How to make Shrimp Fried Rice

[Music] hi everybody everybody i'm back everybody genie young is back and i'm back with yet another amazing recipe i am so excited today because today at the young's house gina young is going to share with you all how easy it is to make shrimp fried rice this shrimp fried rice right here it's amazing it's so easy to make it doesn't require a lot of ingredients and you know making a young style it's gonna be so tasty y'all never had my shrimp fried rice before you better make you some here are the lovely ingredients you will need the first thing that you will need is day old rice and if you don't make it the day before what i highly suggest is that you're going to make some rice you know several hours before you're ready to cook your dish don't cook your rice fully but then when you're done throw it in the freezer for about 15 minutes take it out and put it in the refrigerator until that moment where you're ready to use it you will need some green onions some of you like to say scallions you're going to need a nice sweet vidalia onion and right here i have some shrimp that i have cleaned peeled and de-veined you will need frozen peas and carrots you're also going to need some eggs so we have five eggs here we have some soy sauce fish sauce and oyster sauce you're also going to need a couple of spices so we can spice everything up here's what you'll need over this way you're going to need just a little pinch of sugar you're going to need some chicken powder some black pepper and salt a little bit of parsley flakes make sure your hands are impeccably clean let's get started with this really quick and simple yet so tasty recipe okay everyone so the first thing that you want to do is you want to chop up any veggies that you're going to be using today which in our case today will be the green onions and our sweet vidalia onion all right so we're just going to chop down get the bottoms off okay we're going to use the white all right we're also going to use a nice amount of the green i'm going to set that aside just like so cut some of those greens a lot of the green onion will be used as a garnish but it gives great flavor and fried rice okay so now that we have that nice and chopped up we're gonna just set it here just like so i hope you all are having an amazing day today let me know in the comment section below if you've ever made fried rice at home because today i'm going to share with you all how easy it is to make it's really easy and i get so many messages of you all saying gina can you make fried rice well today is your lucky day we're going to have some fun in this kitchen and i really want to show you all how simple it is to make delicious fried rice that tastes authentic okay so here's what we're going to do you don't need a lot of onion that's the only onion we're going to use besides our green onion okay so we're going to chop down into it just like so shrimp fried rice is definitely one of my favorite dishes okay i'm not gonna chop this onion too big and not too small okay that right there will do the trick i'm going to chop it down a little bit more and i'll be right back okay everyone so in my pan i have a little bit of vegetable oil feel free to use any kind of oil you want to use okay so i have washed peeled and deveined my shrimp we're going to get them into our pan all right i know that's a lot of shrimp but that's the great thing about when you make it at home listen here when you order takeout there's nothing like it's the worst thing you order take out you get your favorite fried rice and it comes with five or six pieces of shrimp not when you make it at home when you make it at home throw as much as you want in there and that's what we're gonna do today we're gonna load this fried rice with shrimp so that every bite you're gonna have a nice piece of shrimp so let's go ahead and season our shrimp right now and we're gonna use parsley the parsley honestly it's just for color it's just to make it nice and beautiful okay not too much don't get crazy with it but put some color on it okay and then we're gonna go in with some salt you have to salt your shrimp definitely it's only gonna take a good two or three minutes to get this nice and opaque color you know it's like that oranges color once you see that we're going to be taking that shrimp out of the pan okay so now we want to season also with some black pepper you can season both sides but it's really not needed okay when i come back i'm going to show you how to put together this really quick sauce that is going to give you that authentic taste for your shrimp fried rice so while our shrimps cook up i'm gonna show you how to put together this sauce all right so here's what we're gonna do we're gonna use three tablespoons of soy sauce okay let me see i think the lid might be over here and it is it's stuck in there let's get that out of there so we can move on all right here we go we need three tablespoons of soy sauce just like so and during this cooking process what i want you all to do is taste your food if you feel like you're gonna need more seasoning more soy sauce it's okay to put