everybody I've got getting we're rolling out looking for America's greatest diners drive-ins and dives in Jacksonville pancakes banana granola is phenomenal the local diner everything here is delicious - and loaded your home absolutely and hey Pittsburgh steak salad you want fries with that mmm necessarily oh yeah yeah that dog coming up right here right now on diners drive-ins and dives up next we're heading to Jacksonville because everything fresh daily to lighten things up with a salad the clue crisp lettuce then you get a crunchy salty french fry I'm here in the san marco neighborhood of Jacksonville Florida just a few miles from downtown I knew when you roll into a coastal town like Jacksonville while you're expecting to find seafood but in this town there's a lot more than that and as the name of the show goes it's diners drive-ins and dives and this is Metro diner pancakes banana granola this is phenomenal daily here we looked at each other and said this should be on guys so you wrote in and told me to come here when I walked in here the first time I just fell in love with the place sous-chef mark Diwali 2 eggs and grits pop the joint later on please the kitchen here let's run out medium it's uncool me Monica the meatloaf is unbelievable here now is meatloaf staple on the menu or step late staple okay I should get it going let's start with the carrots we're gonna this we break it down to the side that it can be hooked all the way through but not being a big intrusive chunk yeah intrusive chunk that's the term you use often yeah you know what come on down for a meatloaf here Metro no intrusive chunks so all right we're gonna blend them get those to the optimum size yeah the mushrooms mushroom is very gingerly done just mushrooms not ginger but you're doing that now you do the onions yeah we're gonna blend them all right so this is all ready to go with this nice veggie mix and this brand-new Bowl that's been here all 20 years at least I would yes yep it's carbon dated baby all right now we got some the meat trio yep ground beef pork and pork hash chip and ground turkey that's pretty good healthy with okay so you incorporate all the meats yeah ready well I like the veggie content okay so what do we got for seasonings pepper salt oysters I was gonna say there's gotta be some Worcestershire anything on the court pretty what about a binder yeah a little bit of eggs okay spread comes see it for a throne I like this yeah so you for them up the logs yep three out on a tray bake it off at 350 yep for 40 minutes bring it out let it cool look at that I got speed bump in flavortown how do you just keep picking into it right now it's hard oh you got people in front door we're gonna sell that coming go to big slices go with a bucket for a little more turn down let me loaf on up to three minutes each side this is the art of crucification you know and then let me serve it with and I said a zucchini and squash and a little French baguette just what you expect in a diner it's a big portion 50 hmm I think diners across the world have to take a lesson on this one tender juicy good exterior crust hmm but it's the crunch of fication he adding that extra layer all that little crunch on the side why do you even mess up the plate with vegetables in the bread I just would like I'd like you to float that and gravy it was really good the spices and then the gravy on top and it's very savory and very moist it melts in your mouth fill your stomach a meal of course you can get a salad if this boat stakes on it it's humongous with fries to the state everything you want is in this salad it sticks out a tradition back at Pittsburgh were Markkula we start with prime rib yeah I like one of the cells you can you know go home with all you wanted what did you happen to lunch today I was down at Metro diner at it got a salad with a big rip on it how many else but six or seven ounces yeah so light you know real real like diet sound yeah that's good look at that nice marbling choice what do you got choice why would you put anything else on your salad all right now all grown up of course to market the 50 gallon drum they're gonna season it salt pepper yeah what Jack stop the French products for the salad for the salad you'll make blue cheese dressing sour cream okay mayonnaise little Worcestershire oyster hot sauce hot sauce okay I boots these criminals to monster blue cheese the dressing is done just grab the steak cut the steak okay put some fries on seriously that many fries that goes on top of that you've heard of Jenny Craig this is your brother Jerry Frank we put blue cheese crumbles on there oh yeah why would you don't tell me you're putting fencing on the side put on the Sun men of America are uniting right now in their towns and cities and loading buses on their way to hunt the Metro diner just because they'll be able to save but it was a salad steak is mega super tender you get the cool crisp lettuce mmm the nice tangy dressing then you get a crunchy salty french fry find that every day I'm a salad that's a new definition of salad no doubt about it your mom used to make sure the heat rise you guys could even walk out of the house Pittsburgh steak salad up she is with master bi on top everything you want is in this salad it is perfect I would need a lot more salads if they okay if they came my dishes Thanks calling this a salad is like calling my easel full wheel drive lifted four door crew cab yellow monster truck of commuter car not your typical self not your this challah we're gonna make a blueberry strawberry compote yep cold corn starch slurry just tighten that up they're not quite the strawberries in last put strawberries in too early they break up strawberries go in let that cook down turn it up till don't rake it down thickens out that's gonna go on top of the holy oh you know traditional haul is normally a little flatter but I had to get my Baker to change it up a little bit take that dancing to through Saturday morning cartoons what's gonna click our bananas next year this is ridiculous yeah what are you gonna do now we're gonna dump into our egg wash which is egg cinnamon nutmeg vanilla sugar margarine martyr necessary of course we're just going to grow up all all the sides yeah toast is done hey that's nice we're talking with a blueberry strawberry compote please tell me we're gonna coat this with powdered sugar and cotton candy you gotta have a little powdered sugar seriously seriously I was joking that dude is out of control I'm gonna just kind of dive in that's more french toast and I've eaten last 10 years one bike way let me tell you about this seriously no kidding the challah has fantastic texture the cream cheese smooth works through the banana not overly sweetened but it's the acidity in the blueberries from the compote that really kind of adds that contrast to the of the sour of the dude that is worth coming here for no question yo holla the sweetness and the freshness of the blueberries and the challah bread it's just delicious how much of the Haleh can you enjoy maybe a quarter can you take the challah home oh I take the hospital if it's half a challah do you help haul I have a Howell home I help home with I can't everything here is just eggs benedict yeah with a big appetite appreciate your
