hi everyone I'm back and today I'm gonna show you all how to make chicken and shrimp fried rice here's what you will need you will need jasmine rice in this jasmine rice that I have here has been cooked yesterday because what you want to do is you always want to have day-old rice all right make sure you cook it the day before and right here I have frozen peas and carrots that I've thought out you're gonna need thinly sliced chicken breasts you will need shrimp green onions eggs white onions 1 clove of garlic minced 1/4 teaspoon of ginger minced just a dash of white sugar you will need sea salt soy sauce oyster sauce sesame oil now the first thing that we need to do let's come over here to our chicken I want to show you how I've sliced my chicken breast and this is just two chicken breasts and I've sliced it just like so and then what I've done ahead of time I have used 1 teaspoon of cornstarch on here just a little pinch of sugar a little pinch of salt and mix up that cornstarch that sugar and salt and this has been setting for 10 minutes okay and what that cornstarch will do it'll help you to have a nice moist tender and soft meat all right and so make sure you do that now over here I have a pan that I'm going to use I have just a little bit of just enough oil to coat the bottom of the pan all right so I'm gonna turn this pan up on high alright meanwhile I'm gonna give our meat a nice stir to make sure that cornstarch that sugar and salt is well incorporated I did put just a little pinch of soy sauce on here also alright the first thing that we're gonna do is we're gonna get this pan nice and heated up and the first item that we're going to start to stir-fry will be our eggs once this pan heats up I'll be right back okay everyone I'm back what I like to do first is I like to go in with four eggs all right and we're gonna get those nice and scrambled up let's go ahead and season our egg with a little bit of sea salt just a little bit I'm not even gonna use all of that just a tiny bit right there okay absolutely crack your yolk into your whites and then we'll let this set up and we're not going to cook the egg all of the way all right because we're going to take our egg out and then we're going to put our egg back in and it will continue to cook once we put it back in with the rice all right so just let this set up for a second [Music] okay everyone my egg is starting to set up exactly like I want it when I order takeout fried rice I always ask for extra egg I love egg fried rice I love extra eggs in my fried rice so always make more than I should absolutely so it's really up to you all how much eggs you would like to put in yours all right this is almost exactly where I want it and then we're going to take it out like I said take it out early don't cook it all the way all right we'll go ahead and take this out just like so [Music] this is nice and soft all right and then I'll show you our next ingredient that we need to put in some of you all might say Gina how come you're you're not using that walk that we love I know a lot of you love that walk that I use that silver walk but I've found when I'm making fried rice and I'm using that walk for some reason my rice sticks to that wok so I'm going to use this today absolutely I need to invest in another walk where what like I just said when I make fried rice that my rice doesn't stick I need to get I need to get online and see what's the best walk that I should buy okay here's my egg I'm gonna set that aside okay I still have a little bit of oil in the bottom of that pan and what we're gonna do now is we're gonna grab up oops we're gonna grab up this fourth let me fix my camera guys this fourth cup or fourth teaspoon of ginger I'm all over the place today guys fourth teaspoon of ginger see how finely chopped we're gonna put that in here we're gonna put that in with your garlic also that's one clove of garlic mince finely and what you want to do how you know that your garlic and your ginger is done it'll get very fragrant and it'll get a golden-brown color you don't want to cook it too long because what'll happen is your ginger and your garlic will start to turn bitter if you cook it too long so how you stop that cooking process stop it from burning is you add something that has water in it okay so I can smell it very pray it's very fragrant right now so what we what we're gonna do is we're gonna go in put our onions in and the water from the onions will actually stop the cooking process of the ginger and the garlic okay give me just a second I'll bring you right back over to our ginger garlic and onion so now what's happening is like I said the water from the onion will start to seep out and our ginger and our onion our gender and our garlic will not burn all right I'm very fragrant that smells beautiful okay so let's start to get our onions nice and translucent and what translucent is is where your onions start to turn a clearish color all right we're gonna do just that I have my heat up on a medium-high right now beautiful now they're starting to get translucent so what I'd like to do at this point is go ahead and grab my peas and carrots that have been thought out ahead of time in the water that was in the bag I poured the water off okay once they thought out they did have some water to them our carrots and peas you have to have carrots and peas right when you're