[Music] Bali Indonesia for many baldie conjures images of serene nature beautiful beaches and in all-around paradise for those looking to get away but there's another side to Bali [Music] after digging deeper we've uncovered Balinese cuisine few outsiders have seen before Oh No what is this some quality creatures what is that part a little yellow part that is thanks to food that elicits a powerful reaction on my eating companion for today was born and raised in Baldy I'm here with my man Glee Dodi and he might be an even bigger goofball than me okay together we're taking on the most extreme food this island can dish out [Music] today we're setting them up and knocking them down starting here today's winner we have a flower box lawar is one of Bali's staple methods of food prep almost always containing young jackfruit and long beans other veggies tons of spices and the protein of your choice the meat for the wok could be almost anything usually it's something more like pork or chicken behind us in this restaurant they're gonna make it with turtle a little bit guys we're eating a little bit of a turtle not so long ago in Hanoi I had an unsettling turtle experience we can carry a bladder photo as standard the waiter showed us our live turtle then proceeded to cut it in half and deliver us the fresh blood to drink I shall absorb all the powers of a journal even though I now had the strength of one man and also one turtle I am really hoping I don't have to go through anything like that again right now we're gonna go inside and learn more about this unique Balinese delicacy [Music] that's good you're doing great right now we are here with the owner sir thank you for having us today these are softshell turtles yes do you have other kinds of food too or is this your main specialty this is every day every day selling turtle it's okay if I pick one up yes Wow these turtles are so beautiful in Vietnam they say it gives you kind of stamina do you mean by stamina yeah yeah is there any health benefits to eating turtle involving for our duck skin no beauty for the beautician why are people eating turtle and not just more chicken or something it's more delicious people just really they love the taste of it are you making any other dishes with it maybe a hot dish lasagna just the lawar beside de la where there are satay after becoming too attached and accidentally naming the turtles I get some good news fortunately we don't have to kill one of these because he's got a whole plate of just chopped up turtle yes from some other turtle I didn't even know Henry and Fred are fine they're going back in this recreation of their natural habitat in the green tub mmm this has a little bit of everything in here a little bit of me a lot of skin and a bit of shell to Turtles just like these are cleaned boiled and cut into thin slices like you see here skin shell everything reduced down to these small strips that'll soon join the dish it's a little disconcerting what is that part there's a little yellow part that is no eggs EGIS egg of the turtle I've never had a turtle anger taste like a reptile like chalky a little yoki Oh Drive men this is some super unique food if you look closely here these kind of translucent parts that look like tendons that is actually some gelatinous gooey pieces of shell part of the shell that has been boiled it looks like the skin or fat that is not turtle Lewan start with shredded coconut then it makes a Balinese spice blends including chilli sambar Balinese curry and Boonville then a mound of turtle skin meat shell an egg fried onion and salt all this gets mixed by hand drop in some sliced along bean mix top with a couple turtle satay skewers and lunch is ready Oh Joe I mean if you have to eat turtle it's a pretty nice preparation it doesn't even look like a turtle at all and right here we're gonna start with the saute no matter what animal you're eating in Indonesia horse turtle or chicken it's all gonna basically look like that let's try it out a little bit a turtle saute mmm okay do you like it though for real yes a 30-second one then okay I mean a ton of spice caramelized is sweet spicy little hints of earthy turtle flavor if you gave that to me I would never guess turtle so here the lawar you always have to have the levar with the rice all right yes that's a big bite that's a man who's confident it's going to be some good turtle let's ride off [Music] [Music] so what do you think mmm mostly it tastes like spice and lemongrass there is those fatty parts those kind of gooey fatty bartley I can feel the turtle I don't taste it though I want to get a nice big bite of this just turtle it is so powerful so spicy that is a piece of shell that has been boiled until it's become extra soft and just reduced down to this strange gooey gelatinous texture and so that is what you feel as you're eating it but the flavor is just it tastes like almost every other the lard [Music] we have come to our second location behind us now this video is all about the kind of surprising unique and unexpected dishes of Bali this one is called Chiba that is a Bonnie's Chinese things with chopped pork and with a little this house she'll bob has a strong influence from China and Chinese have a long history here in Bali dating back hundreds of years I'm with the owner right now and we're gonna make Java now Sherlock means literally boiled pork mr. hua Juan is a third-generation owner serving this now local favorite pig parts boiled for hours in a soy-based ooh there's just one catch it's almost all offcuts can I hold your pig parts this is the boiled pork right here a little bit of everything more tongue obviously intestine oh no what is this it's enough it's a half a nose oh yeah you can see he had a deviated septum Kai this is the surgery you need right here sorry our camera guys snores a lot all they're gonna do is cut you open like this and sew you up it's gonna be fine from ears to intestines mr. Juan gives equal love to all the pig parts there you go sir thank you for letting me handle your meat and - yeah - pleased to meet pork belly ear tongue intestines heart and pig snouts what is your favorite you know so your favorite part is the ear ready one two or three Cheers that's crispy mint really fatty on the outside thick cartilage in the middle on the side he tosses on some fried pork bits and pork rinds topping it with a thick soy and pork stock gravy this one I like I like crunchy things that have flavor fried pork let's go play rock that's very nice it just feels like running it tastes like if you get a bucket of KFC and at the bottom there's just a little pieces