fare to Mickey Mickey and more Mickey discover what makes these turkey legs so tasty get in line for the secrets behind a disney buffet see how mac and cheese is tested by the experts and travel back to the Nifty 50's honey I want you to eat those green beans Plus go behind the scenes to learn the trick to making lots of food quick we'll see a pizza machine only Disney magic could invent then don't pass up the sweets there's desserts for the young and young and heart and watch as wedding cakes are made to fulfill every fantasy all this and more munchies from Walt Disney World Resort is coming up on unwrapped hi folks how are you nice to see you thank you very much hi welcome to unwrapped I'm Marc summers here at Walt Disney World in Orlando Florida today we're going to feast our eyes on the smorgasbord of food found right here from sweet treats to fine dining and give you an insider's look at some savory secrets so let's jump right into here how they're set up to feed the masses at the four corners right here at Disney the rights are grilling and the parades are grand so the food well it's got to measure up all these rides make you hungry and there are plenty of places to appease your appetite anything you could possibly imagine they have here this is not your average amusement park fare yes they have burgers and fries and cotton candy but they also serve fancy filets and fresh fish there are 500 places to buy food and 350 chefs from all over the world the Walt Disney World Resort in Orlando spans 47 square miles and it's made up of four theme parks there's the Magic Kingdom Disney's Animal Kingdom disney-mgm Studios and Epcot you'll also find two water parks and at least 30 resort hotels throughout the parks and resorts you'll find something to please every palate and pocketbook there's quick service fare we're trying to give a table service environment quickly finger food I think it's funny to watch people walking through the park gnawing on a turkey leg and authentic international cuisine Epcot features representatives from nations all over the globe visit each country and sample foreign favorites from five-star to penny candy check out worldly treats like chocolate from England or seafood snacks from Japan shucks flavor chips taking these home to mom and to take it all in you can head to a room with a view at the California grill watch your chef's cook a fancy feast while towering over the Magic Kingdom it's really really breathtaking in just one year Disney dishes up more than a million pounds of watermelon three million pizzas and five million servings up there are more than six thousand things to choose from including plenty of treats especially for types I look at the kids as my my guest of tomorrow so you know if they have a good time here they go back and tell mama Kapolei let's go back to what this new autumn watching the parade eating ice cream like your kid again and of course keep your eyes open for years part of the fun here at Disney World is that you can find Mickey just about everywhere even in the food like here at the Magic Kingdom's Main Street confectionary this is filled with character candy and cookies including all kinds of Mickey shaped treats we have the Mickey cookie how about a Mickey pretzel that's candy covered pretty cool and if you like rice krispies treats it doesn't get much better than this how about the old Mickey Roni and cheese and this is one of my favorites it's Mickey with a lollipop any waves at the same time and one of the most familiar mousey morsels here at the park Mickey Mouse ice cream so let's take a closer look at those popular pops I love the chocolate it's a really dark chocolate it's so good micki ice cream bars are one of the signature snacks that people come to Disney to devour I would like to make them freemium please although we have to have this bar we have to have it it's like they're all excited and they just buy them by the handful very good the mouse's roots began in the 1980s haagen-dazs ice cream and chocolate dove bars were all the rage so Disney combined those ideas to create an adult-oriented premium ice cream bar of their own and as technology changed so did the shape so now the chocolate-covered vanilla treat has grown up flavor with a kid-friendly design and with nearly 3 million Mickey ice cream sold every year this is Disney's best selling frozen novelty but keeping them frozen in the hot Florida Sun is a challenge the trick to keeping their cool is specially-designed ice cream carts that are actually portable electric freezers well we have a plug behind the Rose Garden Bank part of the Disney magic we want that Mickey MTV n bar and so once you get one what is the best way to make a mouse a meal ears ears first here's first of course besides the regular Mickey bar there is also a Mickey Ice Cream Sandwich some folks have a hard time choosing which Mouse too much do you taste those the Mickey Bart was made for sharing after all two ears means it's twice as nice to bite and you want to know a secret to keeping a steady supply of these snacks the trick is this smaller ice-cream carts are designed to come around and stop the bigger cards that way you'll always be able to find mice on ice just ahead in this hour find out how a day at Disney begins watch's morning is made extra sweet and meet up with the gang for a breakfast buffet plus later feast your eyes on wedding cakes being made Disney style it's more with Mickey so stick around welcome back to unwrapped where we're taking a tour of Walt Disney World treats right now I'm standing outside the bakery at Disney's boardwalk Resort where visitors load up on breakfast pastries every morning but now we're going to take you behind the scenes to the pre-dawn hours for a look at how a day starts a Disney while