[Music] okay before we light this thing up on the Big Green Egg one of the most important parts when you're making a brick oven pizza is to make sure you have good airflow so you need really good big pieces of charcoal and everything needs to be cleaned out so I'll show you this the the ash that's under here I cut a little paper plate so I can scrape it on and we just need to make sure that that's all good and clean and because we don't want to restrict any airflow from the pizza willing to get this up to maybe 700 degrees something like that it's a really good thing to do before you start doing the beds okay if you're gonna do a brick oven pizza you have to have really hot fire if you don't have a hot fire it's gonna be frustrating for you so take a look at this fire that is a scorching fire and so what do you want to do next is take your plate setter and you want to put it in with the legs pointing down like a stool okay and there's little notches in here that it goes in and then on top of that you want to put your pizza stone you want these to heat up good and hot for when you put that first pizza on here okay and sometimes it'll make you very frustrated so let's see what happens this time you're gonna only get a few things I found out that you want to keep it simple one you have to have the big green egg really really hot and for making the pizza I use parchment paper I shuffle it up so it does easier to work with and you can see my peel I've drawn a circle on the peel and that's the size of my pizza stone if I have a large piece of dough I don't want it going bigger than the pieces the pizza stuff so we lay that out a little bit of flour always helps with dough get that on there like that and then a little on the other side and just however you do your dough it really stretches nice if you can do this you do want around the edge you want to have this little lip there's some official name for it I'm not sure what it is but you just stretch it stretch it you can throw it if you want and we're not going to do that in here but that's a that's not a bad size we're gonna take that lay it over here get some get some form to it make it nice looking nice and round okay all right then pretty simple you want you want to do this this is crushed Tomatoes that's all you need you can add what you want I don't have anything put it on and just give it a swirl you don't want too much of anything because the pizza you want it to turn out nice and crisp that's all you have to do okay cheese this is this is what's a table okay lots of cheese makes a good pizza okay now I'm gonna do this one pepperoni who doesn't like pepperoni pizza and so we're gonna put those on I've always found out that more pepperoni is better than less pepperoni so just lay it on there good and heavy make everybody happy be pepperoni okay they don't have to be too neat especially when you're trying to rush for a video but I put a few more on here and then we'll be ready to go just a minute this will be on the other there you go now one more thing why they use partner if you don't use parchment you need to use something like cornmeal to keep this so it'll slide off here I found it with parchment you can pull it right off it's really easy to work so we're gonna take this out to the Big Green Egg okay so I've got this up to 700 degrees okay almost 700 675 I did that by making sure the bottom vent is totally open and this is totally open remember with the Big Green Egg you have to burp it there you go okay now watch how easy this parchment is take that off put that on close it and in a few minutes we're gonna have a great brick oven pizza okay it's been about four or five minutes we've had this thing on here the heat is still maintaining at almost 700 degrees and we're gonna check it again remember you have to burp the big green egg so the flame doesn't come up in your face so we'll do a little burp okay there it is how's that just take that take these gloves off no huh and there you go just discard the paper and everybody's happy you
