[Music] perfect timing [Laughter] oh I think you might have gone into a hole hey you go perfect timing right at 32 seconds no it was a hit hit right out like one and then boom I said the hook two seconds later dispatch and bleed him out and we got Nina thank you buddy [Music] so I was just salmon fishing and my mirage drive broke so now I've kind of just switched over to rockfish and then we'll catch a couple fish and I'll just hit in because I really wanted to catch salmon so what I've been going for but haven't had any luck and today even worse luck we fish maybe 10 15 minutes and in the Mirage drive broke feeling good about today too but it's alright we got a rock fish after my Mirage dry broke which is the kick petals for the kayak NIC fish here was towing me the whole time after that and I only had my salmon rod on me so I was fishing for rockfish with my salmon rod which isn't ideal but made it work [Music] nice rockfish I have a shrimp fly on using anchovy as bait and all right watch this we're gonna hook up in and I'm gonna drop down and we'll hook up real fast lucky right on my marks my marks are just so funny it's like as soon as you get on top of it yeah I will keep them [Music] thank you buddy alright guys well we caught some rockfish I mainly wanted to test out this new Osmo action this would be a quick little video but yeah we caught some rockfish I was out salmon fishing earlier but that didn't work out the Mirage drive broke but you guys saw you catch some rockfish so we'll just go home and cook some of those up for lunch why not right hi guys we just got back in it's my catch for today nice bunch of rockfish was a six Brown rockfish and one blue and I think I let go one or two out there too I'm released I'm just going to clean them right here on the beach cuz I'm fugly I'm thinking either steaming or braise them so we'll do it so we'll scale them up so don't have to do it later these spikes are scary you won't put them down either [Music] okay so question do you like soft shell tacos or hardshell tacos better I think soft soft shell yeah yeah I like soft shell too but sometimes hard shells get to you yeah they're both good so when I use both soft shell and a hard shell on a fish taco that's gonna be really good I think in rockfish arguably that is the best fish to make fish tacos with let's get some prep done really quick I have I'm gonna make some people the aisle I'm gonna make also my own tartar sauce and we're gonna fillet the fish and we're gonna deep fry the fish and we'll do Phi the tortillas afterwards and we'll heat up some of them too so we can have both all right so let's get to prepping all you need for people to gather is really simple red onions avocado tomatoes a couple limes a serrano pepper handful of cilantro and some salt and pepper and that's it put it all together and you have Pico the oil that is really delicious easy takes just a few minutes to make the next thing I'm gonna make is tartar sauce and I'm gonna make the fresh mail - all right so let's get started on that all you need for Mayo is an egg yolk one egg yolk and some kind of oil and today I'm using this cow pressed almond oil never tried it but we'll see how it is usually for tartar sauce you use like a dill pickle something like that but I'm gonna use today my kelp pickles and I just pickled this very recently I got more kelp in and I pickled this and there's a some garlic in there there's some red onion there's also napa cabbage in there and some Serrano's so a lot of stuff in there but the main thing in there is the kelp so I'm gonna use pretty much whatever is in here for the tartar sauce and this should be really good here's the kelp is a little bit of red onion there's a Serrano there here's some pickled cabbage napa cabbage is really good and does the Serrano's so I'm gonna get a little more onion in there and most of the garlic's at the bottom so I can't really get to that I you use pickled jalapeno is a lot for tartar sauce that's really good too so I'm just gonna chop this up just gonna separate the egg yolk from the egg whites alright and I'm just using the egg yolk oops Dimmie anything on there I'm just using the egg yolks for this now I slowly incorporate the oil into the egg yolk [Music] real beauty that's male alright I'm gonna add a little lemon juice you give it a taste yeah that that oil has a little too much flavor she's a oil that has a little less flavor this is very Oh Mindy I should probably use this for something else well that's all right it's gotta be good stuff now I'm gonna incorporate all of the pickles in there and that is gonna be the best tartar sauce this is salt and pepper a couple pinches of that that's my tartar sauce tell pickles tartar sauce so I'm