thanks ray shadow legend for sponsoring this video welcome back to suvita everything guys you saw the thumbnail today chicken biryani check it out and everything starts off with the chicken for today i chose chicken thighs but if you like breast or any other part of the chicken it should work just fine at the same time if you want to save money it's always best to butcher a whole chicken but since i had chicken thighs available these will work great the first thing i like to do is to remove the additional skin that is just flapping out like this i mean there's really no purpose for it these are going to make things a lot hotter so i just chose to take them out and if there's too much external fat those gotta go out as well as you can see now they are perfect ratio of meat and skin and don't even think about throwing the skin away they are great for many other things including making stalks and deep frying this and eating as a chicken sandwich it is awesome so do not let it go to waste now the next thing to do is to throw it into an incredible marinade and let me tell you something this one is easy to make and here's how as always exact amount and ingredients always in the description down below for you i started with a good amount of yogurt followed by ginger paste garlic paste coriander turmeric cashew chili powder and salt now others left to do is to mix it well and your marinade is ready that is as easy as it gets by the time you're done mixing this is exactly what you're looking for now i highly recommend adding one chicken at a time this will ensure that every single piece of that chicken is perfectly coated with the marinade so take your time and just add one at a time the last thing you want is just to throw the marinade right on top that just does not work as well but now that my chickens are coated with the marinade the only thing left to do is to put it on my refrigerator and let them marinate overnight the very next day i took them out bagged them up and they were ready for the water bath that is perfect because it allows me time to go ahead and prepare the rest of the stuff and the first thing we're gonna do is this incredible gravy and everything starts off with onions i'm using white sweet onions and as you can see they are thinly chopped that will allow me to create maximum caramelization talking about that i got a skillet and threw in a good amount of clarified butter let that melt and go ahead and throw in all of the onions now there's a huge secret on these onions we want to cook them nice and slow to make sure that we get a very hard and pronounced caramelization this takes time and you must have some patience let it fry up under medium low heat occasionally you want to deglaze the pan with a little bit of water and as you do so make sure you take all of that goodness out from the pan as you keep cooking it your onions are gonna start getting a dark deep color just like this that my friends is flavor and it is exactly what you're looking for but we want to go even farther and get them a little bit more brown continue cooking and deglazing the pan as necessary because once you are done your onions should look like this that right there is the most flavorful thing you will ever have now the only thing left to do is to reserve all of that clarified butter and to do that i just like to tilt the pen and separate it from the onions you want to save this butter because let me tell you something it tastes amazing but now moving on to our gravy as always exact amount of ingredients always in the description down below for you to deglaze the pan i went ahead and threw in a good amount of tomatoes if you like your chicken biryani spicy i recommend adding a little bit of chili just make sure you cut them nice and fine just like this so into the pan i threw in my chilies followed by mint ginger paste garlic paste ground masala a good amount of salt and freshly ground black pepper now you want to mix this well and cook it under medium high heat keep stirring so you can break down the tomatoes and it can become a nice gravy just like this once it's simmering down like this it's time to throw back in our onions make sure to mix everything well so everything blends nicely together once i was done this is the consistency i was left with that is exactly what i was looking for but now that our gravy is ready now it's time to jump into the next stain and that will be saffron milk by the name it's easy to know exactly what it is into a saucepan i threw in a little bit of milk and warmed it up then i threw in a good pinch of saffron and believe me you do not need much to make an incredible saffron milk just a little bit goes a long way the longer you cook the saffron the stronger it will be you are looking for a nice yellow color just like this once you are happy with the color the only thing i have to do is to go ahead and strain it because by that time your saffron milk is done now this is not gonna be chicken biryani without rice and i'm gonna cook it indian style this is the very first time i'm cooking rice like this and here's how i did it into a boiling pan i threw in all of the spices then i threw in long rain basmati rice followed by of course a good pinch of salt that the boiling water does its thing until the rice is fully cooked how do i know when was fully cooked i just got a little piece and tried it then the next thing to do is absolutely horrifying to me because i know uncle roger is not going to be happy and that is to use the calendar to strain the rice but hey let me tell you something it actually works i was quite surprised the rice is fully cooked it is not watery and it actually turned out okay so like i always say do not knock something out until you actually try it but now the only thing left to do is to cook our chicken and for that i'm gonna throw it in the water bath at 167 degrees fahrenheit for a total of two hours this should cook this chicken to perfection and i cannot wait to find out how my chicken biryani is gonna taste [Music] when you put all of those ingredients together on that gravy that i just made if you could only smell how wonderful that thing smells it smells like heaven already and we're not even done with the dish yet now i'll tell you one thing the rice with the colander i'm gonna say it again i hope that uncle roger does not see that video i mean this video right here because he probably gonna look at that calendar go like what are you doing you guys already know what i'm talking about i've never cooked rice like that as you guys already know just please do not send it to encourage all right because it's going to roast me now here's the deal i got everything ready the chicken is ready as you know i cooked it at 167 degrees fahrenheit for a total of two hours that shall make it nice and tender but at the same time keeping it juicy we are hungry it is ready and it's time to take it out let's do it wanted to taste this on camera and let you guys know what does it taste like i'll tell you one thing it has a lot of ingredients a crazy amount of ingredients okay and i tried it i know right and i try to be as authentic as i could be i hope i did its justice because this is the most popular chicken dish in india cheers everybody wow there's a huge amount of flavor flavor on top of flavor on top of flavor and then texture on top and we're just eating the rice oh my god wow this it's like a very strong flavored dish but at the same time very well balanced i understand now why it's the most popular dish in india it is absolutely amazing the smell it's very very um floral it's like a floral smell i think it's because of all the herbs obviously the saffron as well the saffron is really strong over here but if you taste saffron it doesn't really the saffron doesn't taste strong right so it's a very like fulfilling flavor let's wow i think it's always i'm telling you right now it fills up your mouth with flavor it is but it's very light blowing my mind when you take a bite you will go like what is this yes there's too many mixes of flavors combined together it is absolutely delicious okay let's try the chicken home all by itself cheers everybody wow so tender so juicy so perfectly cooked it's perfectly clam shaking perfectly seasoned it is amazing there's no need for salt i was worried that i was going to be needing a little bit of extra salt no there's no there's so much flavor that you don't need salt wow sometimes you could cook a dish and you go like damn you know what i mean this is one of those damn it it's this is good this is good everybody i promise you this is amazing i don't know if i did everything right you know as my indian friends do please put
