How Okonomiyaki is Made at One of Osaka’s Top Okonomiyaki Restaurants

[Music] hi welcome to japan by food i'm your host shizuka anderson today i am in namba osaka and today's video is all about okonomiyaki this is the delicious soul food of osaka and what is it you might ask it is a essentially a japanese savory pancake that has all kinds of delicious savory toppings and it's cooked on a grill in front of you and okonomiyaki is such a staple food here that pretty much everyone in osaka knows how to make an okonomiyaki and it's a family favorite to cook at home you can even find restaurants all over the city that serve okonomiyaki so today i'm going to learn all about it at ajinoya which is an okonomiyaki restaurant that was first started in the year 1965 and has since been run by four generations so today i'm gonna go inside and learn all about okonomiyaki and learn how to make an okonomiyaki the right way by the pros but before we go inside if you like this video don't forget to like comment share and subscribe because you know it really helps us out anyway without further ado let's go inside [Music] uh i think i'm interested in trying their most popular menu items so first why don't we start with a mix it's got squid octopus pork minced meat uh probably beef and shrimp that's a lot of different foods in one of okonomiyaki okay well we have an original okonomiyaki menu item so i think i'm definitely gonna have to try that as well um it is the three types of mini sized okonomiyaki is [Music] [Music] foreign [Music] [Applause] [Music] [Music] foreign foreign that looks tantalizing oh it is similar yet so different in its structure that is really incredible [Music] all right let's try our konohaki with a little bit of everything in one bite oh wow that is incredible um i've had okonomiyaki in tokyo before it's so different the flavor blast that you get from miss okonomiyaki is unbelievable i think it's mostly due to the homemade sauce but it's packed with flavor it's a little bit sweet it's a little bit savory in the sauce and there's so many ingredients packed inside you get mouthfuls of octopus a little bit of squid and tons and tons of cabbage which gives it this kind of juicy freshness and the umami from the bonito flakes there's everything in it i think the best thing about this is that it's mini size so even if you don't want to eat too much you just want it as a snack this is the perfect one to get it might be the cheese i think it is the cheese okay i think these ones you really need to blow on it before you eat them oh that is so good cheese is amazing the cheese is nice and crispy because it's been grilled to perfection on the other side i love a good smoky crispy cheese and that is just so good it gives so much umami all of these okonomiyaki are incredible oysters foreign okay i can try and make my very own classic let's try yay i'm all ready to go let's go in the kitchen all right i've washed and sanitized my hands and now i'm ready to cook classic okonomiyaki so we're going to use the sesame oil all right oh she's so much faster she's been proud [Music] [Applause] [Music] okay so we're allowed to spill a little bit and you spin it around she's so fast i've made a big mess all right so i'm going to put half on top of the the pork so we put it on top so i mean as you like it so you can make it a triangle i'm a little messy at it i've got some cabbage all over me but it looks good it smells good too so basically this style of okonomiyaki you want to cook it for about five minutes on one side flip it cook for five minutes on the other and then flip it again and cook for two minutes and then it's ready to eat it's important if you cook it at home usually unless you have a really thick tip on yucky grill like this it's hard to keep the same uniform temperature on the stove in a fry pan so the best thing is if you can get a little electric griddle that would probably be the ideal weight and set it to 180 degrees it'll that's the most the best way to keep a uniform temperature to cook it perfectly okay so you kind of lift it up before you flip it right okay okay yes you must be [Laughter] all right so you shouldn't you shouldn't do it okay ready moment of truth we're gonna flip it ready three two one okay so all right so i still flipped it it was a little messy but not bad this one's much prettier than mine but it's fine as long as it tastes good all right so let it cook for another five minutes okay so basically he said to make a really good okonomiyaki you ideally want to have the thickness to be uniform it'll give you a nice uniform consistency when you're cooking it so he just kind of helped fix the leveling of my okonomiyaki so one side isn't lopsided as you can see the main difference here i mean the main difference is that mine is messier but you can also notice that the cabbage is a little bit blackened on mine the reason for that is because i didn't coat the cabbage enough in the batter that's very good to know i wish i knew that knew that at the beginning though okay i'm going to flip it again here we go okay okay all right putting me to work i have to do this one too okay here we go get the the flippers under and right here [Applause] this is a lot of fun you guys honestly i don't think there's anything more fun than making your very own okonomiyaki here we go final flip yeah okay okay this one's a little nicer ready yes okay so if it's a little bit bouncy on the top that's how you know that it's properly cooked through you get a little bit of this bounce and elasticity just yogurt okay you can put it as much or as little as you want this is all up to you because it's okonomiyaki as you like it this is my kind of failure okonomiyaki so we're going to do like one swirl and we'll do the same thing here and that one was messy why doesn't mine that happens to mine all right we're gonna be generous with this sauce here this looks incredible it's like a painting maybe a little bit more all right okay let's try it let's put some on on mine oh that looks good all right okay so the final touch our dried seaweed leaves let's uh do a nice sprinkle hi guys little with a rating of seven as a beginner i might be able to start training here as an understudy which would be so much fun so if you ever want to make your very own ajinoya style okonomiyaki you can actually do it at home because
