thank you raid shadow legends for sponsoring this video welcome back to sweden everything guys today i'm making beef random the traditional version and also the sous vide version so that we can find out which one is best check it out and of course to cook beef friend and the first thing we need is beef and for today i chose to use chuck the wonderful thing about beef run down is that you do not need to use an expensive cut of meat because we're actually going to be cooking it for quite some time and if you don't have chalk available you can actually use any one you like just avoid using any premium meat like rebuy or new york strip and the first thing we need to do is to make a curry paste and this is what brings an amazing flavor to the beef rendang and to make it it's actually easy and here's how i started by using dry guajiro chilies now you can't use any other chilies you like but i think this one works perfectly if you want it more spicy you can actually leave the seeds if you want it less spicy like i do it's better to take them out as you can see once i was done chopping them i was able to separate them perfectly i'm going to be using a pastel and mortar for this but if you don't have one you can use a blender as well so in i threw in my guajiro chilies followed by a star anise and one stick of cinnamon pound that well into everything becomes a powder just like this that is the beginning of our curry mix to finish it off i threw in a little bit of cardamom and mix it well and our dry mix is ready now into a food processor i threw in a little bit of lemongrass paste if you don't have the paste you can always use fresh followed by a little bit of ginger paste a good amount of garlic followed by shallots and of course all of the spices we just ground up now blend it on high on your food processor and this is what you're left with the next thing to do is something that is called carrot sink and it's super easy to make let me show you i started by toasting a little bit of coconut make sure to toast them until you get a nice brown color just like this and of course avoid trying to burn them but you definitely want a nice deep color as you can see by the time i was done this is what they look like now the next thing to do is to throw them into the pastel motor and pound them until they become a paste because by the time you're done they should look just like this and that is what we're going to be using to finish off our beef run then talking about that the only thing left to do now is to put it all together so to make the traditional version i first started by throwing in our mix keep it under medium heat and let it cook then i threw in a little bit of coconut milk remember exact amount and ingredients always in the description down below for you as it was cooking at the same time i was also deglazing the pan you don't want to let anything burn as you can see by the end i was left with a nice thick paste just like this now the next thing to add is a little bit of concentrated tamarind paste mix everything well and combine all of those ingredients together as the next thing we need to add is our beef as you do so make sure you coat all of that beef with that wonderful paste then you want to throw in a little bit more of coconut milk and let it cook under low heat this is where the magic is going to happen as it slow cook and reduces the flavor will intensify by a thousand usually this will take anywhere between two hours to three hours just make sure you keep it under really low heat you want to cover it up and occasionally stir it so that it does not burn because once you are done you are left with something like this as you can see it's reduced to almost nothing now the only thing left to do is to check it for seasoning and adjust with salt make sure to mix it well because by the time you're done with this your beef run done is done that my friends is my take on traditional beef randan and i'll tell you one thing even though it does not look like much the flavor is phenomenal there's a reason why this dish was voted the number one dish in the world because the taste is absolutely incredible but now that you've seen the traditional version it's time for us to make the sous vide version and that is actually easier and hopefully it will be as good or maybe even better than the traditional version and here's how to do it i started with the spice mix followed by the tamarind paste the roasted coconut mix and of course a little bit of coconut milk mix it well and let everything reduce into a paste like the previous one once i was done this is exactly what you're looking for a nice concentrated thick paste now before adding this to the bag you definitely want to let it cool down to a room temperature because the next thing to do is to throw everything into the bag i started with our beef followed by the paste we just made and as you can see it is room temperature now you want to make sure to mix everything well to ensure everything is coated because now all there's left to do is to add a little bit of salt vacuum seal it and it's ready for the water bath talking about that i'll be cooking at 145 degrees fahrenheit for 24 hours and i really cannot wait to taste how the sufi version is gonna taste i got my beautiful beef run done ready it was cooked at 145 degrees fahrenheit for 24 hours everybody the concentration of all those flavors should really have infused into the beef we are hungry it's ready and it's time to take it out let's do it now here's a wonderful thing about cooking beef random sous-vide we have two options we can go ahead open up the bag and reduce the juices a little bit or we can actually freeze it put it in the freezer and just take it out and eat it whenever we want to so that is the beauty of making it sous-vide at the same time i don't really know if it's going to be better than the traditional version or not because as you're cooking and you're caramelizing everything reducing the flavors that produces a lot of mainline reaction to the beef in sous vide you really don't do it that way but there's only one way to find out which way is make but you think so it's just not spicy it's not no it's not spicy at all i didn't make it spicy that is wonderful but i will be honest with you i could eat that yeah i can eat that every single day but most importantly it is extremely extremely tender the beef yeah because i keep i think i cooked it for such a long time as everything was reduced yeah it's just breaking apart it's not the same it's tender like in in the sense of like let's say it's it's fully cooked yeah i guess well done very very fall apart but it's it's well done but it's tender still you get me and i'm not used to being at so reduced because everything the curry there's like no it's no wetness you know what i mean it's not i'm not saying that it's dry it's just like it's it's um herby how do you describe that in your mouth it's more grainy grainy yes right it's grainy has a grainy because but in a good way no no no no don't get us wrong everybody tastes fantastic that is good it just hit me like very i never had anything like this before everybody i'll tell you right now i never had anything like this kind of taste especially with beef i'll tell you one thing with the rice let me see this is amazing it's really good it is amazing and if you nev and you you feel a little bit of coconut like roasted coconut that is phenomenal you put it on the outside mm-hmm that's probably why it's like kind of flaky yeah yeah yeah let's try that one since that one's like moist this one is juicing yeah down you could wow i kind of want to try that one just because this one's really tasty but this one is moist if this is the google version over here we're making it wet and drip like that come on look at this i will say come on this one still very tender i broke it with my with my fork super tender yeah look i broke this one right here i think even though they're the same kind of meat i think it's a little bit more tender well let's find out okay enough talking everybody cheers cheers that's better wow that's a lot better because it's sweater and it even seems like the beef has a different texture this is phenomenal i like this one a lot better than that one what do you think angel yeah i mean not by a lot it's just i like it more when when a steak is a little bit juicy you know i i like oh my god when's the ride so yeah no with the rice everybody is amazing between the two i can go anywhere