most of the world is still sleeping sweet smells begin drifting from the boardwalk bakery every day that Baker's on boardwalk turnout thousands of donuts Mickey muffins and other Disney 5 treats their day starts the night before making the donuts each batch begins by mixing the usual flour yeast and sugar with one very surprising ingredient ice cubes yeah you have to keep it cold especially in the summertime in Florida it gets pretty warm here so we try to keep it as cold as as possible it takes experienced hands to know when the mix is right the dough is ready it's supposed to be nice and elastic and it should not be sticky anymore once the dough has reached the right consistency its measured in the loaves and allowed to rest next its rolled flat and cut into donut shapes with a clever twist two donuts are braided into one then fried golden-brown a dunk in the glaze makes the sweet enough to eat besides breakfast bites savory breads and delicate lunch desserts are also made on the boardwalk there are plump tarts meringue baskets filled with fruit and fancy finger foods some of these intricate designer desserts take an artist's touch every pastry chef has to be an artist to a certain point otherwise it would not be possible to do all those decorations and designs we do clever techniques are used to create many of these cakes okay what we have is a frozen plate and we have tempered white chocolate couverture and we just put them on the frozen plate and it gets instantly hot and it's ready to mold it around the cheesecakes and watch how Cinderella's castle is rub down the plates it's all part of the Disney Magic in park goers eat it up pastries aren't the only breakfast offerings at Walt Disney World how about waking up with this guy how are you today all right goose all right way to go I'm at Disney's Contemporary Resort one of the original hotels and here at chef Mickey's you can rub elbows with celebrities right alongside a steady stream of food we're gonna choose from so right now I'm gonna load up with Goofy here while you check out what it takes to build a buffet anything you like in particular doesn't make anything he likes everything chef Nicky's is the place for a mousey munchies and sweet stuff you won't see anywhere else every day more than 2,000 people come here to pile their plates on but putting on a breakfast spread this big isn't easy there's only one way to make it happen but a lot of hope from Mickey in the game that's right dine on Goofy's veggie lasagna or tails hashbrowns and check out an extraordinary treat this will be a 16 egg omelet will go through approximately 4,000 eggs a day at chef Mickey's this feast is non-stop fun food and fantasy rolled into one I don't know I guess it's just the atmosphere of Mickey Mouse being around the Mickey Mouse pancakes makes it a little bit more special yes Mickey's mirror-image pancakes are very popular and he's got his own waffles too the secret is in this special waffle iron and believe it or not making these Mickey treats is a full-time job we go through about 16 1700 waffles a day and we make about 1,500 pancakes a day and it gets even sweeter that's great all right dress them up with candy colorful sprinkles and whipped cream they need to share for the day to keep on going kids go crazy for all the stuff that's usually off-limits at home you don't really it's nice to have breakfast every now and this pie has pizzazz you start with our pizza she'll take our peanut butter just spread it on there this is chips peanut butter and jelly pizza with marshmallows and chocolate chips it's like having s'mores with a little bit of peanut butter whether you're eating pizza for breakfast or nibbling on Mouse ears you won't go hungry when Chef Mickey's in the kitchen the buffet here at chef Mickey's is also open for dinner where they typically serve upwards of 1,200 guests per night I don't know how you do it and the coup de Gras well dessert of course and right now I'm going to make a cupcake with the help of an expert yeah I know you're an expert so what I'm gonna do is take a vanilla cupcake but they do have chocolate I'm gonna use chocolate icing and just twist it in there not bad but the fun part are the colorful candies and look at that huh you want some all right we'll talk about it here are some other kid inspired specialties I promise I'll share edible aliens and rice krispies kites they're the latest in do-it-yourself desserts these sweets come with some assembly required they can paint on the cookies they can mold modeling chocolate or marzipan rolled fondant peanut butter play-doh and they just love it kids just love creating and helping with their desserts these after-dinner delights are delivered in pieces and little pastry Picasso's do the rest we have a flying saucer and that's just a chocolate-chip cookie with some chocolate frosting on it and a doughnut hole with marshmallows for the ears and then the kids will get the different candies to decorate it with youngsters can bag a butterfly or cook up a critter see how it's really simple that is it's just making ground balls and just assembling them here we have paint your own cookie what we've got are the different toppings to use as paint and they're made with powdered sugar and water so it's really really very easy it's one of the few times mom and dad will actually give you permission to play with your food coming up it's more Disney edibles learn the secret to making makes these turkey legs so darn tasty well let's find out listen up Harlequin today here at Disney you'll hear lots of hungry people talking turkey approaches turkey legs these dreamy drumsticks are one of Disney's signature snaps turkey legs they serve up more than a million and a half of them every year it's you it's great you sure this is trick