it's actually quite nice very um very delicate fish and um it's nicely fried very light really nice thank you be back with your mains for maize my plate's piled high with a clumsy mess of ribs spicy chicken jambalaya and corn and bean succotash i hope he likes it hmm [ __ ] it now there's ribs so tender i have to say it's thrown on the plate with real care but it tastes phenomenal this may be the first time i should go back to the kitchen with an empty plate um thank you bloody delicious thank you and you know what thank you i thought it was going to be really spicy but just turned down and it was spot on and it actually made me feel like i was back at mum's for the first time oh and having some home cooking that was very good oh don't get me crying there are things i would change okay i'm happy to hear about general i can't take a picture of this place i know it sounds crazy i know it sounds crazy on your head mine your head oh god i fed good ramsey and he cleaned his plate first by thought about it but it's true like wait why are we grilling lettuce [Music] it's sorry for interrupting just two seconds but this is the first for me a grilled caesar salad they actually grilled the lettuce um can you just show her a hand if anyone else has ever had a grilled caesar salad before anybody here ladies no [Music] oh geez i always get nervous when a chef serves me the butt the lettuce when you've got the butt of the lettuce on you can never clean the lettuce properly and unfortunately it's not very nice inside [Music] dried chicken the salad looks hideous why is it so spicy everything is spicy everything jesus thanks [Music] back at the restaurant david is preparing chef ramsay's burger let's call this one the redemption burger and for the first time since he started working at the restaurant he is using his own recipe but this time i want to season our way this is very important to me that when i make this burger it's a good burger but at least it's going to be my burger and it's not going to be gin and alan's burger let's start getting this thing ready are you making him a bird or two yeah with the wagon a lot with the wago i'm smart enough to listen to what chef ramsey wanted he wants a nice juicy burger he wants something with flavor not frozen meat medium rare brother okay get it off we're ready [Music] let's give ramsay a hamburger man here we go i know if you're eating lunch don't worry yeah please i just made a burger my ingredients your own ingredients yes wow so it's not on the menu no do you want to try it some people have called me a meat sculptor or a meat creator a lot of different celebrities have eaten my food and have said it was fantastic yes what's in there here you'll see yeah try it i i can see the blood but what's in it it's the weight mix but i've what i've done is i've had certain spices and i made a cheeseburger i don't like a man alan you're not a meat expert you don't know a thing about me the only thing you know how to do is sit on the computer in there and change menus that's what you do and you made this yes it's amazing that is hideous at least it's seasoned this is the burger i'm dying for david please presentation uh it looks great thank you chef explain please i missed a small gruyere with grilled tomato spring mix with a mustard aioli and a jumbo pickle homemade what i had earlier this is this looks night and day wow okay look at that bloody hell i mean that's what i call a burger jesus and how does it taste [Music] it's delicious thank you chef the temperature's perfect and the roll is crispy fish would you like to have a little taste i'd love to [Music] what is that the strong taste that i'm tasting grilled cheese and it's smoked right yes yeah i love it does that go through the meat i taste something stronger in there like a dry aged or something beef but i do like my meat red in it i am a medium rare girl problem is that's not medium rare as it should be it may be medium but i can tell you what it's bloody juicy that is delicious thank you chef yeah i'd give that nine out of ten love that title there by the way redemption burger and you certainly did that suck on this burger jen and you too alan why aren't we serving burgers like that because i thought the way goo meat was better you got your priorities wrong because the word wagyu sounds glamorous and expensive it doesn't mean you say he's gonna deliver you the most tastiest burger my question to you is that if you know that your burgers are better than what you're cooking currently what the [ __ ] are you doing i'm forced into making what they like me to make right if i try to do a change i'm persecuted for making a change he wants to blame me for everything in the kitchen and i'm not that powerful chef ramsay i'm a 64 year old woman i i can't control it all this what he's saying how am i that powerful do you see a chef hat on me you see me swirling the pans or making the patties or chopping the mushrooms or putting the salt on i mean what really frustrates me is the fact that i get served that mediocre crap and that thing is