boy it smells so good all day in order to put a cup of water in there just a cup of water it's nothing but water that not wine no it's gonna get hot in few minutes you oughta be able to smell this real good I guarantee into that we're gonna put a little garlic 2 teaspoons full of chopped fine garlic you know in there every every bit of it is chopped I don't think I left any in there and you put that mission started good all over get it all over you know all in one place take take a nice big bite to nothing but garlic as much as I like it I don't like to do that I made called egg sandwich oh that's also good yes mmm looking good smelling good now let's put the sausage on that now this is a pound and a half of smoked sausage that we sliced in kind of chunk slices you know to make a good supper - go in there like that mm-hmm stir it all in there good got enough juice forgot to worry about it burning wanna taste this already oh that smells so good hot air gosh you old boy but that look good more taste I would taste better than it looks now I'm gonna put this lid on that and I'm gonna have to turn that fire down a little bit because believe me when I tell you that fire gets hot from your chair but you don't see what I'm doing going but turning that down too low on the stove it works real good and I'm gonna tell you a story as soon as I kind of get the whole this stuff cleaned out on my wave because I'm gonna tell that story and then we're gonna making that potato salad without potatoes I know you don't believe me but it's going to happen wait no I'm just gonna set this over here by my walkin game because I need the space and that's what I want to tell you that story about this was way back there when your space people were just really getting started and they were gonna shoot them into the moon and this whole Cajun lady was worried about him here whoo she told me we called her grandma she said I just I just don't know what I'm gonna did I be praying I said what you've been praying he said those men going to the moon well I said they gonna make it here but I'm praying that that moon is plumb full when they go there so they didn't hit they hit aim at it a lot better and be sure they hit it I guarantee and she will feel potato salad without potatoes here's my without potatoes right chill ain't nothing in the world but saltine crackers that's what it is a full pound of them their whole box all these really funny thing I've been crushing on this waiting to do this new you all to see did I do pushing myself let's see if I get this thing always have all these little thing but I do they get them oh and I'll tell you that my hands are not greedy in my head come on now we've got a lot of things to go in here your saltine crackers pushed up in the little packages I'm pretty sure we're able to rest of these things oh don't you fall on the floor and their pew you have a kind of you don't want it too big for just about right now now this is a lot of people I've done this all over in the country Buffalo New York Omaha Nebraska several other places all over the East Boston and people never did recognize what it was that's what's funny to me I guess one lady recognized it and I think she's been making it but I've done this a lot of time they just don't believe it's not potatoes but it's not potatoes and what I'm gonna put us here is a couple chopped celery me your celery necessarily what it is very put that in there and star always makes it good because you get this all going in here you got this get to go home but to mix all together the opposite way and then a cup of chopped or on your own for me alone you now to me potato salad and potatoes and without on your own and this is close to potato salad not but it Raul for clothes in the year my mother told me this it when they said to make potato salad didn't haven't so she used consulting practice nobody recognized the fact it wasn't the case so busy talking with each other and all that stuff you in the end it is a cup of sweet relish it is spread around a little bit won't get it a bit of that because that's all good let's stir it in there good tool let's turn they're good and make the crackers good like the getting's use yet they're not with it you think you hauling anyhow oh man that's not make you smell battle oh boy no indeed Adam I put a couple of chopped dill pills if you go stand there company how are you doing they're good I just melted Bowl like potato salad all the time and I'm never doing there one potato in it this is a hard boil eggs I'm gonna put on there six big hard-boiled eggs get all of it give me tough you always are working guaranteed we'll do it right looking good there baby I'll guarantee now I'm gonna put some black olives I like to put that all those black olives in here here we go straight around topped with chopped things real good I think I'm Olivia American you got chopped you got to go we're supposed to go the angel spread around oh boy that's looking good looking good just right and a cup of chopped green olives stuffed with tomatoes come on Polly I just will get out there another legacy in their new room like that stir that around good you know the secret anything every time you add something when you're cooking that is the time you had something you got to stir in fact I've been called stirring Wilson in hobo camps all kind of places and this is green onions I'm gonna put on this right now oh that would help anything give me star on it up stir in good oh man they're looking pretty all the time now what I got to do I'm gonna make a sauce to go in this in order to do that I got to move this back a little move these out of my way move this over here move my recipe where