doing well some people think that they're fake and some people think that their EMU legs or ostrich legs or things like that but they're very they're very real turkey legs how big are they well they come from upper Midwestern turkeys that range from 40 to 50 pounds that means these legs weigh in at about a pound and a half kind of like a dumbbell it's definitely big enough to share great flavor and the secret to that fabulous flavor they inject a saltwater cure into the legs muscle tissue to ensure absorption then slow cook the drumsticks in a smoker for about six hours the best part of eating a turkey leg is the juicy part of it and the salty taste of it that's what everybody really loves they're also fun to eat in a perfectly primitive sort of way fairway is just a bite right into it just like the little Flintstones doing like this they are very addictive people come back here after your wanting our turkey legs I reason I come to Disney World to get turkey legs this is one meaty meal to remember they love to get their pictures taken while they're eating the leg I think because nobody believes that big art legs are and how good they are best food here turkey legs are only one of dozens of different foods to choose from from all over the park and if you hit up a qsl that food comes fast what's a qsl well in Disney speak that stands for quick service location where you can get anything from pizza to barbecue to even salmon lickety-split and right now I'm a Disney's Animal Kingdom to find out the secrets to their speed riding the rides at Disney World is exciting but you've got to eat to keep your energy up some people just want to grab a cone on the run or fries on the fly but others want something a little more substantial when everybody comes to the parts they think hotdogs hamburgers popcorn but there are people who want more and we need to be there for those people who want what I call real food that's where Disney's quick-service locations or us ELLs come in they don't just serve fast food but rather good food fast we didn't expected to look this good Disney's Animal Kingdom has some popular quick service spots go on a pizza fari where the secret is some tasty technology Briana thing called a piece of matted back there which is dog a unique machine and that from it can produce about 1,200 pieces per hour yes the automatic Pizza Matic makes a perfect pizza pie the crust is placed on the conveyor and a computer does the rest then we have to spec the Machine out drop maybe 2 ounces of salt to reoffer the cheese four or five six ounces of pepperoni okay whichever the recipe calls for this machine was designed for Disney the chefs here spent 18 months creating a custom crust and the sauce is special too from start to finish it only takes four and a half minutes that's what quick service is all about if you're more in the mood for say Pina chicken or a homemade hummus and veggies make your way to the Tusker house the mashed potatoes and gravy and fresh vegetables you know you don't get that a fast food and this restaurant quality meal comes in near minutes we try to raise the bar on quick service how about salmon and spiced rice marinated pan-seared salmon with an African sauce topped with a tomato relish it is just a beautiful entree and check out this European rotisserie the secret is in those little white ropes behind the chicken it's a fiber that really doesn't burn it just radiates Heat and there's another tasty trick and we actually put spices in the little tray under the chicken to give it more flavor so the aroma comes up and hits the outside of the chicken to really makes it a little unique it beats hamburgers not too far away is a real barbecue joint called the flame tree there that's where we do our yup that the service is super speedy even though the ribs are smoked slowly 1,200 pounds at a time they are two types of wood of white oak and hickory smoked wood that we use in here the spicy rub is a secret recipe although the chef will give it to you if you ask you can't wish for anything better at Disneyworld you don't have to go hungry just because you're in a hurry okay by now you probably noticed that even the restaurants here fit certain themes and check this one out it's sci-fi dine in theater another place where the Disney decorating staff has definitely worked their magic I mean I can sit this cool car watch B flicks and enjoy my burger and this drive-in even comes complete with these great little guys they're glow-in-the-dark ice cubes you just smack them on and smack them off and here's a little more Disney lingo for you the people who put all this together are officially called Imagineers but how do they do it well stick around to find out because we're taking you to a place that's just like home to learn how they make a restaurant retro coming up next welcome back to unwrapped do you ever feel like you'd like to go back to the good old days well you can almost here at Walt Disney World it's their job to make fantasy a reality and their restaurants are no exception right now I'm at disney-mgm studios 50s primetime Cafe where you'll travel back in time to eat up some nostalgia it's a slice of Americana served up on a plate of sitcoms the primetime Cafe combines the best of classic American cuisine cook you just like mom's but better and your favorite 50s TV shows grew up on you sons have you had anything left on your plate that you wanna be everything about this place takes you back to the fabulous 50s from the hula hoop to the meatloaf and honey I want you to eat those green beans and the familiar knickknacks decorating every square inch no detail is overlooked it's all part of an experience an experience that really gives you that feeling that yes I'm there I'm in the 50s Disney's Imagineers scour antique