gonna fill a couple of the rockfish I caught earlier this this is a brown rock fish that I caught just about a couple hours ago I know head off let's fillet this guy real quick here cut the skin go into the flesh go in all the way to the middle bone make sure you're on top of that bone there all the way to the middle bone scrape up a little go through and put a towel down boom pop the ribcage off there it is skin cut the skin first keep that pressure down on the bones once you hit the middle bow scrape up on the middle bone just a tiny bit see that right there bone expose that whole entire mental bone boom boom put that through Bam Bam put that off and we're done you guys want to time me should I start a clock where's ready ready set hey hold on let me wipe my knife a little ready sick go [Music] there you go Wow 53 seconds and there's the bones there I'm a little rusty on the speed Philly needs to be able to play pretty fast I was working at the restaurant I'm like fileting ton of fish every day so not anymore no just filet here and there so I lost my speed I might take these pin bones out with tweezers perfect sized pieces for fish tacos right here cornstarch egg wash panko in that season the cornstarch cheese my right hand clean and I'm gonna use my left hand for all this batter stuff all right so cornstarch first number one and an egg wash number two shake it off and noon parkour the coin starts automatically sticks to the fish cornstarch helps the egg wash stick and the egg wash helps the panko stick and it could be either flour or cornstarch either or both do both work she's gonna do three at a time [Music] [Music] hey so now I have these just regular tortillas regular corn tortillas and half of them I'm gonna just heat up on top of the stove the other half I'm gonna fry them up got my chopsticks look at this you gotta fit the pan low there you go just got to basically hold it down he wanted to get that shape [Music] yeah yeah it's working but stuff like a clam I have everything prepped now I have the fish right here have pico de gallo got the tartar sauce that looks delicious and I have my tortillas two types just warmed heat it up on the stove and the fried crunchy tortillas all right now the question is for me do I go crunchy outside or do I go crunchy inside see the thing is I was trying to crack it open a little bit so I can if I can feel good fill the inside you know what I mean oh I thought I could just a little pry open a little bit well yeah I guess I'll do it inside this first one got cracked in half all right lesson learned we're going with crunchy ones on the inside first thing I'm gonna put down is the tartar sauce damn I don't have any spoons only bring chopsticks and the fish one fish two fish in the pico de gallo yeah damn look at that well here it is guys the harsh shell on the inside soft shell on the outside fried fish with fresh tartar sauce and pico de gallo I think this is gonna be delicious it's a mouthful right here now okay alright guys well how does that look right there oh this may be the best fish tacos ever I think this is the key right here you need that crunchy and the soft shell I think this is gonna be good you ready to eat yeah okay let's try this she's so good sour patch Shandy patch nd let me try this it tastes exactly like sour patch kids whoa yeah yes ours thanks James thanks for the beer both tortillas were a good choice both tortillas huh mm-hmm it is good you do get that's soft but the crunchy tortilla of course it's very crunchy and Wow to put together that's nice that's real nice no better fish to cook than rock fish in my opinion that's my favorite fish to cook at least in our local area rock fish it's number one [Music] fish tacos and beer perfect combination fresh car rockfish the ocean provides that's so good yeah I take the tartar sauce I just used the wrong kind of oil they're gonna say it's too nutty it's a little too almond II don't really taste the almond now right in here yeah okay oh boy I tried it yeah I could taste the almond yeah but in here now mm-hmm all right let me show you guys the layers here so cut the softshell tortilla got the crunchy tortilla got the fish oh that's the tartar sauce right there got the pico de gallo hmm I was gonna make like a braised rockfish but I was craving fish tacos fish tacos are such a common thing to make but you can like tweak just a little bit of it and just making your own I put different kind of salsa or put like some kind of slaw in there pickled cabbage you know pickled onions tartar sauce no tartar sauce or you know you can go so many directions with fish tacos that's why I love them Oh ah good stuff oh it's getting bright out here hope you enjoy the episode even though I had to kind of
