[Music] hello down I'm Justin Wilson a number of years ago someone told me about a new way of cooking that could save time and made meat and poultry and even game taste twice as good as cooked the regular way that new method was plastic cooking - let me tell you I got me some of them plastic cooking bags and commence to cooking everything I could think of in a bag one thing I discovered is that you can cook several ducks at one time in a bag you're throwing seasonings topped bag and punch a few holes to let out the steam let's be very just and stick the whole mess in the oven the results a wonderment I'll guarantee look back with me at the show me 25 years ago for Mississippi educational TV and if you haven't already discovered how great cooking in Bank it's really you will now [Applause] I'm glad for you to see me I guarantee we're going to fix it up today first we got to clean him real good I got one right share he look like he's pretty clean that's for sure but they got a couple of pinfeather on there you got to be sure you get them out of there so that don't help the flavor non them fella a hug guarantee that for sure that ducks clean now find a place to put that now I'm gonna get some ducks from the refrigerator and rinse them off if they need yeah they pretty yeah so ordinarily we would have to rinse that duck with water and we want a dry and really good because we're gonna season him you know he like the hunted up when I got them out of refrigerator what a toy you know they didn't get there by himself no that's for sure you know every time I see a duck I think about that whole kitchen guide friend with me he took a certain big shoot from Mississippi hunting every year and he had a problem a drinking problem he wasn't alcoholic he was a drunk with him and this fella but went with him every year knew about that but he missed one year he just missed one year and in that year he forgot about them problem so when he brought himself down Assad was on the hunt with his favorite Cajun guide he brought along with him a fifth of all Master whiskey and took it with him they got out in a pirogue boat and that Cajun couldn't kept his eye out for them whiskey what he had he said give me a taste of that he steered or forgot about that and he got that bottle so he took a tasting right now and he kept the bottle and it was hot that day and it was not many duck fly he didn't get none up close so he hauled off there and drink that whole spit the whiskey and get drunk whoo that's why one duck came by he made he call him up he wasn't too drunk to call him but they moved in the boat in that dock come closing that fella from Mississippi he got up in bloom they will bloom if they'd gone did not move aphasia not one little drop Cajun God he jump up there in point that going up in air and blue that duck fall down he must have been a hundred feet in the air he fall down in that fella from Mississippi say whoo that was a good shoot I guarantee that God's a man with a bunch like that I should have got 12 all that mock their own now we're gonna stop these duck and fix them in this bag this Brown and serve bag we go cut it on your onion to you in four quarter and Apple in four quarter we're not gonna leave one quarter there and we're gonna stop them duck with a clove of garlic a piece of apple in a piece of onion clove of garlic beat on y'all peace applet don't make some different what rotates you get them on just so you get them all on hand yeah I got one thing of garlic left over I'll put that in the gravy don't worry I'm not gonna waste that then we take them we gonna salt and pepper these duck little red pepper mmm I'll put the blacktop on that too yeah somebody in like the hole on that I'll guarantee a little salt and we can rub a little olive oil on there mmm-hmm that I live always gonna make it brown pretty and give it a good flavor to it help out all that help then I'm gonna put them on this bag right here now you know we like to bag our look that's true but we got a new way here it's brand new I got to get that open yeah there she go we're gonna put that duck on now and put it in the bag down in there real good yeah artist man good and on you don't open my Sciences up yeah don't wanna lost any onion now I got that in there like that and I'm just gonna get a little onion in not gonna cut this a little bitty pieces just gonna cut it up to give a little flavor to the gravy we put that all in there too and I might just as well put that little clove of garlic I don't want to waste anything put it in there like that mmm it smell good too then we put a little Worcestershire sauce we spread that on there like that measure that real cap then we don't want to forgot the most important team one cup of salt Anwar get them duck drunk show their teeth put that on there like that and then we close this bag up and seat it but a little thing would come with it put that on there and shut her up tight you can get this out of my way right here too now you see this fall that's a two prong fall I'm a punch at least six holes in this bag I'd say at least sometime a punch more more put seven just for good measure you do that so that your bag will not explode in the oven your temperature 350 we're gonna put that duck right in there and you don't want your temperature to ever be over 350 when you're cooking and eat brown and serve bag now that's going all right mmm you know putting them duck away like that let me put this down yeah it remind me of a story I got to told you get dying to