what comes to mind when you think of Kobe City It's gotta be Kobe beef and for good reason because of its limited Supply and high demand and of course incredible taste but this is not the only thing that this culinary city is known for it's also known for one of Japan's best quality sakees NADA gogosake and this pairing of narago osaki and Kobe beef is a match made in heaven so let's go see where we can find them but before we go make sure to subscribe for more amazing Japan Adventures let's go yes [Music] there is actually a 1200 year period in Japan where the emperor of Japan had a restriction on eating meat but that all ended in the Meiji period in the late 1800s when the emperor of Japan decided to open up Japan from isolation and allow foreign Traders and Western influence to enter into the country since at the time nobody was eating any meat here they wanted to eat western style beef so in order to meet that demand the locals started to raise their own cattle and they were finally able to discover a purebred wonderful breed of black cattle called the Tajima cattle in the mountains of hyogo prefecture and that is the cattle that today has become the prized Kobe beef [Music] I am now here at the Kobe City wholesale Western Market and basically this is a processing plant for Kobe beef this is also where the famous Kobe beef auction is held so restaurants smaller butcher shops and even shipping companies will be coming here to bid on the best cuts of Kobe beef so let's go inside and learn more about it from a Kobe beef specialist this is where the Kobe beef auction is held all of the buyers sit up here and they all bid on the cuts of beef and the prices will come up here and the auctioner stands here and says all the prices really really fast and it's quite an interesting sight to see [Music] them now that we've learned all about Kobe beef it's now time to learn about the local sake naragogosake and I'm going to be trying a pairing of sake and Kobe beef and it's going to be amazing let's go try it out [Music] it is so hot out right now that I need to have my portable shade with me but I am now in the nut Award of Kobe city which is known for their amazing sake it is said that the sake from the Kansai region where Kobe city is was so loved by feudal Lords merchants and commoners alike in Edo which is modern day Tokyo and at the peak of the Edo period 80 percent of Eros sake was actually brewed right here in the nut award is that amazing I am here now at NADA GoGo sake dokuro sake literally translates to sake place which is a very good name for this place because it used to be a sake Brewery and it's now turned into a community Gathering Place to enjoy drinking sake and it features famous Japanese sakees from right here in the NADA region and you can basically go inside and enjoy all kinds of amazing sake as a community and also try incredible sake in food pairings let's go inside and check it out [Music] um [Music] let's cheers to this the god here we go [Music] oh wow that was so refreshing okay foreign [Music] no no experiences manga [Music] is cheers okay interesting let's see how it changes let's go [Music] hey it's 40 degrees it's so cool because you can actually see the needle going up let's give it a taste cool okay first of all when you drink hot sake you get these like fumes of sake that go in almost made me cough for a second shot yeah it's really easy to drink it's so interesting it really changed a lot it's very interesting so this is a really fun activity to try if you guys are ever in Kobe [Music] foreign food pairing I am especially excited for this because I didn't know that this was a culture from the Edo period enjoying food with sake and combining it together so I'm going to start with this one let's try this sake here this is the hakutsuru sake the color is incredibly clear oops like water that's so good it's very it's leaning on the sweet side it's got a little bit of like a a deeper aftertaste if that makes any sense it's it's a rich flavor let's see what happens when we compare it with a gazpacho which I assume is a little bit acidic and I'm told that it has a little bit of tofu inside of it so tomatoes and tofu um that's a really good wow it's a very creamy and you do get this wonderful sweet and acidic flavor of the tomatoes but you get that creaminess of the tofu so there's a little bit of a taste of gazpacho still in my mouth and then we take another sip of sake here we go oh it did change it's like magic it's actually so interesting I don't even really know how to describe the taste it becomes a little bit clearer and brighter of a flavor I think the acidity kind of balances out a little bit that deeper tone that I first tasted has kind of been erased and now it's really like clear and light all right so next we're going to try the Hama fukutsuru sake smells really good and refreshing let's give it a taste again completely different flavor profile which is very aromatic and almost like flowery it's very light and easy to drink let's try it with the chicken what a really nice crispy skin really juicy and Meaty but kind of subtle seasoning let's try again with the sake here we go oh that's also really interesting I think the change this time is a little more subtle it's become even smoother I think it must be something to do with the oil I don't know what it is but it's some kind of chemical reaction and it's magical it's very fun