we all know that Japan is a country steeped in Rich history and culture and it has managed to preserve this Rich Heritage even in bustling Urban Landscapes like Tokyo amidst this urbanization some restaurants have managed to continue to thrive for generations for over 100 years and these kinds of shops are known as Shin these Shin continue to be adored by locals communities and even tourists alike even today after all of these years but let's go check them out and see what makes these restaurants so special and what has made them stand the test of time over 100 years before we do that don't forget to subscribe for more Japan Adventures let's [Music] go I am here now at nihombashi Toyota this is a restaurant that has a 160-year history here in the nihombashi area in Tokyo it's actually currently run by the fifth generation owner and it's a family-run business so it's still going really strong and you can enjoy traditional Japanese Cuisine here so I'm going to go inside and I can't wait to try high-end traditional Japanese Cuisine with a flare of History let's go check it [Music] out for for [Music] that looks so [Music] [Music] good M that is so rich it's almost like eating a dessert the sauce is so thick so creamy and nutty it's almost like a caramel SL peanut butter and it goes really well with the GOI Berry the tofu is made of Sesame as well it's like a wonderful homemade Sesame tofu [Music] looks so good but first let's take a sip of beer cheers come [Music] by oh that is good that is so refreshing love a good beer in the summertime all right now let's try our dish let's start with the Hummel fish flu I'm actually really amazed you can kind of feel a little hint of some of the bones but they're so tender and the meat is so fluffy you wouldn't even know the texture toward the middle since it rolled up into a ball it's kind of chewy like mochi almost it's almost like a glutenous rice texture in the middle it's very interesting the presentation is beautiful as some of you may know Blowfish is highly poisonous but in Japan it's very common to eat it at high-end Japanese restaurants because they all have to take exams to uh basically they have to study what is the correct way to cut a blowfish to make sure that all of the poisonous parts are removed first and uh basically this Sashimi edible area is a very small part of the fish but it is entirely safe so let's give this a try I'm excited to see how it tastes with the little bit of spice that he's added here M that is really really good the spice actually is super flavorful it's got a little bit of a citrusy hint to it it's got a great sharp spicy um and the uh the skin the collagen gives it a little bit of a nice like bouncy jelly like chew and the meat of the Sashimi itself is really light and delicate it goes really well with an slightly acidic honu [Music] sauce oh she so let's start with the [Music] beef wow that is grilled to Perfection the peppercorn adds a really nice kick to it the oiliness the Umami the tender tender meat it's absolutely fantastic for all right a little taste of Edo history that is so tasty the meat of the shrimp is so firm and bouncy the batter is not as crisp as I was expecting it's a little bit tender but I think it's really really easy to eat it's very tasty let's try the fish they used to be able to catch in the Edo Tokyo area M that is so good I'm surprised at how light and tender it is all of the food was so amazing and I have to say it all went really well with the glass of beer maybe people who visit Japan they tend to drink Japanese sake with all of their Japanese food I'd say mix it up with beer sometimes it's a very popular way to eat Japanese dishes and it was really really good and I feel like I had a taste of ual Edo history but I'm going to go check out some other Shin or very classic historical restaurants so I'll see you guys at the next [Music] one this is the famous niom Bashi Bridge it's been around since the 17th century having been built in the year 16003 which is incredible and nihashi is also coincidentally the terminal point of the tokaido road which connected Tokyo which was then called Edo to Kyoto so because of that it has long been a hub of Commerce culture and of course Cuisine so a lot of the shops and restaurants that have been around since that time actually are still around today let's go check out some great historical restaurants I am here now at Jano Ichi this is a restaurant with a 134 year history here in niom Bashi and it actually started out as not a restaurant but a street stand and it eventually evolved into a restaurant and it's been been here ever since this restaurant has been loved by great Japanese writers and it's still beloved by people here today and you can actually enjoy authentic Edo style Sushi here where they use many of the same techniques that they did 100 years ago and also many of the same ingredients let's go inside and see what Edo style Sushi tastes like let's [Music] go f for [Music] wow I've also got some beer to go with my Sushi because I love beer so I'm going to start with the shrimp it has been marinated in Japanese sake m it is so this is a raw shrimp but it has been marinated in this wonderful um sake sauce um and it gives it this creaminess I think it's also cuz it's raw shrimp tends to be a little bit creamy when it's raw this also goes well with beer actually yeah I feel like the beer balances out the creamy that creamy richness it's very good next let's try the Hotes Gallop with the nits sauce