seasoned usually cheese gives it a little bit of saltiness absolutely delicious thank you chef jen whatever nino the restaurant's named after you what's your role the person that always been in charge was my dad and then when when he developed his alzheimer's i stepped up in this business wow what do you mean i i get here early i i do uh the remaining things as janitorial vacuuming cleaning of all these plates and cleaning the restrooms scrubbing the toilets washing the patio that's just from eight until about four maybe weekends usually i'll come in for extensive cleaning sounds like you do a lot of cleaning cleaning what are you talking about the restaurant is a mess take away the cleaning what else you do karina um help me out there's no key person there's no one really directing the kitchen on how the portion should be how the quality needs to be consistent you know you need to be working in the kitchen when i worked here and mike worked here we jumped in the kitchen they don't want me in there who the chefs the chefs they're very adamant about uh keeping that kitchen to themselves it sounds like you put over a barrel now it's like everybody's kind of running the restaurant i thought nina was running it not really no that's not true but nino's here nino isn't here he is here at lunch so he doesn't run dinner are you here for dinner yes i don't understand why you're not here lunch and dinner it's something my mom and i are constantly frustrated with nina's doing everything half bath and so mike and i have to come in help the family wow it doesn't make sense it doesn't make sense irritates the crap out of me he spends a lot of time sitting down with customers i mean not just visiting promoting the business sitting down and talking for long periods of time in the middle of lunch and he's the only restaurant manager i think he'll find it anywhere that has lunch at lunch time he spends a lot of time in the office watching tv this is not even true he's not here he's not here at eight in the morning when i get her why would i come here and that's a fantasy i watch tv the television here is 40 years old and i have uh high def at home with all the all the channels i need why wouldn't i just stay there tell people you're working because nobody's here so you can say whatever you're doing right stretching the truth it is not my brother never tells the truth ah coming from a pathological liar i take that as a compliment he thinks i'm i'm some kind of nut because i i'm in a recovery program that has nothing to do with that you're just a liar he thinks we're all i'm living in a fantasy world according to him no i think you're in a nice world by the way you act here my honesty feeling is he doesn't do crap here he does a lot of sick i'm talking he makes everybody believe he does crap just like last night he ran up to every table and said hello my name's nito that's not true nino please would you let me talk mr ol was talking i see that all the time and that's why i kind of stay back from here because i love this damn restaurant and to see it just being run down drives me freaking crazy to my opinion he doesn't do crap my mom will admit it my dad will admit my sister admitted that i will come out and say it nationally if you can navigate me around there's stuff to stay away from my lotteries [Music] yeah and why would i stay away from them just because i just think they're really dry hmm i respect you all and say thank you i'll bet that i might forgot it holy crap that's really scary within five minutes been in the restaurant and then told what to stay away from from the headwaiter hi place lack of customers so why have we got lacking in customers we need more customers we need to figure out how to get more people in here hi kim thank you and you're the manager yeah oh my gosh a enough for now all righty thank you did anybody taste anything erla everything was good yeah uh-huh if chef ramsay doesn't like my grandmother's recipes and that concerns me anybody taste but smallies this is let's see what he thinks i'm extremely hot crunch [Music] oh no god i hope the tamales are moist jesus it's like soaking wet newspaper that is so dry [Music] my goodness me that's a fresh tamale well when we make them we make them in big batches and then they're steamed and then they're served because we make such large volumes at a time so are you sounding like the catering company now yes and they go out like that it's they should be wet enough with the sauce inside that when you resting them they stay moist what an embarrassment and this is your chef that ran a patron business correct cheese okay okay hates the tamales really perla hates them he said it's so dry it's inedible he said it's embarrassing yeah very dry are you cooking everything yeah are you cooking the chimneys uh-huh i used a microwave for chimichangas for one minute before they fry they taste really really really good okay chicken chimichangas [Music] it's dry there's shards of dry chicken i now wait here's the thing honestly chimichanga chimichu in the bin what a shame he