My issue with the video is that the rice isn’t fried. It’s soaking wet and she fills the pan with it. It’s just gonna steam more. That’s why people say use day-old rice. At the very least, cook your rice, spread it out in a thin layer on a baking sheet and cool it in the fridge for 30 minutes or so. This will dry it out the grains enough that when you add it to the pan, it will actually fry a bit and won’t be soggy and overly soft. This just looks like stir fried veggies and scrambled eggs mixed with rice.
