to begin let's make a marinade in a small food processor add in a full head of garlic about nine to ten cloves of garlic a couple of branches of fresh rosemary about two tablespoons a couple of branches of fresh thyme about one tablespoon four tablespoons of fresh Italian parsley [Music] two tablespoons of extra-virgin olive oil [Music] kosher salt and freshly ground black pepper to taste or about one teaspoon of each half a tablespoon of Tabasco sauce the Tabasco sauce is going to give a nice kick but it wouldn't be too spicy [Music] now blend it all in until we get it nice and smooth texture [Music] after all the ingredients have been thoroughly combined go ahead and set it aside we are using three pounds of French rack of lamb they are about 1.5 pounds each thoroughly dry them with paper towels [Music] then slice it into individual lamb chops do your best to cut them into even slices [Music] transfer the lambchops into a mixing bowl and pour over the marinade [Music] make sure to rub the marinade all over them [Music] now cover and refrigerate for at least four hours or overnight before cooking let your lamb chops sit at room temperature for at least thirty minutes then in a cast-iron skillet over high heat add in a splash of extra-virgin olive oil place the lamb chops in the skillet one at a time we are going to sear them for about three to four minutes per side do this in batches as to not overcrowd the pan and then rotate and sear for another three to four minutes or until you have reached your desired doneness [Music] now move them onto a serving platter and let them rest [Music] and while the lamp chaps are resting let's make a sauce to pour over them in the same skillet over medium-high heat add in two tablespoons of butter followed by half a cup of beef stock [Music] simmer for about two minutes as you scrape the bottom of the pan [Music] the drizzle that buttery sauce over the lamb chops and now you are ready to eat you [Music] and there you guys have it garlic and herb crusted the lamb chops enjoy buen provecho thanks for watching [Music]