shops and even the internet to find authentic collectibles to create a 1950s home what we do is we look for something that in fact is the right thing we certainly can put the reproductions in there but we don't really want to do that there's the giant fork and spoon the vintage blender and of course countless cookie jars even if you don't remember America's happy days you'll recognize the decor a real fun thing based on the pictures I've seen in my parents house we got a cover-up you know ha but the most colorful part of the primetime experience is the family of servers what do you need now you're always asking for something huh there's the nagging mob the matter of posture my fonder and the annoying brother give me an honey bunny seated in the tree okay is this ing wise a piece of work yeah this is the third edition you'll get to catch up on the family photos as you're done with these albums we've got plenty more for you to look at before chowing down on some serious home cooking three most popular of course are the the meatloaf the potterson the fried chicken we do hundreds of those a day the menu is anything but Nouveau most of it is inspired by actual Betty Crocker cookbooks comfort food is something we really don't mess around with a lot is it's comfort food exactly for that reason they're comfortable that they want to try it you'll even find the dessert menu on an old viewmaster no I think the banana split still went out on this one whatever you choose yet better clean your plate from the family to the food no matter your age while you're here you are a kid again whole magical Disney thing you know you're kind of lost for a day you know anywhere else someone told you to green beans you might get all upset here it's really fun and you enjoyed it a mixable experience not only can you take a trip to the past you can also travel and eat around the world without ever leaving the park I'm here at Epcot with some escargot where international dining is a specialty but how do they make it all so authentic there's a method to how things are mapped out so let's go explore Epcot World Showcase features 11 countries from around the globe in the time it takes you to walk around the park you can get a taste of just about every continent welcome until Nadia or Tyler Matt whatever becomes Muslim when you let out dongho hi welcome to Canada you're each way to the country and you can even speak the language of the country if you can I mean it's it's definitely what differentiates Epcot with anything else in the world native ambassadors help make the Epcot experience authentic everyone you encounter here is actually working on a one-year visa from their homeland plus a we have teams going to each country's two occurred in each country you'll find everything from fast food to fancy fare let's begin our European tour in France at leh chef de France the owners Hall Bocuse Gaston lenรดtre and Rosie roj are some of the most well known French chefs in the world the classic menu features everything French but some recipes had to be modified for the American palate we try to make dishes amiss strong and traditional Japanese grill show from Asia we travel to Africa and the Kingdom of Morocco restaurant Marrakech offers an exotic backdrop for an exciting meal the Moroccan King sent native craftsmen to Epcot to ensure an authentic Moroccan atmosphere and in the kitchen the King's former chef keeps things cooking oh this is good it's really good across the African plains at Disney's Animal Kingdom everybody tends to think that our spoon our food is spicy but really we are not cooking spicy food we are cooking aromatic and fragrant foods or spiced foods from flatbread to tuna and fine african wines every bite is packed with flavor the connotation of African cooking I thought you know eating crickets but this is fabulous with so many choices you could travel the world and leave your passport at home coming up as our special Disney unwrapped continues to cheesy or not to cheesy that's the question join in on an expert taste test to decide which mac and cheese recipe will become official Plus meet some junior chefs to see what's cooking that's just ahead hi welcome back I'm Marc summers giving you the dish on the delicacies of Walt Disney World a challenge that faces a resort like this is how to satisfy so many different tastes there are thousands of people in the parks at any one time with palates from all walks of life all over the world so menus are constantly being checked researched and modified to keep up with demand right now we're at Disney's Wilderness Lodge to catch up with an expert taste test but you may be surprised at who those experts are what Musketeers love Mickey Rhoni and cheese in fact Disney World dishes up more than half a million pounds of this popular pasta every year this is the stuff that actually drive kids crazy but the Disney chefs couldn't agree on a recipe so they decided to consult the experts tots in tokes you got a lot of chefs today you're taking the title away from me these little chefs have a big job to do their taste testing different versions of mac and cheese so what I'm going to do is bring out some samples for you guys to try the kids will try samples a B and C the one they like best will become the official mac and cheese of Disney World sure yeah we're sure every chef is gonna always say my macaroni cheese is better than your macaroni cheese we're not the best judges at that so what we did we decided okay that's what the kids make it's a decision on this you're gonna put down one two or three the kids score each sample on taste texture and color it looks um yellow but this one looks kind of orange and I like that look is really creamy and very cheesy these tiny tasters are learning that mac and cheese isn't as