making fried rice if you don't have carrots and peas in your fry rice I'm gonna think something's wrong nice absolutely let's get this nice and cooked up and then I'll show you how to do our beautiful chicken in our shrimp how I like to do my fried rice is I will saute up everything separately and then once I get my rice nice and fry then I'll go ahead and start incorporating everything back in and what this garlic this ginger and the onions are doing right now is their flavor in this pan guys I mean they're letting off so much flavor into this pan you hear me and that rice is gonna be happy when it gets down in here oh yeah hey I'm really cooking in this kitchen guys I've been a little under the weather for the past few days and I'm starting to feel just a little bit better so thank you all for the prayers I know I did my video yesterday and I told you guys I wasn't feeling the greatest but I thank you all for your prayers and everyone saying that they hope that I feel better so thank you and God bless you alright these are almost done so what we're gonna do I'm gonna go ahead and take this out so we have our egg go ahead and put your peas your ginger and garlic and your onion right on there guys I'm making a big batch of fried rice tonight and I'm making chicken egg rolls on the side to go with this let me continue to get the rest out and I'll be right back everybody okay everyone so here's what we're gonna do next let's go ahead I have seven shrimp let's go ahead and put these bad boys in there just like so okay a-pink's color when they're ready never want to overcook them okay and what I'm gonna do once these get nice and cooked up I'm gonna cut them in half so they are just kind of straight down the middle like that so I can have more shrimp in my rice what a great idea because those shrimp are so expensive right what you're gonna do right now let's put you a little bit of sea salt on you want a layer you want to season every layer of the dish just a little bit of sea salt on each one of these okay to bring out those beautiful flavors in this shrimp we want everything that taste good guys you hear me just a little bit of sea salt will do the trick okay let's soak it nicely there we go it doesn't take any time to cook seafood and we're not gonna cook it exactly all the way and the reason why is because same thing like I said earlier with the egg we're gonna reiterate these back into our dish once our fried rice is fried up or our rice is fried up so I'm gonna take those out well before I take them out what I'd like to do I'm gonna go ahead and cut these bad boys give us a few more shrimp in there all right oh yeah these are some big shrimp here guy it smells so good right oh absolutely my family's gonna they're gonna love that tonight they're at the gym right now working out so they'll be happy to come home to this [Music] put it just right there all right beautiful and next we're gonna go in with our chicken all right and I don't need to put any oil in the pan we already have oil in our pan so then we'll go in what's the chicken our intimidated because you know we're used to going out and purchasing them purchasing it yeah I don't want to say it we're used to going out and buying this you know fast food hey you order it and it's done but now you all can make it at home and you don't have to spend an arm and a leg on this and it tastes just like theirs or better you hear me personally I know mine tastes better not to toot my own horn guys but - - but when you I study different cultures I study how they cook their foods what spices and how they use their spices what they do to make their meats tender and everything and I have so much fun is so interesting how different cultures do different things I love Chinese food guys I would say Chinese food is a 1-up say Chinese food is my best food that I like but then I can honestly guys I love me some Haitian food like I lose my mind over Haitian food right and then I love Spanish I love Puerto Rican food great so I'm I'm all over the place and I love to research how to make their foods this chicken right here is almost done and it's gonna be so tender guys you hear me and see when I make rice I like to put a lot of meat in there I will cut it use beef grab a little piece of steak and put some beef in here but we have beef last night we have the roast that I did the video for so if you all have not checked that video out check it out let me know what you think but yeah so I told myself I said well what I'll do I'll do some shrimp and chicken fry right that'll do the trick oh yeah now I'd like to use jasmine rice and the reason why is because I find the jasmine rice is you don't have a problem with it getting mushy when I cooked my jasmine rice yesterday I cooked it about 85 85 to 90% done all right not all the way because I want at all possible I want for my rice to be not soggy I want it to be fluffy and I want each grain to be individual I don't want any grains to be stuck together I don't want nothing to be mushy when I have a fried rice and so I cook it 85 to 90 percent done and then it'll finish to cook in this pan right our chicken is almost done guys oh yeah let me show you my rights everybody so after you take your right once my rice was cooked I let it cool down one in the calendar for I want to say about 15 minutes and then I put it in the freezer for about a