is a very good fish I hope you realize in fact red snapper is a real delicacy a lot of people said putting old oil wells out in the Gulf of Mexico would hurt the fish but it didn't in fact I believe it helped them fishermen catching a lot of those red snapper around the rigs and that makes it possible for us to get how enjoy it out of eating the red snapper I'll guarantee I don't ever put anything on the fish when I brought it I don't want to ruin the flavor of the fish I'll make a little lemon butter sauce on the side you don't cook fish a long long time because it cooks very quickly this rice salad is one of us you put anything in a kitchen in it join me in looking back at one of those shoulder made for Mississippi educational television more than twenty years ago I hope you negative snake look so pitiless he reached underneath his seed and get a can of that pearl pop with foam on top and just pours from riding that bull snake smart turned him loose put the little frog on his line took it out there he's got one brim to wrap now you don't lost his frog do then he put a fix him pretty good shove it out there some more he's got another one man but he done lost his problem he felt something rub on the side of his leg look down there and that it's nicked and caught him another frog I guarantee now they're on the golf course we have some of the best seafood in the world we've got specula trot and redfish and pop and all but one of my favorites is red snapper it's got good firm flesh nice white meat you know one the most flavor that's for true it's not too fishy like something now I cook red snapper different from anybody else I guess because I don't put anything on my red red snapper at all I just get it ready to go get this our chair without spilling anything not did it guarantee and get me something to put the red snapper on like this right down but what I'm gonna do is put a little something in this pot I've got here this black pot I've got some olio I'm gonna add to that the juice of two lemon they're not going on that red snap before it's cooked Oh Lord me put this on warm low but they don't know this must not boil and I'm gonna put a little lien para how you call off Worcestershire sauce say about a tablespoon full it's about a tablespoon full and I'm gonna put a little olive oil on there about two tablespoons full of that I better measure that sort of people won't think I'm trying to tell them some money true and wrong to run over that's olive oil put that there like that put a little salt on that to about it or teaspoon full of salt you know fish got to have salt that's about a teaspoon full let's see if I still got my we're doing that yeah that is teaspoon full of salt and we're gonna put a little early on a hot sauce on our we used it on ice cream - I'll guarantee you I will just put a pump of the kachoonk kachoonk kachoonk as to know that's about that less than a teaspoon for these not all that much now I've got that there and I'm gonna let that just never boil this is gonna be getting hot while I put my red snapper in the oven don't that pretty that's really pretty I guarantee put that in there like that let me put this over and get it a little bit better first though I'm gonna spray this dish with Pam if I can find the Pam it is right where I put it spray with Pam that to keep it from stick on the bottom neck or anything worse to get out of a pan is fish was stuck with a guarantee red snapper beautimous I'm gonna cook five little pieces of red snapper in this broadened pan and I think my ovens on broad it better be got that down I'm gonna get this out of my wave this very minute now you notice there's nothing on that fish not a thing put this in the broiler that does not take fish very long to cook so it's real good eating I guarantee we don't feel like people do about calling a shark oh let me see someone show you an avocado cook this up here where I can get a little bit battle some people call them alligator pal like I'm told you but this is nothing but an avocado that is see then what I'm gonna do I'm gonna show you how to peel one and I'm not gonna Peter I'm just gonna show you how to get havoc on a 2 cup of avocado what I got right there man that's fine we go put this in the blender a teaspoon full of salt maybe not quite a teaspoon not quite a teaspoon and put on that and they had not quite a teaspoon we're sure you it doesn't not quiet a teaspoon see like quite a little bit being a teaspoon get that in there then we're gonna put about a cup and a half of chicken stock or this chicken broth it's about the same thing a chicken stock I think tissue we better put that on there then we gonna put some the in fair round rooster Shire I think what we're putting there just one tablespoon full of that just to be sure we don't put too much got that in a - one - you Louisiana Hot Sauce right down now if y'all don't mind won't take a look at my place I got to see how it's doing now what I'm gonna put on here now it's about two cup of buttermilk not quite two cup put it on there I got the salt I got all that on that what I need to put put it like that I need my spoon I don't need this and get out of my way put the lid on the door through there for getting not put that lid on and you want to liquefy this is what we're gonna do the liquefied is rat now get after it there we the entree now I got the soup now I got to have some starts to go with that and what we gonna did right now it make a rice salad and I know those Cajuns love rice this is cooked rice got that right there like that now I got a bunch of stuff to go on that oh yeah here we go that's about 2 cups of rice we cooked 2 cups of rice it made that much rice and what we're gonna put on there is a cup of onion chopped up real good him green on you this is a cup of chopped dill pickle put that drastical in there wrap now that's been good already this is a cup of chopped sweet pickle right you put that on there too right here we got a cup of Cerie Cerie we gonna put that on there we got a cup of chopped green pepper bell pepper don't get pretty and we chopped up some olive in per minute what was mixed together we chopped it up and we put that on there too that's a cup one cup of that and this is about a cup and a half of chopped up hardball egg which we bought for 20 minutes so they'd be digestible well baby can eat all eggs I'm gonna make this up just to read a little bit there you know you didn't mixed up just a little bit that's pretty it's gonna look pretty all the time and