that is excellent wow it's a very delicately sweet sauce kind of similar to a like a a eel sauce like a sweet eel sauce lots of flavor and really tender soft scallop it's very good all right let's try our suji col they are a type of fish eggs oh oy if you've ever had salmon row before it tastes kind of like that the the eggs they burst they're really juicy I think the eggs themselves are a little bit on the sweet side um the sake sauce that it's in really deep and quite salty but it balances it out so [Music] well oh she so oh all right let's try our first one that's fantastic you know what really the fish is so tender it doesn't have a lot of flavor on its own but the soy sauce is very rich and what really stands out in this Sushi is the red vinegar rice it's not your standard vinegar it has a little bit more of like a almost wine like richness to it here we go this is so good hom madoo is really good because it is so fatty and it's it's Rich it's got so much meatiness they've cooked the edges just a little bit and it's been marinated the soy sauce Blends in with the red vinegar so well m right off the bat you get the smokiness from the seared Conger eel and the meat is so fluffy the sauce is excellent it's a little bit salty but it's got a great deep richness to it that's complimented by the sweetness and the [Music] sauce wow so good wish that's amazing his son made this of M oh my goodness that is so good this has a wonderful balance of savory and sweet and it's leaning toward the sweet side which I personally love and I think the Sano spice I think that's a good balance to uh kind of offset the sweetness a little bit but the egg itself so fluffy and so warm it's actually close to piping hot really comforting it's time for me to check out one more Shin so I'll see you guys over there it's really cool to think that back in Edo people used to probably be fishing in this River maybe not quite unagi but you could probably get different kinds of fish here that people actually used in their [Music] businesses here we are this is our last stop of the day this is unagi Capo oo and it's a restaurant that has been long long loved by locals here in Tokyo because this restaurant first opened you won't believe this but in the year 1800 and it's been continuing its tradition of eel Cuisine ever since so let's go inside and have truly a taste of history and see what old school style unagi tastes [Music] like [Music] [Music] we're going [Music] upstairs oh wow what a gorgeous room this is amazing it really does feel like the epitome of tradition tradtional Japanese [Music] dining [Music] for [Music] oh let's open up the chopsticks they come in this gorgeous Box by the way and apparently it's so that you can take them home you can actually take these Chopsticks back home and carry them in this beautiful box how nice what a great souvenir let's give this a try this is kind of a very Japanese style dish M that's excellent the fish has been marinated really really well you can taste a little bit of of like traditional Japanese flavors um kind of like soy sauce and I think some like sake in there and the egg really brings it all together it makes it so creamy and just so you know all of the dishes as is kind of traditional in Japanese restaurants the ingredients or side dishes will change with the seasons all except for the main dish which is the unagi eel today I'm excited to see what comes next so good M oh that is very hot but my goodness that kind of warms the soul It's a Wonderful fish-based broth I think and it's got um this great Umami from the mushrooms in it very nice little soup oh c it so I'm going to start with the tuna but something to note is that if you really prefer a kick of Wasabi then you have to make sure to put the Wasabi on top of of your fish but if you want a milder Wasabi taste then you can mix it into your soy sauce melt in your mouth fatty tuna it is so good so rich the Wasabi is not so strong it's really gentle so this is eel liver and I've never had it before that's really good M the glaze is fantastic it actually just tastes very similar to like an unagi eel Rice Bowl oh that's beautiful this is the white grilled fish and you get to add your toppings as you like so first the recommended way to eat it is put a little bit of salt a little bit of sudachi citrus on top and a little bit of Wasabi and that should be your first bite M that is excellent the seasonings are just perfect and the meat is so tender and so fluffy the skin is just perfectly grilled so you get a little bit of crispness on the bottom and your wow that is gorgeous this is the unaju and it's basically an unagi eel bowl and it's a cab y style which means it's been grilled with this classic japanese eel sauce and this is really a taste of History M that is so good so rich in flavor it's rich but delicate you get the saltiness but it's not overly salty it's really gentle and a really gentle sweetness and it goes so well with the rice which is also absorbing some of the delicious eel sauce the eel itself is Fluffy the skin is crisp to Perfection and it's so cool to think that people have been eating eel this way for over a century and they still preserve these same Traditions today what a wonderful day exploring Tokyo's history this has been so much fun and it was really neat to see and talk to the owners of the restaurants whose families have been passing down these restaurants for generations and generations so if you guys want to experience this kind of history of
