I've been at the Glass House restaurant in ambleside for just a day from what I've seen so far it's gonna be bloody hard to turn this place around in a week a month possibly but now it's inquest time there's no question where to start that cocky chef who's going well huh ten past nine that went outside have a quick chat with customers and all of a sudden I started seeing this food coming back ah where do you think you rode down [Music] but things were coming down there just when [ __ ] chaotic say every [ __ ] Saturday we've ever done it's exactly the same maybe I just shouldn't give a [ __ ] maybe I should just say [ __ ] you give us your money thanks very much then it wouldn't bother me and I could go home and it wouldn't matter if I've got a [ __ ] restaurant cuz there's loads of them out there and the owners driving around in bloody Porsches I'm driving a shitty astro van and I'm [ __ ] close to tears do you know what I think the old rather throw himself in lake windermere then actually turn around and be the bad guy with his staff it's not all kitchens fault but and you know the kitchens the engine room yeah how much it if we're not firing all pistons and we're not you know on the ball right come here the chefs ask me a question question was what happened to 20 plus nine where did we go we were [ __ ] mode Street you look like a sucker shite well at least other bowlers - apologize - yeah he's standing there bullying these [ __ ] eyes out yeah tell your [ __ ] hat off we've hit rock bottom thank you sir ah hey I'm telling you I don't want to go upset the team will need a real boost if you want to get back on track it was all going so [ __ ] well but there's still some problems to tackle it's my second day in the Lake District trying to save the glasshouse restaurant and I tell you what is an uphill struggle [Music] next battle hi Gingka this place is about as clean as a puppy's litter tray the secret film was taken last week they knew had sent someone to check around but they didn't know his marks are on my head chef at Claridge's and they didn't know he had a camera hidden in his hat plastic containers they instantly tell me the food is not a special it should be even the head chefs not sure rather than me making this kitchen is filthy straightening the dirty floor into the pesto it's supposed to be a kitchen not building so it bones can have that bollocks place let's go the cardinal rule of cooking your kitchen must be clean and by clean I mean spotless the normal clean down which is what every Saturday night after service but you must have one big clean that week now just random [ __ ] mate time clean kitchen clean food lazy kitchen porter 8:45 random but it's not just up to the kitchen porter everyone should be responsible but they're not you've got a trust a brigade that you pay and second me and you know bring them on Evolver make them talented keeping hold of them motivated them evolving them increasing the responsibilities of working on them let me think how much time we spend to go in the kitchen all day long yeah it's exactly that well we spend it's just first time because them enough time to go in the kitchen then we do at home that bloody family nothing more I can do until we finish time for Neil I do we should turn on his mobile phone grow some bollocks and act like a bloody boss there are too many customers to cope with on Saturday nights but the rest of the week the place is deserted that's partly because no one can find it when I walk past for the first time coming down here for the right-hand side I had no idea where the restaurant was and here we should have a nice prominent sign glasshouse restaurant with the menu board goofily lit and whether you want to put some little bloody neon lights or nice fancy lights around it is an attraction right and that literally that sign there yeah an ass house yeah and with a new logo and the new printing just something that you know speaks value right yeah because it looks it looks to collocate doesn't even save a restaurant does it say your rationale exactly I want to see a bloody telephone number on there now for the menu a well written beneficial entice customers inside at best this one is confusing at worst is just bizarre I don't want to read popcorn where the [ __ ] did that come from it's something the vegetarians always say that they've got no there's no crunch or no body in any of the dishes you've got no palate lunch menu two starters two main courses and two puddings yeah I'm just wondering how many people are gonna come in for a two course lunch yeah look at the menus the to course and FS hearty rustic country fired food and trust me because I know you don't wanna let go the sandwich and I totally understand why not let go I just don't know let go of the revenue I serve sandwiches I got no problem serving a lobster roll suckling pig sandwich yeah I've got no beef 'el and beef sandwich I've got no problem serving somebody's whatsoever okay guys great open macro sandwich work down good match with a teen kitchen we can improve the food you and I can find out exactly how the team works fine flowers and then I just Craig look scared still making a mistake you'll have to change that if you wants to be a chef let's sort yeah I'm puttin you up Sullivan what happens the fish in the pan boil on it two more round the outside one of the beans gots my dad habits there's only been cooking for three months I don't think he's gonna make