tell you this story years ago I've got a couple of friends and one of them was told this story on they self they say we go over to Fall River's that's about 25 miles from Baton Rouge we go over the fault rivers to hunt them duck me and Jon batiste and we go get one of them cabin when they got there for a dollar and a half you know that's a long time ago I guaranteed they were getting them cabin it dust docked and we put ourselves in bed because we want to be sure we get up when don't make its first little crack so we'd go out there and look on the lake and see if there's some duck out there well we get up when don't make his pretty little crack if we go out there look on that Lake and she's black with her own tea all over them like we rushed back in the house not getting my twice barrel Caribbean and John Gotti's get his automatic shoot gun as they once whole gun would shoot three time hand-on from the same hole at the game warden and down if he ain't down and shoot five times right from the same time we go outside then we get on our bending like a Halligan with all this little patch of grasses and make like we eat and that little patch aggression hide their real good you know we get clothes clothes clothes on them dog then I'm raised that quiet Bell Caribbean go and get at least he haunted the first shoot they said so far in zoom the sky get black wood duck not even my pole do it laughs out there man that put me hot in Jon batiste he lost his temper pum I said no lost your temper he shout on lost it cause he don't you see them cow eating waterlily on the edge of them link down there indicates care for that he say but I ain't no cows are you going to be one ugh is how I'm going did that I say we're going to borrow to the slaughtering house and we gonna get it to cow hard for 50 cents for bit and we gonna brought ourself back then we're gonna get them same cabin and get on them cowhide the Mar we gonna get them doc he say let's go they go to Baton Rouge we get to her car hard we brought ourselves back we get him same cabin for another dollar and a half we put herself in bed with it look like go and get dust doc or do we want to be sure we'd get up before dawn make his face a little bitty crack we get up in the goddamn we look on the lake and she's black wood duck some more we are guarantee we go back in hard not getting much wiser our Caribbean Jon batiste get it automatic shoot gun we're getting him cowhide we got front we get on the cow high me I'm the front Jon batiste he's the behind you go to this little patch of grass and make like wheat and that little patch of grass make like a look just like a cow in this little package that little patch we get clothes clothes clothes clothes clothes on them though and man I'm red my gone gonna get at least 200 the first shoot this it's a quarter and just as I do that John but he's beating me on the back blue blue mas a man ladies you're gonna shoot do not you see them duck out on the lake huh you say forget about them duck you're comfortable that's about enough bull and we got to go on with some cooking here and I'm forget about them duck too like my friend so what I'm gonna do right now is cookie goose it gooses you got a good recipe how to fix the goose and I'm gonna get one rat now you know this looks like this shows for the birds high soft I'll tell you the truth we're getting goose but I wanted them goose is in here we got to show you how to fix that oh boy that goose looks clean he's fine but we go marinate him in one part of a vannacutt to you in three part of water now you know what as Cajuns say we put him in that van egg and let him sleep all night if he's a wild goose if he a while the east he's wanted just wild in the backyard you got to run him down about the way I won the tree our that's about all it took to did batter now put them goose on here I got about a pint of vinegar here we're gonna pour them on there real good pull them all over them gooses this is some water that we measured now you don't have to be exact in your measurements upon that mister you can know you want to cover them gooses that's what you want to did more to cover him with that marination cold water we're gonna put that on him and that's about right we got him sleeping that all night long he's a wild goose we couldn't call him at all so we go let him sleep all night with this out of my way too [Music] now now I got a new gooses what I got here dried chip he been marinade him and this is the team team geese he's been cleaned and washed and marinated now after you marinate upon our goose or a duck if you're gonna mandate them you want to be sure you wash them real good more all or that dog marinade off of them now we've got a few little ingredients that got to go with him they don't y'all don't open my science it already first I'm gonna salt and pepper this goose with a little red pepper stand up there needed a little black couple not much I use red a public art I like the flavor but and it's digestible black pepper not its root wood in red pepper is a vegetable get a little that salt and pepper inside that goop be sure and do that if you don't need that you're missing something put this out of my way now now I'm gonna put up a hole Turner in them gooses they now that furnace that helps the flavor is take the wild taste out of a goose or a duck believe it or not it sure will do it to our guarantee now over here I've got a rule first you make a rule this rule we cook just ahead of time and it's just the right color right