I think we need to get it just slightly more brown some whoo okay Toby just almost done you [Music] thank you all right so guys this is air one you suck we are at the lovely jelly bean I'm excited today because I haven't had chicken joy in the longest time if I remember it being such a treat when I was younger obviously now that I'm put it all dur much much older I don't eat much simply because I want to try to keep the trim and figures but I do remember it being delicious that's why I'm super excited today and so this is the one will try to recreate and see if it's possible I think will be tough because I do know this is some really good fried chicken so we'll try the original first that coding is super keen it's kind of like crumbly second the chickens come through all the way and it's ready really seasoned properly so I feel like the chicken meat has to be seasoned really nicely now I'll try the spicy to see if we can recreate that so I'm guessing this is just like a powder so you've got like a little dusting there [Music] a slightly sweet spicy sauce finally we need to try this gravy I'm already telling you guys right now I feel like there's no way I'll be able to do this this is good chicken three things keep in mind one moisture the chicken making sure it's nice and seasoned as well because that plate was really deep to skin not too crispy but it has to be nice and loose and has a nice crunchy bits on it and finally three figure out this gravy put a nice not too liquid sauce that being said let's go back to the studio I know right away that this is gonna be a losing battle there's no way in hell that I'm making better fried chicken and jollibee so right now everything I'm doing now is just to catch up to it Joey be Fried Chicken is such a huge cult and people love it so much so I want to do it just this like I want to do a really good fried chicken so I think the best way to do this is to go as simple as possible we don't have to time it to marinate but I do think that they marinate there's probably overnight or something in a saline solution just to kind of keep the chicken nice and moist and that's about it and then you probably deep fry it in some palm oil or I don't know some sort of oil that gives you high heat and really kind of nice crispness so let's try to do that see what happens we're just gonna try to get that really nice kind of detached crispy skin and that really just really tasty simple chicken so to do that super simple One Bowl I'm gonna do 1 cup of cornstarch and a cup of flour by the way two things are happening while I'm doing this one my DeLonghi deep fryers on its set 275 degrees Celsius super important to unboiled Anik cube of chicken broth on that lamb I'm being ironic granny think it's really an organic cubed chicken broth you can find them in and I think healthy options and a lot of Health grocery stores I prefer this over like the ones at MSG so back to this I'm gonna season this with a bunch of salt be generous with that salt I'm gonna take some of my garlic powder be super generous with that Filipinos and myself included love garlic last but not least I'm going to use a very typical spice that we use over here in Asia some five-spice put a bit of that everything's nicely mixed super important with the coating what's gonna happen is got my chicken see where those pouches kind of happened that's where you're gonna get that beautiful kind of like detached skin so I'm just gonna kind of pull that in a little bit so I make some pockets and some holes in there super important that your coating just really nice and light because it never really gets too thick so just nice and light it's perfect and hopefully that fat kind of crisps ups and gives us that uneven piece that we were looking for now we saw when we were eating our chicken joy that's good to go now all I'm gonna do really simple I'm gonna use some of this flour mixture then up I'm gonna take a little bit of my boiling broth that there and this is what's gonna help really he's thinking that sauce all right this next year then goes into the rest the broth whisk everything together and then we're just gonna let that thicken up [Music] all right we look like pretty much good to go fish to chicken out one two it looks good like I like the puffs is a nice golden color which is amazing as well and then remember how we had the spicy as well so take a little chili powder here and remember how I said it had a slight sweetness to it so I'm just gonna have a bit of sugar to it as well as well some salt make that comes together and then ladies and gentlemen baiting that and then our chicken goes right on there and just for fun I'm gonna do the drumstick extended will it stand will expand ladies and gentlemen it will I give you the talent she couldn't put it down but it actually looks pretty legit like we haven't tasted it yet but I think it looks pretty good we'll take some pretty shots of it first all right while the second batch is cooking I'm gonna go ahead and tear these two pieces so they're graphic fibers that skin is coming off nicely just a dozen chicken joy wood which is pretty good break into the meat [Music] okay perfectly cooked that steamed now the moment of truth [Music] this chicken joy is actually pretty pretty good and that skin okay here I'm gonna call it this is a success