more in so we have three tablespoons of soy sauce let's go in with that fish sauce we're gonna put one tablespoon okay i think everything has a lid i'll be right back okay everyone so now we're gonna take a tablespoon of fish sauce okay and we're gonna need to shake it this way it was already open but i'm just gonna shake it a little okay so one tablespoon is all you're gonna need it has a nice pungent taste but you don't want to make your fried rice without it now if you're that person and you say gina i have a shellfish allergy then don't use it so we have one tablespoon going in of the fish sauce with our soy sauce we're gonna use two tablespoons of oyster sauce all right and the oyster sauce is nice and thick has a beautiful color and a great scent it's going to give you amazing flavor let's do a tablespoon and a half that's all you're going to need i'm going to give this a nice stir just like so when i come back we'll check in on our shrimp time to turn our shrimp over oh and we're getting a gorgeous color guess what you're looking for don't overcook it because i want you to keep in mind we're going to take this out of the pan right this seafood is going to season that pan it's going to give the shrimp grape plate i'm going to get the uh the rice grape flavor but it's going to be reincorporated back into the rice so don't overcook it right now let's go ahead and take it out of the pan in about a minute or so so our shrimp is done take a look at it and it tastes so good my goodness it tastes good don't be afraid to season your shrimp it needs that salt to make it taste delicious okay so here's what we're gonna do we're gonna take that pan and we're going to put the white onions in if you get a little bit of the green in hey it's okay i'm going to put some of those green whites in okay the lighter part of the green onion just like so and then we're going to take our frozen peas and carrots and we want to put that in as well i'm not going to dump it and the reason why is because if there's a little bit of water in the bottom i don't want any water in my fried rice we want for this rice not to be mushy so to prevent that we'll pick it out this way and that way if there was any water which there is some liquid in there we don't want that okay now i want to talk about something really quickly let's talk about the rice i cooked a cup and a half of rice and like i said earlier you don't want to fully cook your rice because it'll give the potential of your rice turning mushy once we mix everything in so i cooked my rice half of the way and the other half of the cooking process will be when we start to fry it and get a nice crust onto it if you can understand what i mean but you make sure you throw this in the freezer get it nice and cold and after 15 minutes put it in the refrigerator let it get nice and cool let's take a look over at our vegetables when i come back okay everyone so we're starting to get a little bit of color onto our carrots the peas are starting to get nice and soft and the onions are translucent that's exactly what i'm looking for so now let's come over this way and i'm going to show you what we're going to do next we're going to do next is we need to crack some eggs okay and we're going to crack them right into this bowl just like so to make sure we don't get any eggshells and we want nice fresh eggs beautiful eggs i always anytime i make fried rice or i order it i always put extra egg i cannot have fried rice without the extra egg and i get a little frustrating because when i order my fried rice i say extra egg they put the extra scrambled eggs right on top they never mix it in but the great thing about making it at home yourself is you can make it how you want it just like i spoke about uh the shrimp put as much as you want you don't have to have five shrimp two you know two cups of rice okay here's what we're gonna do we have beautiful fresh eggs i'm happy with the way our beautiful veggies look let's go ahead and put these eggs in just like so okay we're going to start we're not going to move anything we're going to wait for that white to start setting up a little bit and then we'll start moving things around just like so okay so now that our whites have started to set up a little bit let's go ahead and mix some of the yolks right in with the white just like so and we'll let it keep on setting up just like so as far as those veggies they're fine here in a second i'll come back and i'll show you what we're gonna do next okay everyone so we're here at the larger stove i feel like i have a little bit more room okay our egg have set it up our egg has set up and i'm happy with the way that it looks we're gonna chop it down just a little bit and don't overcook it keeping in mind that the egg will be reincorporated into our fried rice and it will finish cooking then so now what we can do is we can take those veggies that's been sauteing right alongside of this gorgeous egg we're going to mix it all in together and then we're going to put it on a plate and then we're going to put our nice cold fluffy rice into this pan we will have to use a little tiny bit of oil but that's