now now we make that rule with about a cup of flour and about 1/2 to 3/4 of a cup of olive oil then we'll use out of all the court number one we like are the ball number two it's good for you it's low and that real status stuff I don't know how you call that cholesterol you know now I'm going to put in here two large onions that have been chopped up and about 1/2 a cup of parsley now let me tell you something right now pasta there's a wonderful scene and most people don't realize that they use it for garnish much there's a wonderful seasoning that's for sure I'm gonna stir this for about two or three minutes and put that part out so it won't burn - you got to watch them rule your burner really got start all over and that's bad Oh guarantee that bad you know this reminds me all these gooses and ducks what I got chip I never forgot this old Cajun we said he gonna cook his son was first hot you know all pop I don't care what are the Cajun the any other kind they like to or the Sun the thought that they the very best in this dislocation ain't no different he took his son is a son look it's time we learn how to hunt you tell you you want to go and say oh yeah Papa he's your kid tomorrow we gonna go out and get them gooses he's he ok the next day they go out and get in the pirogue boat and they're getting the blind and Papa stick both in out in case somebody shoot straight up you know if you know she gonna turn over he's your case on when him gooses come we'll show you how that did you got to get the very best and harm that the very best shoot to in arm that and we'll show you just how that's did is he okay nearly burned my route who told that story now I got to put some water on that tree cup of water I got measuring it a little picture yeah and I put that on them rule and stir it up a little bit more they kind of blended in together you know that's what you got to did got to blend it up together now I'm gonna put some garlic you know I always remember never to put you garlic in anything any kind of gravy until you got some juice on that because if you're put in there when ain't no juice is gonna get hard don't taste good and you wonder what that is that's rock what that rock is you don't got in your mouth when you go to chew in garlic go get hard like a rock now just this gets hot that rule will join together with everything and be just as pretty and come out a real nice brown gravy put it a little more hot now I'm gonna put just three cup a salt turn wine on that mmm that smell GU guarantee now you know a goose them gooses they very dry and you want to use something to be sure to hold the moisture so I used cream of mushroom soup and it came out of there good yeah we stir that around in down you know put the juice of a lemon in that after I get this Sturgess to read a little bit the juice of one lemon to help take the while and about a tablespoon full of Worcestershire didn't make anything taste good when it's cooked one tablespoon got that right now we stir that just at least a little bit so we can get blended together and it dudes now I got a a bay leaf over here that that belief is got a teeth Pickstock true that can read we got them teeth pick true that we don't want a lock that Bailey we're gonna stick that belief on them gooses so we don't lost him she then put him on there then we're gonna put them goose right here in this right here man that's nice and warm I put my hand on it and that Bailey be put there because we're gonna took that Bailey out in about an hour just about an hour then we gonna took that out now I got an open year at 375 degrees now I got to put something in here that I forgot to do but that ain't nothing unusual we do that every now and then a rack underneath them gooses in the reading we do that we don't want them goose it to burn oh that's a lot better yeah hmm that smell good and we're gonna cook them for two hour but we gonna base him every 20 minutes and I'm gonna stop right here and show you what I mean by bass we mean do like that it don't take long about tree sweeps with a good base tin spoon or ladle and you got it me we're gonna put him in here and I'm gonna get me a hot pad and show you something that most people don't realize we gonna show you how to base one in an oven so you won't took him out and get your temperature all bad you want to keep that temperature up just as much as you can just baste him one time like that maybe to put your head back on now put him in that oven like that and let him go now the way you told how he's done is the joint you move the joint with a fork or a knife and that joint moves really easy he's done some people like to stick a fork in there but when they do that man when they do that well they ruin all the juices now I want to show you how you took a duck we got them ducks but cooking it but I got one that's already dead let's take it out of their bag you slipped that back with a knife Louie and you reach into half with a fault but call them duck is hot yeah and you'll get one out of there with that fault I'm gonna put one on this plate I'm gonna go to the table and eat that to note that pretty oh man now I want a first of all I'm gonna cut them gooses Cobb just at least a little bit over there for me to eat and it's juicy you notice that this is juicy as it can be and tender tender tender oh man you get it in the gravel are you calling gravy on that yeah there's some hot slob I would like that here in a wine we put on that mmm get myself down [Applause] [Music] [Applause] [Music]