we'll mix it and sauce to go on that because that's not quite good enough juicy enough for me there yet Oh guarantee look on there that's fine now I'm gonna take this bowl right here this is salad dressing the reason I use salad dressing instead of mayonnaise is salad dressing or keep a little longer than mayonnaise off of ice I'm talking about I'm going to use about a cup of salad dressing it's about a cup in there and this is Dierkes I'm going to use about three or four tablespoons full of that come on out of there now you're going that they're older keys this is just plain old yellow mustard I got right here what do let me look at my fish hold steady [Music] looking better all the time are ya know it's playing oh yeah much now if I was making it for myself down home I would make my own mustard and do it but I'm gonna put two three tablespoons full yellow mustard in that now I'm gonna put a little cayenne pepper on that not much get a little bit you know didn't I got that on there but stir it up mix it good I'm gonna put a little olive oil in it him give it a little more body how you call look prettier tastes better now we got that like that stir it up good and you got to have a little tartness with this so what we used is wine veneer wine vinegar we don't sleep in it overnight we just put a few dashes of wine vinegar there we go wine vinegar and we stir that into this and it kind of lightens it up a little bit makes it a little looser and the first thing you know we got a mixed up and we put it on the rice salad now you know that that's pretty let me move this out of my way yeah now I'm gonna mix this up just to these a little bit you know when you make this we let it sit overnight it's even better like potato salad potato salad always better the next day now he makes it just a little bit more I don't know how I do that but I got just the right amount of juice on that you know that let me check my feed and we'll come back to that oh well just turn you off you rascal you be sure nothing more happens to you now I'm gonna mix just a little bit more because it's not quite mixed good enough and me tell you right now this is fine stuff you like potato salad you like rice Saturday that's for true and I haven't left a thing out of this I want you to know I put everything I could find in the kitchen in it with Nick doing bar at 14th that always make it taste more better that's true yeah now I'm gonna take this and put it over on the table right yeah and while I'm over here I'm going to put a little of this wonderful avocado soup and a couple sort of be ready when I get ready good that is good too I want you to know that is good put that right there like that put these over here like that ha now you just stir this I don't want just the boys can't affording that good boy okay now I'm gonna put my fish over here cuz it's did you know doesn't take these long to cook no just cook real quick it doesn't take you long Oh put it now you wonder what in the world you're gonna do you ain't got nothing on a little old dry looking fear I'm gonna put it right here what I'm gonna do for it burn me now right now I'm gonna get one piece of this fish out and put it on this plate would you spatula you see that just come out just the exactly right let me loosen this up so when I do want to take it out I can hey mmm this is why you put your seasoning on your fish after it's done after is put into the plate get the people going to eat off off that's what you did see that there's lemon butter Worcestershire a little hot sauce and that's all ain't that fine I guarantee and when turn this off because I don't want that to bar now get me a little rice set it on my plate just a little not much I've got everything I need soup Scott got it all right there and now I'm gonna sit down here and told you a story first of all I'm pulling the line you know you know this is red wine some people say you're supposed to have white wine with fish but you're supposed to drink the kind of wine you like that's the kind of wine you support the drink let me tell you I got a friend with living Opelousas Louisiana they got a job up north way of Norden in Detroit now I find that place I don't know but he get a job driving him automobiles trailing transport truck up down and you get a job with the understood that every two weeks he's gonna get to go back through Opelousas loads and all the way to Beaumont and Houston Texas called hauling him cataract automobile you know you don't get to go to that see his wife and 11 cheering what he's gone well a fella forgot that took him to consider he got to unlearn him how to drive Cajun style and that take two week didn't got to learn him how to drive Yankee style that dick too movie in the first trip you get don't get to Beaumont Houston or go to Miami Florida we're out for world nap trying to get a shortcut to Miami true Opelousas but he don't miss from Detroit so he come back then you walk up to the foreman what Jaime say how come you told me that damn lie the foreman say which one he said you know which one you told me every two week I'm gonna get to go to up a look and see my old lady and all them cheering it had been six weeks since I've been home and I'm gonna grow something that they ain't gonna know much they're gonna hacks tell him who daddy is my mom's gonna say I don't know well the foreman see I'm awful sorry about that I'll guarantee I didn't meant to - broke the word anything like that but you know how it is but I didn't think like we supposed to get him now and I got a trip Beaumont euthanise a there right he say okay you can took it up but you go get 40 winks I don't want you to be too tall when you did that he see all right so I get 22 weeks you don't want to miss no you get about Oh 40 mile from Opelousas 10:00 p.m. in the nighttime man in blankety blankety blankety breaking him flick flick flick him headlight flick plumber out on him and he pulled on the shoulder the road and get down from him truck and he go cross the road he look back at the truck on the shoulder road he said this cajun snake bit by a whole basket full of snake i tell you for true yeah i'm got the week to daylight and it didn't put me deep Mahon i'm gonna drive through our pollution just wave bye-bye when i pass and this is bad if you wait just a minute he look over there getting in top that top automobile on top has faced the same way with him he let me go see well he climb up then he turned him headlight on who he could see of my lab down the road he i wonder how