I can be sure or leave anything out of that saw then I got this nice bowl right here or the whisk in it for me to just beat hell out of it you know that is mayonnaise in that jar right there and I'm gonna put it in this little deal for me to whip up real good come here to me you put him in their jaw another jar that's a bowl show it I'm gonna get all of that man that's it that's how come I got this little spatula be sure get it all you've got to move over that ball now you don't make it this you put a bunch of itself that's enough and you keep it overnight you got to have some oh man there's you're gonna have to make more than that man is to it put that in there like that and I'm gonna just just beat the daylights out of district soon as I can get to it then I'm fixing to get to it they got some old thing but they take care of that the leader in order to do this right it's the only way I know to get that over there it doesn't hurt a thing and I'm gonna wipe my fingers although I'm not gonna put it in my mouth like a wolf you're watching me without of this towel right here for that now in do this I'm going to put some horseradish sauce which is delicious it helps the flavor almost anything including this let alone beat that with Lou olive oil and bring it right back to the consistency there it is right now consistency you know has a good word you learned it hope it's the right word someone get that I'm gonna whip this with a little olive oil I got to put a little out of the water and get that man is hopeful he just gotta hope it says on this recipe about got the endowment didn't get it then didn't see how much mayonnaise I won't come out I want you in there yeah about 2 or 3 tbsp 2 tbsp of make and beat this real good put that right there one get it bunnies see how that just beat up real good just like it making mayonnaise come on is being there's people talking about that whole time me and there's mine is let me see if I'm missing anything nope nope I'm not six hard-boiled eggs which is soft gotta write them and put them here just beat it in here to ask it with this boy that had a right motion that should take a little more olive oil I'm gonna put a little more in there just a sliver teaspoonful something like that you know that's a sliver teaspoon Justin Wilson teaspoons easy cooking no no no whoops uses sauce tablespoon full then I mix that reveal good in there too first time which songs have been whipped and I'm whipping it I'm guarantee you that I'm living it and stir and handle it and get it all over the side that or lose any of that to hood lose and I think that's about all I got to put in there and what I'm gonna do I'm gonna pull this and then mix it real good and I'm gonna taste it I'll tell you that right now you got the way over there can't help but get a little bit on your hand that's why I have this dish towel wrapped on my leg there's one you see right there let me get this spatula cuz I need every bit of this believe it or not every bit of it I wanna be nice how are you going if you're gonna get away from me but I do like you do it no that's about all I'm able to get from that and I'm gonna mix it real good oh yeah now let's us mix this up real good it's gonna taste good smell to do it alright it got to put a little salt in this I would imagine such salt to taste and notice I'm putting a loser down hot sauce or anything like that in here we're gonna mix you up and good I know a little giddy in Buffalo New York I made this and she said I don't like potatoes I thought this doesn't have potatoes in the ladies literally you should know potatoes no a lot of T's that had a little bit of things and she tasted it I didn't say that word didn't say a word he hit every bit was in the little container and then she left and walked around went all over the store I was in it came back didn't say a word just reason got one of those ain't every bit of it I kept boiling wasn't one of us you like it or not I didn't want to hurt her feelings but I still wanted to know he didn't say a word just walked all him back and about what guests I've ten minutes ten to five minutes more no more than that and she she's got another 180 you know this feels like it's boiling just right and this is going along fine mix them good nice and juicy I hate a dry potato salad don't you mean got just going good here now doing good you know I know when I'm cooking by myself and over and around I just staying up a storm and that's what comes them the right move the music background in my shows and that's where it all comes from that looks good enough to eat done you know like that don't know what to tell you what I'm gonna do we'll leave this here just like that wipe my hands real good and then we'll head that way and taste some of this and you'll all go get a taste to guarantee but that is good stuff move that out of the way don't live in sit down juste and I'm gonna do it walking on the back of that chair hmm well that potato side without potatoes there's some succotash and I will see just exactly how I taste in just one minute good yes mmm that looks so good I hate to disturb it but I'm gonna have to you know how it is be a gentleman put that nap you know near beltram won't fall on the floor without you now be careful don't go right and poor little what little red wine I don't I don't don't drink a little white wine when somebody says what do you have to eat then we're gonna have to eat tonight and you tell them chicken there's your old white wine I see old wine but I prefer red wine that's what I eat this is succotash right here I got to taste it just died in the teeth it is a good piece of so see sausage coming up go home that is good it's took them
