We make this all the time and it’s so good. You can also add ingredients like flaxseed, raisins, rosemary, etc. Typically doesn’t last more than a day or two in our house before we devour it.
If you get a sourdough starter going, you don't even need packets of yeast. I was on a no knead dutch oven bread kick last winter after a friend gave me some starter. Working full time and only baking breads on weekends, I neglected my starter. It was lethargic so I'd add some storebought yeast, too.

I made it, it came out hard, twice. if anyone has any tips for me please let me know. After about 2 days on the counter it was impossible to bite.

This outbreak is what finally got me off my butt to make my own bread. Just began a sourdough starter on Friday, getting ready to bake my first no-knead loaf this evening. These no knead recipes are awesome! My suggestion is to buy 40 lb bags of choice flour for the best savings, plus it'll obviously be a good amount to last.
Other things that have recently topped my priority list:
Been working on homemade broth to store.
Portioning & freezing bulk meats & cheeses.
Picking back up on all my gardening ventures.
How much flour should I have on hand for one person? I bought two packs but I'm not much of a baker so I can't really gauge what is a good amount.