simple as it seems some people will use like a white chair some will use a sharp cheddar some will use whole milk some will use butter someone may use margarine and when it comes to food kids are a lot more sophisticated than they used to be times have change it used to be that our kiss it's like you make something you put it in front them okay I can live with that but then again now I kiss like I don't know Disney is depending on these kids and they're taking their job seriously there's a lot of macaroni and cheese that you had to pick through and you they all almost taste the same in a tree working to pick which one's the best okay gasps but when it's time to tally the votes there is a clear favorite okay I'll show of hands who liked the first macaroni cheese yeah the hands-down winner is sample a it's a perfectly cheesy blend of whole milk cream American cheese two kinds of cheddar and a touch of butter it was just a kid's palate I mean because as I say we as chefs we would have probably chose something different and the kids were the one that made them I made our minds up and told us what we were serving today feels good to be a chef Helly what do we like tasting isn't the only way kids get into the culinary act here at Disney's Grand Floridian Resort they can also have a grand adventure in cooking who likes bananas who likes chocolate something is always cooking in Disney's Mouseketeer Clubhouse okay we're gonna make chocolate banana upside-down cake does that sound good the junior chef program at Disney's Grand Floridian Resort and Spa lets aspiring chefs fine-tune their talent or treat making do we have butter right there today we have a lot of three and four-year-olds coming in so we're gonna do a slight mixing some cutting with some plastic knives and then really a lot of just putting them up in the toppings into the pans okay now I'll take let's give him a chance to mix that these Kitty cooks will cover all the basics the biggest thing we learned is washing your hands they will wash their hands like a hundred times today till they're sick of it there's no experience necessary but many of these kids already know their way around the kitchen more sugar everyone now a lot of them do talk try stuff at home with mom and dad a lot of them come in and they'll tell me I watched Emeril and I watched Julia house and I can do this and they're telling that I can there i watch how to make a consomme I laugh and go really we're gonna make cookies today and I mix that up to turn chocolate okay to make this decadent chocolate banana upside-down cake kids layer butter and brown sugar chocolate cake batter and of course bananas and then when we turn them upside down this is gonna be the top these little chefs can make a mess or a masterpiece it's up to them however they make it is there it's their creation they want to put the banana in than the top and the batter however comes out as long as they're happy with it that's all that matters we can feel the hot air kind of different from your oven at home isn't it called a convection oven right there there you go while the goodies bake the little chefs down they're handmade aprons and cats never to get a partner then it's time to parade proudly through the hotel lobby passing out warm cakes to Disney World employees and guests they walk through this nice five-star Lobby screaming atop their lungs so they are the stars of the day thank you very much great good job you know these bite-size morsels are fun to make but check out these mini masterpieces they are amazing and they're great to eat as well as look at there are tiny replicas of wedding cakes so each guest gets a whole cake rather than just a piece this is the work of the five pastry chefs who keep busy at a place where every season is wedding season and you're not going to believe some of the serving as ring bearer to a towering castle top cake a Disney wedding is a true fairy tale brought to life it is my pleasure to pronounce that they are husband and wife Ryan and Beth shuck dreamed of getting hitched at Walt Disney World Resort and we're big Disney family so we're here all the time congratulations the dance floor is short so it was only appropriate that they celebrate their marriage with Mickey Mouse rather than many mini cakes the bride and groom opted for a traditional five-tier cake a Disney wedding can be designed to fit almost any budget from simple to spectacular and the talented pastry chefs at Disney make some of the most elaborate wedding cakes in the world most expensive cake was about $15,000 we do anything the guests asked us to do from fruitcakes coated with Jam well that's it's really a traditional English wedding cake to lavish cakes covered with gold making these masterpieces takes days of preparation before the delicate decorations can be added bakers make up massive bowls of batter and bake cakes and just about every size from giant base layers to tiny toppers once they've cooled the Disney chefs slice off the top and bottom of each cake to create a flat surface for decorating the cakes are then cut into layers and dampened with just a little sugar water to help them stay moist flavorful fillings from chocolate mousse to fresh strawberries are added then the layers are stacked frosted in buttercream and covered in fondant fondant is simple sugar dough that gives the cakes a satiny smooth appearance but getting it on is harder than it looks stop you work your way down by turning that they wrote constantly enough on here stretch it to that way once the cake is completely covered it's time for a trim this is better an artist that paints with chocolate Jean Erskine transforms wedding cakes into works of art I'm actually painting right on the cake itself Jean uses melted cocoa butter mixed with food coloring to