this is so interesting I never knew that food pairing with sake could be so much fun it really is kind of a scientific chemical reaction so if you guys are in town you really should check this out but next I'm going to be trying a Kobe beef Sukiyaki dish paired with sake so let's see what happens with that all right it is now time for our Sukiyaki Kobe beef and sake pairing I'm really excited that there is a Japanese sake that is designed specifically for Kobe beef I did not know about that so let's see how it all tastes oh my goodness first of all the Sukiyaki flavoring mixed in with the egg it really adds this like creamy richness and it balances out the fats and the oils and it just Blends together in your mouth so wonderfully and the beef is so tender now let's start with the sake and see what happens wow that's kind of an unexpected freshness really clear really easy to drink I think what's special about this is it does cut the fat all right let's try one more bite okay now that I have that in my mouth again let's try the other sake that bonds well with beef this one's a little bit sweeter a little bit like slightly deeper undertones than the other one oh I never knew sake bearing could be so fun there's subtle differences but quite different anyway I'm having a fantastic time if you were to leave me alone here I'd probably be drinking the whole bar over there so next it's time for me to continue my journey here in Kobe and continue discovering some more local sake's and Kobe beef so let's head on to the next place cheers [Music] thank you I am here now in arima Onsen which is a hot spring town in Kobe hyogo prefecture up in the mountains this is one of the most well-known Onsen or Hot Spring Resorts in the country and it has a history that dates back over a thousand years so I'm going to be finishing off the day right here with a fancy dinner at the get going hot spring hotel with some kobe beef and of course sake pairing let's go inside oh wow what a spacious room oh my goodness wow I get so much space all to myself and today I'm actually gonna get to dying right here in my room as it's tradition with hot spring hotels in Japan and what is really cool about this particular hot spring hotel is that supposedly arima hot spring is said to be one of the oldest hot springs in Japan maybe the oldest hot spring in Japan and they actually have the origin of that hot spring right here within the territory of the hotel and that's quite uncommon so this is a really really good place to stay to have hot springs they even have three different baths you can enjoy but first dinner [Music] this looks fantastic I don't even know where to start there's so many different dishes to enjoy I just want to point out that this is an extra menu that we ordered but the rest of it is included in the course if you guys come stay here it's already a lot of food I think I'm going to start with this wonderful side dish it is unagi eel wrapped in a leaf it looks really beautiful itadakimasu my goodness it's a wonderfully salted eel the rice on the inside is really really chewy and it kind of feels like I'm eating an eel rice ball I should mention this is actually not unagi but it's a Nago so don't make that mistake like I should it's really good though I'm also going to enjoy my next dish with some sake because this is a Kobe beef steak so let's do a little sake pairing let's give it a taste come by oh but it's it's a little fruity yet a little bit dry as well and I think that would really go well with the Kobe beef let's give it a try goodness wow it really wow it just the meat pulls apart looks incredible foreign that is a really good really juicy steak I've actually never had a such a thick cut of Kobe beef before in my life the meat is really juicy and really really tender I just realized there's butter on top the butter goes really well with this steak that's a lemon butter too there's some lemon hints coming in so creamy it's acid that's actually really good it's hard to describe but it's become a little bit smoother and a brighter flavor I think it's because of the lemon and the butter now I'm going to try the ochezuke with the Thai or red snapper fish [Music] oh that is so delicate it is it's not very salty at all it's I think you can taste almost some fish based broth that's very delicate the fish is so tender all right now I'm going to try grilling my very own cuts of Kobe beef this cooks really fast just so you guys have a heads up there are three different kinds of seasonings you can dip it in there's classic salt and we have ponzu which is basically a citrus vinegar with soy sauce I think a little bit of diet corn or Spanish and then we have tare which is kind of a barbecue sauce all right I think I may have not done it medium rare I think I overcooked it a little bit but it smells really good let's give it a taste [Music] oh that is where it's at oh my gosh freshly grilled Kobe beef right in front of you that is really there's nothing better than that it could have been a little bit more medium rare but it is so juicy there's so much fat in it it's Umami it's deliciousness in every bite let me dip it in the uh in some sauce actually I completely forgot that was good even without anything let's go with some tare here um really good just really garlicky if you love garlic that is the one for you oh my goodness all of this food is fantastic the Kobe beef cooked fresh I cannot
