HOW TO FILLET A BASS

I'm going to show you how to FASS make sure you have a sharp filet knife first thing you're going to do is cut right behind the gill here all the way down until you hit the spine right here that's where your knife will stop I then take my knife tip and I insert it right here and I kind of turn it and start sawing a little bit and just go along the spine and you can feel the spine with the tip of your knife and just start going straight down on this side of the spine when I get to the tail end about right here I like to go ahead and take the knife all the way through like that and I go ahead and finish all the way down like that I can now insert my thumb right under the fillet that I've started here and I can go ahead and start sawing my knife all the way down you'll go down the ribs just like this it's real easy this is a larger fish so it's a little tougher but still fairly easy as you can see I've got the Flay almost detached now I just simply take the knife and I just keep going just like this all the way down and you'll get down to the belly meat and I usually leave the belly meat there so there's your fillet now I have to go ahead and remove the meat from the skin now here's what I have I have a nice fillet with the skin still on so I'm going to take the tail end and I'm going to face myself with the tail and I want to put its skin down and meat inside up what I like to do is make it a little notch back here just a little slice like that so I have something to grab with two fingers right there now I simply take my fillet knife and start shaving the meat right off of the skin you'll go all the way down until it detaches just like that and now you will repeat this process on the other side of the fish