just so we can fry our rice if you have a non-stick pan you don't have to use as much oil so let me get this onto a plate and i'll be right back now when you're making fried rice i highly suggest that you put your flat top or whatever you're cooking on your wok or whatever frying pan you put that heat up on high so you can get a nice sear onto your rice okay so let me show you the amount of oil that we have in our pan and also another good oil to use is um oh what oil i like slit my mind guys what is it called my goodness peanut oil peanut oil is delicious with fried rice okay so now you can hear that coffee that popping sound is what you want look at that there and what you'll start to see we're gonna spread it out okay i'm gonna spread it out just like so so that every kernel of rice or every grain i think that's the right word to use every grain of rice gets a nice golden brown color all right now because if you keep it up in in a clump it'll start to get mushy and we don't want that okay so we're going to let this go for a little bit once we turn it over the first time then we're going to start to incorporate those veggies and that beautiful egg just like so and i want you all to look over here at the calendar how i have everything nice and set up we have the spices just like so we have our veggies in our egg and we have our shrimp everything ready to go okay everyone so now you're hearing that snap crackle and popping and you might even see a few kernels jumping up that's what you want now we can go ahead and you can almost see that golden brown color that's a beautiful color that's what we're looking for that's how you make fried rice okay so we're going to turn it all over just like so and we're going to pat it back down so it can receive that nice heat and i have my heat like i said once again up on high this is never going to be a mushy fried rice okay so now next thing we're going to do go ahead and reincorporate those beautiful veggies and that gorgeous egg all right just like so we'll leave it on the top for now because we want the other side of the rice to get nice and crispy and golden brown when i come back i'll show you what we'll do next okay everyone so now that we have a beautiful sear oh yeah look at that now that we have that gorgeous sear onto the other side of the rice we can start to incorporate everything together okay and at this moment once we get everything together we're going to then put in that chicken powder listen here chicken powder is everything especially in fried rice my goodness it's going to give you an overwhelming and flavor that you won't be able to forget not overwhelming but an unforgettable taste you won't forget how about that we're just going to put a little pinch or two that's it okay keep in mind that it does have salt so if you don't want to use salt don't use it we're going in with some black pepper just like so not too much okay and two pinches of sugar isn't gonna make it sweet no not at all okay just like so we're gonna leave the salt for now okay now we want to mix everything in just like so you would not believe the smell that's coming out of my kitchen right now my goodness okay and then from here what we're going to do when i come back we're going to incorporate that beautiful shrimp just like so okay everyone so our rice is doing exactly what i wanted to do all right and now what i've done there was some juice on my plate from my shrimp don't pour that juice in any extra liquid like i said earlier will cause us to become mushy so i've drained the juice we're going to incorporate those gorgeous shrimp and we have shrimp fried rice okay but we're not done yet take out take out what you can make it yours gina young style you're going to enjoy it make it for your family and friends and all of your loved ones okay now look at this go ahead and take and you want to give this a nice stir because sometimes the oyster sauce can get a little clumpy go ahead and start putting it in all right start off with a little bit and then you can always add two adding too much is not good make sure your burner is up on high we're gonna let this cook with that oyster sauce your soy sauce and your fish sauce just like so when i come back we'll give it a taste and see if it needs more seasoning okay everyone before we go any further i know you all have a question and you might have even seen one of my videos that shows me using sesame oil in the fried rice i've done it several times i've done you know you know trial and error different things with fried rice but i've become to learn that in order to have delicious fried rice you don't need the sesame oil there's plenty of asian chinese dishes that you do need it but it's not needed in this fried rice okay everyone so i wind up using the rest of the soy sauce that fish sauce and oyster sauce that you saw in my little tiny ramekin we are going to give this a taste when i come back we're going to say an amazing prayer you all are going to get that first bite look at this guys no mushiness right look at that of course okay everyone this is our last finishing touch take those green onions you need it