it the whole thing is changing color and it gets halfway what does that mean but we're just gonna finish on the bottom okay good good question you're very very good cook yeah I don't have I told you that before this restaurant to be better than the BLT yeah good how's your sandwich no different from a BLT better than a BLT no as good as big in a well-run kitchen everyone makes a contribution but Richard hasn't even asked his team what they think the problems are Craig what's all and weak point in the kitchen this is where I get a lot of orders on I don't have them in front of me so I like it they get shouted out once and then I have to probably check the ticket again put it together in your own mind then just jot it down Saturday night's great hardware all the checks are coming on yeah I do kind of lose where I'm at and how many steaks got on order and how many mm-hmm well money goes quiet it's kind of like it's difficult to motivate yourself as Jeff Lewis I know ya know what Neil's finally agreed to a new lunch menu simple fresh food for a tenner including the new mackerel sandwich lets you enjoy their company then ask some happy customers a restaurant full of happy people fantastic jive small amount and treat it with a bit of love place it in there gently yeah my god the kitchen suddenly sounds very well wait sweet the poor please already obviously hundred flour everywhere yeah I didn't see any way within 30 seconds every section the kitchens talking to one another good everyone in the teens responding but rich is not working with [Music] quite low it's not really that busy house what I see is working together even more now I know there's nothing for you to do right now but yeah yeah I know it's painful but get them doing something for you please thank you and you hey ask you similarly think we were just yeah what you didn't on his job keeping customers happy and making sure they spend their money he needs his customers to bypass the cheap early supper menu that runs until 7:30 and eat ala carte and that's how I'll pay off his debts and rebuild his reputation let me just tell you something 15 portions of apple cake 15 portions of fondant and 15 portions of bloody grass and dolphin was five nights a week is one hundred and twenty five thousand pound a year turnover hey on three items out of nearly twenty on a menu yeah the last day were just arrived said they're early fifteen minutes early so I want to make sure that Neil doesn't give them the early supper menu because we're gonna find out whether over here for a bargain or not I want to sell the Alec are not the cheapo menu because they don't mind they've got a bit of money now you've got two menus on today you've got the ala carte menu we've also got the early supper menu so you've got lots to choose from was the rival said they're really early twenty minutes early they've booked a 7:30 so therefore don't give them the cheat menu the table before yeah just sat down right what did you give it I get in the boat yeah damn will he never learn Neil must work the tables not worry about the kitchen if you only focus you do fine job you know what you are a phenomenal salesman you've got the most amazing wine cellar you can take an order you can take an order and you can cane it on the wine and the better the food the more money they're going to spend on wine after three days things are looking up the guys upstairs are starting to get the basics but my big worry is the kitchen Richard just as an earning his 25 grand is the biggest problem in the Glass House but Neil just won't face the facts I have to show him how well the kitchen can run without his head chef don't do this wrong way but will you take them outside and I want you to take my offer now I love both you two have dinner together you're three Italy yes yes you are you think he takes advantage of you because he was such a nice guy to work with sometimes yeah but then I think everyone takes advantage of me he gets paid that amount of money yes every month it's a bloody good salary hmm but that doesn't seem to be any onus on you know evolving let's get better he's gotta make sure this is yours analyse your livelihood your family your money and if this goes do this yeah then oh they're buggered off and got a new job and you're sat here in the [ __ ] so you're taking a bit out myself I'd never put Richard back in the kitchen without him is a happier place something better food but it's Neil's decisions realize how much television yeah the guys have you got what I was st. said last night at the end of the day we are a family and we better work it out don't want to see frozen but lovely in brackets next to change if you don't put that then the book is terminal it's a lovely meal but can't believe your chips are frozen you're the only person I've ever ever come across that writes frozen but lovely hot fat vegetables in as well as reducing the menu they have to make sure the foods top-quality that's the team's main course local lamb I've no doubt Claire can improve on the fatty lamb shank I had when I first out here their bread and butter pudding needs to serve here was pure stodg my version should be perfect for the new menu I put Craig in charge the recipe got the Gottis up to it my spies told me last week that you didn't wash his lettuce and today an addition they could become famous for yourself a classic caesar salad that's one for you look at the contour of the plates go round so put