hey everybody I'm Guy Fieri and we're rolling out looking for America's greatest diners drive-ins and dives in Truckee California this place is great it's got that old town field the vintage diner the salmon do the menage where they're crossing up the classic Colby meet love meat is so tender and juicy and even the English muffins are made from scratch that completely works right here right now on diners drive-ins and dives so here I am Truckee California about 30 miles west of Reno at a very important corner because as long as I can remember if I went that way I was going to Northstar ski resort and if I went that way I was going to Valley but today I'm going this way because it's not too often we find the 1948 calm and diner car here in Cali this is Jax the tracks first image in the window it's just kind of a closet all the chrome and the bar I love sitting at the bar this is an original all the way through and through and when it came up for sale I came in here and I said this is me who East Coast transplant but Hayley Potter coming right off fixed it now you came in redid the menu read it everything it put the deal under fill' round in the kitchen wish them going down to put a spin on the classics so much like comfort food it's an upscale take winning inventions Islamic vinaigrette on top of hash browns and eggs that is fantastic the corned beef is handmade the best I've had Andy eggs benedict homemade bath cakes with homemade hollandaise and here's a new one we're gonna make our English muffins II I don't think on Triple D history let me think now we made that salt pepper let's get a little more we're all done ready to go now crab cakes crab cakes and this is gonna go on top of our English muffins that we made give me the rundown gonna bleep ray Dixon aim low low tide capers and onions nice chop on those chili fight okay so we gotta crush saltine crackers take it nice all sauce old bay smell right in one little old engine to bind it up they're gonna get them in with their hands you want to keep that texture got it that's a she's done she's gonna make a little bit into the ring told you right it looks great man chillin together pal but they bind up really tight it'll come when you're ready on the flat top on the Fecteau the better you guys guys roll inscribe clean yeah English muffin we're at there's not as many nooks and crannies in there there little diksa they're nice and chewy a little bit no better and a muffin I'm going out on the ultimate limb hollandaise and eggs just so I can have the English muffin and move them over oh yeah sorry English muffin ready to go this little toast on those okay dig it poached eggs hearts digs be gentle and I'm getting one of the best bits the hollandaise sauce very nice well look at a man you made everything you made the holidays English muffin crab cake every night this is the egg ah look at that crab cake not a lot of filling it I'm surprised even holding together that completely work okay from the guy the English muffin that's got a going on there nice chew to that a great texture cod cake not overpowered by the peppers and onions holidays nice and creamy okay I'm gonna do it just for you guys that's AG there crab cake Benny in the windows machardie air in a traditional Eggs Benedict what I'm impressed about whether you make that English muffin homemade food with a twist like mac and cheese with jalapeno and bacon is wonderful Gill encrusted fish sandwiches white and fresh and this classic eat them you're doing that with Co baby it's juicy of flavor phone has a raisin sauce on the top of it that's fantastic this is a root beer raisin sauce it's gonna go on the tripod base maitland okay Varda slice onion crushed garlic okay the root beer in the routier and the plugged up raisin sitting on that phone for 50 hours bringing up to a boil now with this thing pureed don't be finished emulsifying it run a little bit of Guinea guys to the phone paper is it ready it is ready that's tasty and now we're gonna saute our herbs a little bit of olive oil gonna put our ninja return there fresh rosemary parsley basil thyme sage garlic the mustard the salt pepper yep smells great you're never gonna do what we call that wit mixture first four whole eggs pastes half of her Hank oh I'm thankful fan 101 so that's all mixed up we're good to go now we're gonna put our baby into the mixture so without Roxy we did this before finally ya wit mix now we're gonna make two or three minutes everybody's incorporated wax paper down now we're gonna force them out not ants portions and they look I just meatloaf but Kobe beef my face meat last you're gonna make it a little bit of a football form yeah how do you she try wrap it with some applewood smoked bacon then finish it with a brush of kitchen how long will they go down for between 15 and 20 minutes hold them on the line and then when you get ready for service how are we gonna heat up a sizzle platter into the oven 20-25 min perfectly glazed up with the ketchup on their pink lovely broccolini creamy you can go of mashed potatoes Adam boy and the root beer raisin sauce here comes and we're gonna finish it off with some hands first gonna try it not any sauce on it that red glaze of the ketchup on there and cut into it it's juicy a nice little kicker from the bacon that we're raising sauce I'm right in there most people would be happy just to find a nice meat loaf but when you can make meat loaf the next level that's when you're doing a great jump Kobe meat well meat is so tender and juicy call me for even under one knot this place is great it's got that old town feel but they've upgraded the menu still crusted fish sandwich diner now it's easy you know when someone should make a show
