hey everybody today we're going to do an old-time diner recipe and it did come from a diner from in the area that I live and it is hot dog chili and it is absolutely fabulous a lady I go to church with used to make this for the diner she worked there and so she brings it when we have hot dog and hamburger not at church so she gave me the recipe and I wanted to share it with y'all but before we get started I wanted to give a big THANK YOU to so many of y'all that have sent me cards letters and gifts it really blesses my heart means a lot to me that you think enough of me to take your time and your money to just bless me and there's been some things that different ones of you have said in your excuse me your letters that really have less my heart so now that I read everyone and I think about y'all I pray for you and I love you I thank you for making this such a wonderful experience on YouTube for me and just making me feel so good so with that we'll start our recipe and so we have a part I'm gonna turn on the burner and I'm gonna turn on the correct burner because you know I've had two bad experiences with that burner I'm gonna put just a little olive oil in there just a knife to saute these and you and I've cut the onions pretty smile I just think it's better in hot dog chili and you know you can use this on chili cheese fries hamburgers just whatever you want to use the chili on it's not just specifically for hot dogs you could eat it with some crackers if you wanted to but the onions need to get soft and when they're just about ready I'm gonna add a little bit of this garlic that I put in olive oil so it's starting I see a couple bigger pieces the onion in here that's okay this does take a while to mate because you have to let your liquid boil down out of your hamburger quite a bit but it's nothing that you have to stand those up and it's just part of the process of making it so I'm gonna let this guy for just another minute or two I don't want to add my garlic see same look at you know if the garlic burns it was just really ring your home recipes okay we're gonna go ahead and fit some garlic in there and I'm gonna believe that's a nice tablespoon fool in the onion that I used was a warrior so will they forget the music and the smell of onion garlic now we're gonna take some raw hamburger I have to just a little over a pound packs or blocks in here I'm just gonna take one the kiss k-11 spaghetti with the other one you just put that in there like that you don't cook it or anything break it up just a little bit and then we're gonna cover it with water so as you see it is covered over with water I'm gonna put it back on the burner then I'm gonna turn the heat back up say this can come to a bowl and you want to break apart your hamburger because if you don't it will bowl into clumps and you don't want that so you just get your hamburger all broken and crumbled up and you can put a cover on it if you want to if you don't it's okay it doesn't really matter but you let it come to a bowl and when it starts boiling you cut it down until it's just a low simmer you don't want anything like popping out of your pan or boiling and your pot and then you just let it simmer and what you're looking for is for your water to reduce by half so there's nothing to that part of it just check on it every now and then it will take a while and let your water reduce by half and when that happens with mine I'll come back and we'll get to the next step okay we're back and the pepper her meat has cooked for about two hours and about half of the water has pulled away so now we're ready to go on to the next step of our partner chili so here it is and it doesn't look all that good but now in this next step it'll start looking a lot better and more what you would expect it to look like so what we're going to do is add paprika and I'm gonna add a big heaping but not that heaping tablespoon of pepper paprika like a little bit carried away with that and we're gonna put a big heaping tablespoon of chili powder we turn that down just a little bit we give it a stir we're going to put about a teaspoon of black pepper and a teaspoon of salt and stir it up again I see that there's like a shadow on this and I'm not sure what to do to make that better okay I have Worcestershire sauce and I'm a pity nice big tablespoon and that in in mustard I'll put a tablespoon of it and then the last thing will be ketchup and I'm gonna put between a cup and a half and two cups of ketchup and so that is it so what we're gonna do now is for approximately an hour it's just going to simmer very low simmer and after that hour of samri's it'll be done let me see if I can show you that place what it looks like so you're just getting all the flavors in there nice and blended with this last hour of very low simmer so when it's done in an hour I'll be back and we'll give it a try okay the chili stone and it really looks good you need Simard relay for about an hour is what it looks like now I'm gonna put some in a bowl just enough to do a taste test here it is so good I don't think there's a think about it I would change its if you've ever had all time hot dog chili this is what it tastes like so good and I don't know if I said it before but cheese and chili fries would be really good like that it's delicious on this cracker so this is the
