This makes me wanna cook steak - thanks for posting!
That "tiny knob of butter" looks like a 1/4 lb of butter to me
βMost important, make sure you have someone to share it withβ tosses steak in trash
It's interesting how many of these tips have been debunked through kitchen experimentation like FoodLab.
Edit: Tips 1, 4, and 7 for those wondering.
I love Gordon and what he's done to bring mainstream attention to better quality food.
But some of this advice is old school thinking that has no science behind it.
#1 - As other have mention it makes little to no difference to bring a refrigerated steak up to room temp.
#4 - You can turn constantly, just keep doing it till you get sufficient maillard reaction
#9 - This one irks me the most, stop using your damn hand/forearm/chin/forehead to measure and compare doness. This is completely unreliable as every person has different flesh density and cuts of meat will differ in pushback/feel when it comes to different breed and quality levels (Wagyu - Prime - Choice - etc.). Use a fucking thermometer, it's almost 2020.
You mean like this boys and girls? Get a Sous vide and you will never go back. Perfectly cooked every time. More juicy than any other cooking method because moisture in unable to escape during cooking.
