[Music] hi everybody as you saw from the title today we're going to be making a quick and easy shrimp fry rice now let's get into it so to start our rice we're going to start with an egg so i'm just going to take an egg crack it i'm just going to beat it up a little [Music] bit and then we're gonna mosey on right over here into the pan here i have a pan with some vegetable oil i'm just gonna just do a nice soft fry let me make sure it's warm all right so we just want to like stir fry we're not going to hard fry this egg so it's brown and overdone so i think i'm gonna get a spoon to scoop it out let me see actually this is done enough so i'm gonna go ahead and just take this out so we're going to take the egg out once it's lightly scrambled take that out put it in a bowl or a dish and just move it over to the side so now what i'm going to do is add a drop of some oil again vegetable oil and then we're going to add some minced garlic here we have some minced garlic and minced ginger it's actually a half a tablespoon of each let me get a a little spoon here so here we go all righty so let's just stir this up so we just want the ginger to mix with the garlic and give it a little bit of brownness what i'm going to do is add some onions so i'm going to move the garlic and the ginger kind of over to the side and just focus on browning these onions a little bit just cooking them for maybe a minute and a half [Music] all right just continue to watch your garlic and your ginger over on the side of the pot if you see that it starts to brown too much or burnt and you might want to take it out but mine is doing okay over here on the edge of the pot the very very edge at this point i am going to add a cup of frozen peas and carrots and again we're going to let this cook and simmer for approximately two minutes just stirring it occasionally [Music] okay our peas and carrots and the onions have been simmering for about three minutes or three and a half minutes and i'm gonna go ahead and get these out i also went ahead and took out the garlic and the ginger right before so let me go ahead and take these out let me get a spoon so we can pop this out quickly [Applause] another thing when i say frozen peas and carrots they were previously frozen but you do want to let them sit out and thaw out you don't want to try to cook them from frozen you want to make sure that they have actually setting out and have thought out at least halfway before you want to try to cook them all right so at this point what i'm going to do is add some additional oil to the pan just a little bit more and we're going to get started on our shrimp but before we do that let's move mosey on over here and here is our shrimp this is about a pound and a half i think of some medium-sized shrimp so what we're going to do is first i want to season it up really quickly so i have here some onion powder garlic powder salt and pepper just the basics right and again how much seasoning you use is really going to depend on how much shrimp you have how big the shrimps are and how much rice you are making so i just want to just stir this up turn down the pan a little bit just stir them up and we are going to get these right in the pan so i'm going to take this let's go over here back to our pan and let's go ahead and get the shrimp in there i'm going to use the same spoon and what you don't want to do is overcook your shrimp you just want them to get pink on both sides once it starts to get pink so you're going to cook it no more than probably like two minutes per side this one still has a little bit of shell i'll take that off i'm going to probably make two batches here so we're going to let them get pink and then we will flip them over once we see it gets nice and pink on one side okay our should have cooking been cooking for a couple of minutes now and as you can see they are painful you can see that you see they're nice and pink and a little golden brown on one side so we're going to go ahead and flip all of them at this time and proceed to do the same thing cook them on the other side until you see that nice pink [Music] and they also have a little golden crust on them you see this is what you want them to look like not too old not overdone otherwise they will be a little too tough actually like rubbery so you see so we're going to cook these for about two minutes on this side and then we're gonna get these out and cook the remainder okay so these have been cooking on three minutes on this other side so we're gonna go ahead and get these out and cook our second batch and move on to the next step let's get these out all righty and we only have a couple left so i'm just going to just put these in here do the same thing we're going to put them into their nice pink color and then we'll get these turned over and we'll be back once they're done okay so we're back in the remainder of our shrimp are done you see nice and pink with a nice little golden crust you can see both sides we're just going to get those out and move right into making this rice so what i'm going to do is add another little drop of oil i'm using vegetable oil you can use vegetable canola corn oil oops um i'm not sure about olive oil but grape seed probably a bunch of different types of oils so what i'm going to do actually i want to go ahead and heat up this rice this is day old i actually made white rice yesterday so this is just regular old rice that was cooked yesterday this is three cups of rice that i'm going to be making so we just want to get all the rice in the pan and i'm just going to just kind of want to warm it up funny thing about rice um it will pop as it warms up and heats up once it's been in the fridge it's not popping and jumping out of the pan so i want to go ahead and just let this warm up a little bit and then i'm going to add some soy sauce before i incorporate the other ingredients back so let's just drizzle a little bit of soy sauce in here and you can add as much or as little as you like remember if you're looking for a certain um color as well as flavor keep in mind that soy sauce is salty so and i'm not sure how much you can see let me see if i turn off that light if that would help but you can see that the rice has gotten boiled but now i don't know how much it helps to turn off the light but you can see the brownness from the soy sauce i'm sorry i'm gonna move that a little bit here so you can see so at this point i'm going to incorporate back our vegetables that we made earlier so our peas and carrots onions garlic and our ginger okay so i've stirred this for about two minutes so at this point what i'm gonna do is incorporate back all of our shrimp let's get them into the mix then lastly i'm going to incorporate back the egg because i don't want the egg to be super overdone so here goes our soft scrambled egg let's get that back in here break it up and at this point everything remember is already cooked you can taste your rice and see do you want to add a little bit more soy sauce do you want to add some pepper some people may want to add spice um i don't know some chili flakes or something so at this point the last thing for me to do is just to sprinkle it with a little bit of scallion that i sliced up just once i just took a scallion and just slice it up just gonna throw that in there on the top i'm gonna stir it in and that is it our shrimp fried rice is done and ready for us to plate simple easy if you want it a little bit darker you can go ahead and add a little bit more soy sauce i don't think i'll do that i'm going to add just the remainder what i had here which was like a tablespoon and a half so i'm gonna go ahead and just give that a quick stir and we are ready to plate so here we have our finished product our shrimp fried rice is ready for us to enjoy i just sprinkled it with a little bit of parsley flakes on top so let's give that a quick try that's so many peas here i'm just gonna take now let's try that shrimp everything is well done um feel free to add as much or as little soy sauce as you like as well as onion some people don't like onions um you can make it the way you like it add as much or as little vegetables as you like okay now that was my take on making shrimp fried rice as you saw the whole process really doesn't take that long maybe 25 minutes and the most thing that takes the longest to cook is the rice so the best thing to do is to cook your rice ahead of time the day before or if you want to use it the same day but make it ahead of time and the shrimp take three minutes on either side so that's only six minutes and you spend about another three minutes to just saute your vegetables so as you see