hates the chimneys he didn't like him i taste before it's really good the flavor not to him apparently i'm frustrated at my kitchen it's a bit of a punch to the gut about my food burrito [Music] look at that that's gross it has to be the biggest ad for any diaper anywhere in california oh no oh god my god jesus that's like eating wet cardboard have a taste of that please the steak was gamey it was kind of like a car wash moist and mushy oh my god that is disgusting okay um let's start off with itunes on the flaming tiki platter tikki and then i'll end up with that tsunami on filet mignon okay thank you okay before chef ramsay all right i think jeff ramsey's mouth's gonna drop to the floor when he sees a few other things on the menu our tuna appetizer thank you enjoy [Music] is that always that hot in terms of spicing they have a tendency to spice things up a bit there's an embarrassment to tuna yes i'll shell to taste that other little end there i will thank you my dog brian cheryl chef ramsay would like you guys to taste the tuna it is really spicy i've been saying this since i got here i never had a problem doesn't matter if you love it or not everybody else four times i've got complaints about being spicy so he's he's done with it ribs are destroyed sunday we made those it's a week four days whatever send it just send it out send it out [Music] wow i see platters like that i hear hawaiian music oh my god so do we use that and start grilling away it's for looks thank you are you trying to get the smoke detectors to come no i'm trying to get the thing off the top excuse me having a world-known chef spit out my food is not good tikki platter shitty platter we need bill ready to carve a play tell my father to put his black chef coat on yeah cheryl wants you to put your black chef coat on next film so i'm sort of looking forward to really nice classic piece of meat i'll show you where it is strip down baby i'm not gonna get excited we have a flaming filet mignon that i serve tableside people just love the chef's dream filet mignon something simple something classic and something that's not normally served on a trolley [Music] yeah i'm gonna finish it it's still cooking you'll love this yeah i love this [Music] what's that in there this is butter and garlic oh garlic butter it goes around the top and so the tsunami is the garlic butter running down the drain pipe great i'm sure all the stuff took me at the end you enjoy that thank you very much quite welcome [Music] that's the toughest and the most chewiest filet mignon i've ever tasted in my entire life everything's so chewy is it me is so tough do you want me to yeah no i i i finished it you verbally insulted me yesterday and i held my tongue out of class i didn't tell you the truth i didn't say nasty things to you okay really i didn't really when i told you about the burger you refused to listen you don't understand you're judging me on you coming in here disrupting the entire service i've been doing this disrupting you did disrupt us last night how could i focus when you're what about my lunch when you're standing here what about when i cook for you who disrupted you then everybody what are you talking about blaming everybody again i do my best so our business doesn't close because we can't find qualified people you go get miranda and that little katie and jessica bring them here and let me see how they work will you do that of course do you know what they're scared of they're embarrassed but unfortunately you convince yourself in your little amy's world that everything you cook touch scent it's perfect i do not what am i already garlic as well with white truffles well let me show you some can i show you reviews hundreds of reviews that are excellent no good reviews real customers that have supported us for example look at the way you're attacking my business in my life this is all i do is live this life every day you're not telling me the problems you are saying i'm delusional i'm this i'm this i'm this can we talk about what we came here to speak about oh please you told me to be honest i am always about the problems that you've had that you cannot talk to your wife and the issues that you can't take criticism before she was like that's fine i have no problem with it that's fine i think you're too far gone okay then let's end the show you think i'm too far gone there's no hope it's christmas let's go home okay i can't help people they can't help themselves and cannot ever take one ounce of criticism and if you're not willing to change i'm not going to butt heads argue scream whatever you want to say but this is not normal and it's not normal for a restaurant to go through that many staff it's not normal for a kitchen that small to have 65 items on the menu and it's not normal for the level of animosity that you've built inside this restaurant and outside you have the right to run the business the way you want to run your business i have the right to do the right thing and the right thing for me is to get out of here good luck [Music] wow that's good yeah
