How to Cook a Rib Eye Steak

welcome back guys so today I'm going to show you how to work with one of my favorite products of all time and that is a good massive ribeye steak in restaurants I have a lot of frustrations with rib eyes because people will usually ask for them to be well done medium well and everything whereas a ribeye because of all these different fat and sinews that it has on it which makes it absolutely fantastic you really need to just bring it up to medium and not medium well and not well-done or else you'll be killing the meat and you'll be losing and basically not using your money in the whole way possible so I'm going to teach you how to really cook it properly and it's really easy to do so I'm just gonna start with some pepper right from the top just to season it both sides and then you want to use a nice thick salt or crack salt or flake salt whatever you want just be generous with it on both sides as well and that basically is all you need to do to the meat of course the meat here this thing has to be brought to room temperature so you bring it out maybe an hour before just to get it down down there and properly and make it actually cook properly and evenly because that's what you're looking for even coating on both sides so now we're just gonna prepare the pan so you want to get high heat up we're gonna take butter yes I know it's probably not the best thing for you but butter is flavor and butter is love in my mind some olive oil in there as well make sure we coat the pan properly and evenly and I want this oil to get spitting hot so when I put even some sort of water and it really just comes back at you and we're gonna add all of this together the reason we're doing this the butter does not burn when I gotta nice and hot like that your meat right in and that's gonna start searing nicely a lot of people a misconception is you put it in here and what happens is you just leave it here for two minutes and then flip it over and leave it there for another two minutes but what you can actually do is every 1 min or so just keep flipping it fast every 30 seconds so you get a nice crisp brown coating so you add some extra flavor I'm just gonna add keep adding some thyme in there just to really flavor that oil and everything see as I turn it around the state gets nice and crisp it's almost like it can be fried but it's not just Sears and that's because I'm aerating it and turning it every now and again you have to come closer to check this out it's absolutely crazy you got this nice black inside and charred sigh like that because of the flames that we had and the butter caramelization the my al reaction is what they call it and it's nice and brown and almost crisp now a good way to see whether or not this is done to your liking is basically to take your hand like this push your palm out touch these two fingers together and this is basically rare now touch these two fingers together that's medium air and over here is medium so what we're looking for is something between this and this and right now I have at a medium rare which is absolutely perfect so I'm gonna rest this for about five minutes they let those juices just come back together and then after that we can eat it so cooking is fun and all but my favorite part obviously is eating this beast and there's nothing that makes me happier than a fatty cut of meat and this one right here is calling my name so I'm just gonna give that a nice slice just to see how we have it and this is absolutely perfect obviously I'm gonna finish off with some salt on top just to make sure the seasoning is good give that a taste so good who needs potatoes who needs salad who needs anything else all you need is this pieces cut this rib I'm absolute gonna die sick please make sure you check out the other videos while I finish this bad boy and subscribe to the YouTube channel see you guys next week Ben [Music]