the top partner salad around the outside of the plate we're gonna lightly plate the warm egg Center parmesan crispy bacon and then around the outside there you go the new glass house Caesar salad fingers off look here what a brand new menu and a fresh start if all goes well tonight we'll see the glass house reborn [Music] 70 local people have been invited to try the new food everything everywhere has got to be just right and I mean right I mean perfect don't take this the wrong way yeah and I mean don't take this wrong way last night you had bad breath okay yeah and when we're standing there talking to customers and you're trying to sell them something yeah it doesn't smell good even Richard seems to realize the importance of tonight's launch yeah let's scream it let's [ __ ] shout chef when I call the check out yeah wait for the end of the check yes chef look introduce the menu Richard and having slash the prices this is not an expensive dish to put together as it I designed the menu especially for Richard everything's cooked in advance so there's no chance a mistake and the had that cost absolutely nothing this morning was this seventy pence a pound yeah yeah and it smells lovely sex on a spoon here we go ahead that we know tonight tabling of all the people hopefully there'll be peace when breakfast there's quite a few in the media you've got the gunner head guys from tourism they want to contact you myself available I'm gonna recharge me mobile which I turned off many months ago hallelujah Neil's behaving like a proprietor with balls proud of his restaurant he's even booked the guests in shifts so there's less pressure on the kitchen progress at last we've just got everybody in by the eight his chef he moans about my Caesar salad nobody talk to me yeah I know what we were certainly the sauce with that is actually beautiful a dressing which is very rich perhaps is a proper Caesar salad done what I haven't done is crushed the lettuce and the ship I saw last week we've cooked jumping on the subject I'm not squashing it no let me finish I'm squashing the salad of the side of the bowl and you're telling me that's too big that is fresh salad beautifully washed and I hadn't even put my hands in it to dress it I've let it dress itself in the bowl so what you're telling me is absolute bollocks and I'm ready for a [ __ ] argument right now you're talking they're talking about your work you talk about in the restaurant you're talking about amazing he's got big enough bollocks to stand up to me but he can't tell his own chef who's paid 25 grand a year at his time he took his people to follow we survived the evening but only just I shouldn't care but I do like these guys and a the night off in the restaurant you hated my Caesar salad and the big question yeah who's the chef Richard Richard is still here yes does does it downstairs oh my God he's nervous nice swim yet right we know guys one thing I have noticed soon as I walked into the kitchen it's how these plastic containers start creeping back the new dishes that you've involved and put on the menu why we're doing a Toledo pomegranate risotto so you got crunchy pomegranate seeds yeah mixed in risotto yeah sounds [ __ ] revolting oh [ __ ] me welcome back this is a new dish that we bought so we know that's a nice to see Craig's cooking we sold about seven when we put it first off him what we've been doing new and exciting to tell me I've got a toffee food crumble on now Michelle taught me fruit crumble yeah with creme fraiche make on that sounds really nice I thought Ian had a real talent I'd give him a job in one of my kitchen any day Andy's girlfriend and where's my sweetheart Claire where where she I she had problems selling the shot couldn't get and she comes out we can give his left at weekend just keeps her Honda it's a shame she's a big loss and my fellow Scot Randall he's gone too sad Neil's hung in there but it can't have been easy it's gone closer to the wire they're not realized that close week to closing the door very close worst thing for me it was like nothing let's pay the guys like one stage I didn't I didn't think I'd be able to pay them you know nothing these guys they put the effort and they put the crust in until everything there and they've always been behind you things like suddenly you can't put any money in the pocket I mean it's been a constant struggle but it's like now I'm I can actually say to myself well I'm gonna start reaping the rewards and I will do yeah and I'm a lot more positive about what sector if I January's it's been fantastic weekend's have been busy you know there is a difference at the food your presentation it just looks and sleep it tastes you know tasty well thank you still a bugger still not convinced about my pomegranate risotto universe gonna think about that one other train on the way back cuz have yeah that beats my [ __ ] area network it's been a pleasure today there's been of interest keep it up yes lots to celebrate Turner was up 20 percent and rising the Russian is building a good reputation and going from strength to strength you never know Neal's nervous breakdown might never happen when you come back just walk under someone else's name yeah that's it now every bloody name that box behind you guys sounded funny on the phone I miss Helen yeah it's Gordon dot I really hope this exceeds and I really hope they do well but any chef that comes up with a risotto finished bloody pomegranates needs a
