you're correcting it it's super super fast we're going to use the entire shrimp the shrimp head actually is one of the best parts i'm glad to say before i love head and shrimp head good also i like rice it's going to give a nice base very smart idea use shrimp stock to cook your rice better than using water so gabby gave me scallions and garlic to use in the recipe and i'm just gonna use these scraps for the stock give a quick scratch to the garlic and what this does is releases some aroma if you're throwing whole garlic in broth then the skin aren't that okay but you already peeled the skin off while your chocolate skin in there nice as the yeah this broth not been so my shrimp stock has been going for about half an hour oh colander high here on the shrimp shells to extract i think they're doing this on purpose to torture uncle roger so i have my shrimp heads which i'm going to be doing two different things with it i'm gonna be making a shrimp oil and a shrimp paste we're gonna she really making use of all part of shrimp that good and the shrimp heads that are super crispy we're gonna be making a beautiful shrimp paste i don't throw anything out maximize maximize maximize complaint as auntie helen it's ready so at this point we're going to take it out because nice look good darken as it sits maybe salt it a bit also chips how can i not perfect okay so time for the rice the most important part hence it's fried rice chef esther was kind enough to prepare the rice for me so i gifted gabby cooked kosher gary rice that's a day old you cannot just give her rice three ingredients egg fire and rice you give her rice you give her a third of the egg fire rice might as well give up the whole egg fried rice white pot asking her to cook gabby sent me probably your most common rice that you'll find in your local supermarket and in this case we're going to do two cups just been rice okay wash my rice multiple times but i think i'm just going to give this one a rinse because it's not too starchy two cups of i uh you have restaurant but cannot afford rice cooker why and now this is my trick when i do it at the restaurants spread it out on the sheet tray and let it kind of dry out like that ah very smart because nice esther don't have day old rice she have to make rice now so she dry it off on baking sheet to simulate the dryness of day old rice good tip good tip clearly gabby didn't send me much vegetables to work with good good that good because vegetable taste like sad don't eat them if you want to be healthy just go exercise [ __ ] vegetable okay we're gonna still maximize scallions i'm actually gonna use in two different ways with the whites i'm actually going to use to kind of flavor the oil when i cook the frying pan this and the greens i'm going to use as a topping a little milder that's slanted slicing that very fancy so i'm slicing these on a long bias because at the restaurant we like to call this sexy scallions oh sexy scallion that gonna be uncle roger drag queen name because i slim slanter and go well on top of anything water because it can get a little slimy and it also like perks it up now for the jalapeno what what holla jalapeno for egg fried rice that mexican you are making egg fire rice not egg 5 burrito just use normal chili what with jalapeno hi i saw this on tik tok actually but it's something called golden fried rice and what it is it's separating the egg yolks from the white and using the yolk almost like a fat emulsifier and coating the rice with the egg yolk oh it's like using a butter interesting technique uncle roger never used that before but it looked cool because i think the fried rice gonna have very nice yellow color and the egg yolk evenly spread throughout rice enkura you didn't know you could get good cooking technique from tik tok because to me tik tok is just underage girl dancing it's like pitot tinter so this is why i'm using the yolk for this all right our rice is ready to go we got ourselves a wok so gabby's gonna be making her fried rice in a walk good here's a tip for someone who wants to use a wok at home you can actually turn the burner grate upside down to create a cradle for your walk to rest in fruit oh that very good tip again this niece has to have so many handy tricks i think if you troll needs esther on deserted island within a week you come back she already have built a boat start a restaurant and start family also so now my flame can basically touch my wok i have not been gifted with a wok so i'm going to be using the second best thing it's a cast iron skillet i love the cap okay that okay also means a lot of heat and also because cast iron skillet is white people version of wok you need to season it you can pass it down to generation and people so impress if you have one first thing fried eggs while that cooks let's get our cast iron hot let's add some of our beautiful shrimp oil add my scallion whites so we're good it's like beautiful scallion oil in the shrimp oil what you're doing to walk you have to like you know you got to own it that's what i'm doing right now i'm just showing his box you know let's see if i can get a little flipping