half an hour then I took it out the freezer and put it in the frigerator cover with saran wrap overnight see that see how nice and fluffy see that that's what you're wanting nothing mushy this is going to be a beautiful fried rice guys and if you want it to if you're really health-conscious you can definitely use a brown rice and I even believe that there's a brown jasmine rice all right this is almost done unit chicken looks amazing I want to put just a little tad just a little bit guy is not even all that salt that chicken up all right there we go beautiful mm-hmm now I'm gonna take the chicken out I'm gonna put the chicken in my bowl with my shrimp here's our shrimp chicken going in now it's time for the nitty-gritty right yep I said it I said it guys nitty-gritty there we go yes okay chicken out shrimp out guess what we're gonna do mmm okay everyone let's get our beautiful jasmine rice down into our pan all right and make sure you make sure that there's no big chunks of rice that stuck together you wanna make sure that it's all individual just like this okay now I've poured just a little tiny bit of oil in the bottom of the pan and what you're going to look for your rice to start talking to us guys all right and then once our race starts to talk to us then we can start adding our salsas in our spices but we're not gonna do that until we start to see the rice pieces jumping up in the pan and kind of dancing around like so okay and once that starts to happen that's telling me that our rice is nice and fried up the way that it should be to the correct temperature all right because now if we were to go ahead and start adding soy sauce and oyster sauce and all that stuff in here right now you want to know what what happened I'm gonna tell you what's gonna happen what's gonna happen is you're gonna have a mushy fried rice right does that make sense because all right still needs to continue to cook all right and each piece of rice needs to have oil on it okay in order for us to get the perfect rice like I said we're not doing smushy over here guys nothing's mushy over here I can't wait to show you once this starts to heat up how the rice will start to dance around and kind of pop like popcorn a little bit and you'll be able to hear it also so we're gonna let this go just for a little bit and I'll be right back nice ok everybody what I want you all to notice and see how I've spread my rice out and the reason for that is because we're frying this rice we want to make sure every piece of this rice gets nice and fried up if we would have it in a bunch up like this into a bunch every piece of it won't get fried up alright see this absolutely and then you go in and you start turn it over to the other side spread it out and let it get nice and fried all right just like so alright once our rice starts to get happy and jumping and popping in the pan we're gonna start adding everything back in be back okay everyone our rice is starting to sizzle you kind of jump up and down in the bottom of that pan so here's what we're gonna do all right what I'd like to do a little bit of the light parts of the green onion in all right a little bit of the green absolutely get that in there oh it smells so good already my other items here we're going to incorporate our beautiful vegetables with a garlic and ginger then we're going to incorporate our a beautiful egg just like so all right mix that stuff in earlier I made a little bit more egg that I wanted to use so I'm gonna put that in just like so like I told you all I love egg and my fried rice and I'm gonna put a lot in there there we go beautiful that's how I export when I go out I always say extra egg please and extra bean sprouts Oh guys speaking of bean sprouts I went all over the earth yesterday looking for bean sprouts and I was so let down and I will not ever trust me when I tell you this guys I will not ever get the kind in the cans the fresh kind they are awesome like I said when I order mine always say extra egg and extra bean sprouts but hopefully next time I go to the store they will have fresh bean sprouts for me right okay so what we're gonna do I'm going to turn this up on extremely high okay I'm gonna cook this up oh yeah guys check this out mm-hmm and like I said we will not don't you dare put any spices or any of your salsas in until your rice is complete because if you do it now I'm just gonna say it one more time if you do it now you will have a mushy rice so put it in right at the end beautiful now you hear that you're wanting that sound that sound right there says we're frying up some good fried rice right oh yeah now let's go ahead and we're gonna put our shrimp and our chicken in and any juices that are in the bottom of this I don't want those juices okay I don't want anything that's gonna make this dish mushy all right so if you got juice from your shrimp or if you got juice from your chicken hey drain it before you put it in there no big deal takes two seconds to drain it right oh yeah baby just get that nice and drained just like so if I was making any other dish other than fried rice hey I throw that nice juice right on in there but not today guys not today all right let's go in and mix everything just like so look how beautiful they're gonna be so excited for this meal I was supposed to make it yesterday but I just wasn't feeling the greatest but I'm almost there