of fried nasai have fallen off you wanna try some intestine I'm a little scared pig intestines chewy not too gamey and the very nice sauce he's put on there I like it well look if the intestines are good we all know what those are filled with okay and then we're gonna be good I want to eat some nose but like how would you know oh that's an ear you think that's the nose yes you can't even tell it to notice anymore oh you've got some nostril there is gummy or saltine that's really unique mix man this is what I love about Asia this could easily have just been thrown out but instead they're like let's keep it and let's find a way to make it taste good [Music] as we build up to our grand food finale Lee insists that we make a quick stop at Madagascar sir thank you very much for having us today I thought I'd seen chicken prepared every way possible but here in Bali they found a new way to infuse flavor into fried chicken the owner tells me more hye-young yep brick what is Gaborik name no Brenkus mess smash yeah you see messes with a stone and then you mixed with the Samba I fried the chicken first and then I smash it after using the traditional stone to crush the sambal tomato garlic lime and chillies they start smashing the chicken coating every last bite the only question is how many chillies can you handle I've had some spicy wings in the past it didn't go that great photography it is like innocent heartburn no and we're back is 20 the maximum spice no it's actually unlimited spicy our record is 140 you have to rip the rank or is it respectable if I get a 10 chili chicken yes can we get it we have lie detection software right now it's reading your face your expressions yeah 10 chilies garlic salt sugar brutally pounded into a sambal sauce then tomato lime and a defenseless piece of fried chicken assaulted repeatedly completely slathered in chilies I find I'm asking myself why am I here actually I'm asking bleep why have you brought me here what's cool about the way to make it the chicken is like evenly coated with all the sauce and chilies and seeds there's a micro lime on top I guess limes are yeah are really expensive this time of year there's gonna be exactly one drop oh I eat single lime drop has now brought perfect balance just like every single meal they've got rice on the side but I'm just gonna go straight up chicken nobody deal it to me that's not to me it's not even spicy it just tastes like nice fried chicken pieces have varying degrees of chilies and seeds on them oh yeah oh it's spicy as heck come on man I love fresh some all fresh citrusy hot chilies in there oh look at this bite that's almost completely chillies and seeds ha ha ha no I'm for anything no oh it won't stop hurting now ah done I don't know why anybody would do 140 chilies you don't really have spicy fried chicken made in that way so it still has all the yummy rich oiliness of fried chicken but with really fresh sambal coating everything you did it and we we passed the test she is boo-booed Bali the next day Lee and I are preparing for a road trip to the East Coast but first we're stopping off at a nearby home to show you one last unique Balinese dish right here we have a very unique food this is really hard to find we actually had a heck of a time finding this here on the island foods so fresh that you could actually still see these really confused honeybees wondering what happened to their house it's actually a little bit tragic yeah meanwhile we're about to eat them so far I'm very confused I see honeycomb but I see no way to extract the honey there are some bees but they don't seem to be the main course I head over to the kitchen to see what's next sir I've brought you honeycomb so I thought the grilling would be on like a grill he's kind of just roasting it like a marshmallow and as he turns it you can see it's kind of becoming more gooey it's like bringing out all the sugary sweetness from inside and maybe some of the waxy wax teenis I'm gonna try this out I've never had roars beep I'm sorry I'm sorry sorry [Music] fine never lost my composure once I've never seen a honeycomb prepared in this way just roasted over the fire it's become all melty let's try some Cheers oh ha ha oh it's so sweet it's like honeycomb cereal but here's the thing this is like wax is that where that goes it sent the wax there okay that's where we put wax so any time you're eating the honeycomb it's kind of like this sponge each of these cells is full of some honey it gets released in your mouth as you chew it but then you're still left with this waxy kind of residue I have no idea how this is gonna work but we're gonna find out next I got to get away from these pieces let's go [Music] hey guys remember lawar well it's back and this time with bees and honeycomb getting into the bee territory here we have our roasted honeycomb it's been kind of sliced up there's a bunch of vengeful bees flying around but they're not stinging anyone yet this is really interesting just like everything else in the lawar it's just gonna be cut into tiny little pieces but um wax do you just heat the wax huh honeycomb lawar starts with minced jackfruit herbs and a load of coconut the roasted honeycomb has been completely diced up chopped up oh wow so this huge mass of waxy honeycomb is going right in there oh that was too much he says sold seasoning fried chillies shrimp paste and fried garlic he mixes it all up so we're eating the wax and everything yeah all right all this smell smells delicious [Music] gentlemen thank you very much for all your hard work we tried finding lawar yesterday everybody was either it sold out or closed if I went to a restaurant is this what I could expect to find yes same exact same this is both restaurant quality and homemade it's the best of both worlds minced into tiny little pieces I think we give it a try men uh-huh what do you think tastes good it's just honey it tastes like a ton of spices it's kind of like every other lawar I've had you're like very spicy there's no distinctive beef flavor not even any honey flavor I thought it might taste a little bit like honey right I thought it would be like waxy or chewy but it's not I gotta say it's almost hard to tell there's any bees in here the baby jackfruit and that long bean it gives it just a great crunchy texture and then from there it's just really fresh herbs and spices I really like it but no I would have no idea there's bees it's not beef flavored so unique so different something I did not expect to see when I came to Bali for sure [Music] on our next episode Blee leads me to east balling we're all witnessed one of the most
