hey everybody I'm Guy Fieri and we're rolling out looking for America's greatest diners drive-ins and dives this trip came in expecting bar food guys worth a drive salmon BLT halfway between Milwaukee and Chicago Howard owner and 80 year old joint all the food here is delicious we're spike in the seafood whiskey Stram dinner it's car door and even the olive oil homemade bring your own olive oil from your own ranch in Greece that's right [Music] on route 41 right between Milwaukee and Chicago is a little joint well maybe wouldn't call it a joint called a dive well I wouldn't call it a diamonds let's just call it a shanty all right it's one of those examples of don't judge a book by its cover because what's going on inside is a Greek family keeping a tradition alive welcome to the Sham point very much as chanting but we love it got a crab cake dinner extra veggies foods great today people are great there's something about it you just feel at home to wait to meet recall iana's felt when he first walked in here three years ago so he and his dad you know everything is drug bought the 80 year old joint I grew up in the restaurant business my dad right on now the two of them are making their mark on the shanty as far as the building is concerned it hasn't changed at all but the men use completely different muscles extra oranges everything on that menu that's new the customers have picked you built a whole menu off of what your customers wanted yeah alligator tail table 14 the food kept go like this and now it's at a plus level they've added a lot of seafood from crab cakes - wow I and this fan favorite whiskey shrimp dinner whiskey shrimp yes our signature dish here most popular item that sauce is so creamy and just so smooth we're making tarragon sauce for a whiskey strip we're gonna start off with some sweet cream butter so you can let that melt then what are you gonna add minced onion fresh minced garlic stir that up whole lemon squeeze two pitchers heavy whipping cream in case everybody at home measures by pitcher three squirts of yellow mustard pictures in squirts and we're gonna add fresh tarragon leaves they let this reduce for how long about a half an hour let everything soak into each other so we got our sauce made we're making the whiskey shrimp all right start off with a couple slices of butter interesting terminology for things pitcher squirt and slices hey it's all as long as it tastes good right detail the shrimp this is a jumbo white gulf shrimp from Texas next we're gonna add a little bit of salt pepper garlic and oregano let this saute to about almost maybe 80% done so while that's working chop some fresh French bread a little bit of olive oil we'll toast that up now the fun part we're gonna add some Jack Daniels whiskey it's gonna flare pretty good I like to call this Greek lightning [Music] cool tarragon sauce add our toast points pull our shrimp out and we're ready fresh tarragon and there you go that's the sauce there's nothing that shrimp like better than garlic and butter some tarragon I'll tell you the shrimp it dynamite shrimp usually a good quality product like that I mean that's great extra hmm thank you glad you liked it sauce is good it's good shrimp I like the sauce on the bread gets also good and you got bread thief is just a tent vegetables vegetables flavor is just these are good the vegetables are fresh the olive oil actually comes from their farm yeah you bring your own olive oil from your own olive oil ranch in Greece that's right we do you think that's overdoing oh no there's a delicious delicious and for everything they've added to the menu mushroom swiss burger they haven't forgotten what made the shanty famous porterhouse medium Shanti's thick here it's awesome but they're still adding their own twist you heard her conch boy a bacon-wrapped filet with fresh conch and calm CEO nch yes see shall you hear the ocean right and that's big here in the Milwaukee Chicago area so it's kind of like a little fusion seafood secure version of surfing yes freshly trimmed top 6% of choice blaming young 10 ounce filet today nice and thick we're gonna wrap it in bacon throw a little pic in there we're gonna have some Cajun spice seasoning salt cayenne pepper granulated garlic white pepper black pepper paprika and Greek oregano that my dad brings over it must be one full suitcase when that guy comes from Greece it is okay so this is all ready to go yes it is yeah we're gonna grill this we're gonna the pan saute that's done a char broiler char-broil okay so we are gonna grill it that's the hot spot that is the hot spot okay all right now we're gonna slice some fresh they boil time what do you boil it a little bit of water buttermilk and a little bit of sugar all right so now this goes to a saute pan with the veggies we start cooking the sauce yep let's start off with some olive oil and that's the olive oil that comes from your dad's ranch in Sparta grease this one is two weeks two weeks old yes I heard you start off with some red onion diced tomato and fresh cilantro you let this saute for a bitter the meat and some broth that we use to boil the Khans to fortify the sauce a little bit of its own flavor our Cajun seasoning that I'll simmer down so we're done here with the car we'd almost call that a hot salsa that's gonna go on top of the flight yep add some sauteed mushrooms okay we're gonna throw this in the oven about 30 seconds let it all come together that's it necessarily anticipating the middle like that when I pulled up to the scampi medium-rare on the steak steaks is about perfect it's nice and tender your marinating process and cooking process really makes that tendon awesome that is a beautiful-looking for widening cool the sauce is very light very flavorful it melts in your mouth good reading rare steak I mean everything you watch you learn damn it that's right what the Kelly Anna's family has done for this place in the last three years look around how we're doing rec we come here you know everybody seriously it's like home that's the whole deal here the family let's call the whole town sauce whisky shrimp they do water people think this is their restaurant I give this place a 10 thanks to all the people that come here because of that [Applause]