guys I'm almost back and as soon as I get all the way back I'm gonna do a mukbang for you all show my face oh look at this guys would you look at this I'm gonna give this about two more minutes for everything they get nice and warmed up to rewarm up our chicken and our shrimp and the eggs and everything so once everything is nice and warmed up we can start adding our seasoning and our sauce all right beautiful look at this guys a few minutes I'll be right back okay everyone I got my egg rolls going right beside this and now we're gonna go in with our seasoning because our rice is nice and done everything's well warmed up go ahead and put you some sea salt in a little bit and I'ma toss the rest of this I'm not using that all right and now a pin chip of sugar just a pinch guys this is it okay and you all might say Gina why the sugar I promise you it won't make it sugary okay just put it in there trust me when I tell you this all right so then let's go in with our soy sauce all right not too much remember guys not too much moister sauce if you can't use oyster sauce don't use it okay just take it out of the recipe and you'll be just fine it'll taste great without it because I know someone just messaged me the other day and said Gina my husband can't eat oysters so he don't have don't put it in there okay you can use plum sauce in yours so you're gonna use plum sauce I believe it's called plum sauce sesame oil and soy sauce no right now I'm gonna put some sesame oil in all right and I just like to do a drizzle over the top and that's enough all right so now let's go in guys put a little bit of red pepper flakes and when I say a little bit that's it that's all I'm putting in there because my family loves they all right here's where the love happens guys this right here fried rice 101 if you never had it guys if you never have this time make this up and try my recipe guys I promise you you will absolutely love it you hear me mmm-me I grew up on Chinese food guys me and my dad we would go get Chinese food all the time and we would go to a place I believe it was called happy dragons don't quote me on that but I believe that's what it was called and guys it was the best Chinese you could ever imagine I would love when my dad brought home Chinese food but I always had to have the wonton soup shrimp fried rice and the egg roll right oh and don't forget the UM egg foo yung I love egg foo yung guys this right here it's done if you wanted to put some white pepper on here you could Jeana Young's fried rice check it out guys look at this see that Oh ain't that beautiful let's get a shrimp in there yeah all right I'm gonna plate this up guys I'm gonna come back I'm gonna plate this up let you all know what this tastes like we first I want to give this a try and make sure that all of my seasonings are what I would I expect them to be all right let's see perfect so now what I need to do I'm gonna get a plate cuz I need to get this off of the stove plate this up I'll be ready okay everybody check me out let's see let me try to get real close to this for you look at this guy's Hot Diggity Dog hot did a Hot Diggity Dog Gina come on now I'm so excited all right what a beautiful rice and make sure if you do it this way hey I'm promising you all you're gonna have some good fried rice now we got to go in you gotta go in with the fresh green onions the fresh scallions all right like you have to okay mmm and I've got egg rolls only made one egg roll right now because every bear at the gym working out but when they get home if they want to egg roll then I'll fry them a fresh one up all right here's what I'm gonna do let's go ahead and get a nice taste on this in there just like I'm like let's go ahead and make a plate up I'm digging in right there oh my goodness look at this guy's oh we ain't got no mushy in here nothing mushy whoa uh-huh oh and give me and give me some of that shrimp oh yeah oh another piece of this give me a big piece of that there we go guys check this out Oh in that beautiful here's what we're going to do this is one thing that I like to do and when I order takeout let's scoot everything out of my way guys when I order takeout I always say can you give me some crushed peanuts and they say sure so I have crushed peanuts I'm gonna put some right on top of my fried rice oh and this lovely Jesus thank you for feeding me a meal today all your blessings taking care of me and keeping me safe every day of my life thank you Lord for this food alright I'm diggin in guys I am digging in I have a spoon but I will switch over to the the fork how much you all to taste this take that first bite right there oh my goodness guys hold on right there from that there you go taste that guys wait look at that mm-hmm bite that right there look at that big shrimp in that ink here we go guys [Music] so delicious every time every time it turns out perfect you use that jasmine rice and don't put any seasonings or spices in until the very end cook that rice between 85 and 90 percent of the way get it nice and cold mm-hmm and what I did right before maybe a half an hour before I got ready to cook I took my rice out the refrigerator look at this guy see that peanuts on there oh yeah take that right there so nice and tender mmm look at that guy's see how the rice is nice and separate nothing mushy over here mean bite that right there if you all enjoyed
