I've never had this ever in my life I've had plenty of tuna and it can [Music] in Mindanao there are a number of native ethnic groups practicing Islam all with their own unique identities cultures and food in davao we have ten tribes we have sixth Muslim tribes and the four lumads the endogenous people you're part of which tribe that was so bright today we'll be visiting current areas from the Mara now people just like so many other current areas throughout the Philippines they've got tons of little containers of food a barbecue joint with an owner from the two sub people what's the secret can you just tell me and trying the best Pajero in devout with Mary Lou I'm gonna try the B first and then I'm gonna try that banana who's promoting halal trade and tourism in davao 230 he used to top deputy mayors in every tribe that helped us a lot in promoting our allowed to resale with such a large cultural footprint in Mindanao I'm on a mission to discover the unique diversity of halal food in this city don't think I'm break me no no nothing can break me between the ocean and one of the vows main highways is what some locals refer to as the Muslim neighborhood along the street lined with halal restaurants and clothing shops lies Moe Venus car and area I am here at unsay at marinas it isn't a like aunt yes this is that auntie mo Vienna is part of the Mara now people a southern tribe in the predominantly Muslim region of Mindanao and for the last eight years she's been dishing out her own Mara now inspired recipes for lunch and dinner can you give me a couple recommendations kicking current area is the local name assigned to open-air eateries like this and like most current areas mo Venus has dozens of precooked options costing around a dollar or two each I think I'll get the tilapia and I would love to try your native chicken this is the tilapia right here [Music] coconut milk that looks beautiful I'm definitely gonna try that oh and then they slather on that coconut milk along with the tilapia I'm ordering some of our signature native chicken first of all it is hot as heck outside and so there's no better way to quench your thirst then with a super sugary Mountain Dew I've seen a lot of the signs here with Mountain Dew low votes on them and it would not surprise me at all if Mountain Dew is like well like we'll give you a free restaurant sign if you just put our logo on honestly that kind of advertising does not work on me I can see right through it it doesn't mean I'm gonna buy the product okay the owner has suggested that I try these two dishes over here BAM it's the native chicken it's gonna be a little more thin little less fatty probably a little more chewy and then over here we have a lot of people watching me eat hello let's try it out oh I think that's just fried ginger some fried up ginger that's very nice not too fatty not too robust but I'm sure it's gonna be super tasty let's try it out mmm I know what you're missing I'm gonna put in some lime a little bit of pepper honestly I didn't even see vinegar I'm just gonna put in a little bit of soy sauce the chicken it's already very delicious very aromatic it doesn't have a lot of fat on there and so I just want to add some wetness like that love it love arrived mmm very yummy wash it all down with the Mountain Dew honestly I don't know how to eat a neck and I feel bad I don't want to waste it but like I'm gonna save the neck for dessert here we have the tilapia it is just bathing in this coconut milk I just want to try it's the sauce they have on here oh very delicious right peppering big creamy I personally stay away from super bony fish like this just because I spent a lot of time picking it out of my teeth but she said this is one of her favorites here try it out full of flavor I'm creaming peppering plenty of salt on there this needs no extra sauce it doesn't need any help it can stand on its own two fins right guys it's a nice little breakfast or lunch should set you up for the day and all days costs only I've no idea how much does this cost she's too kind she won't let me pay and in fact she won't even tell me the price it is a charming little Street side comment area if there wasn't sign saying like Muslim eatery you would think it was just like any other card area it's halal food but it's for everybody our next food comes from the mera naam Kula dong and Mangan de now tribes and can be found outside certain mosques in the city of davao flavorful and affordable it's called pastel this is the muslim food is that type of food you're gonna show us how to make this now hostel starts by piling rice onto a banana leaf then adding a bit of chicken that's been heavily seasoned with salt pepper and garlic it's like a little banana yeah on peeling from the banana leaf and it's ready to go let's try it out mmm very sticky very simple energy-packed treatment I mean the chicken acts more like a flavouring than a real protein source but at 12 pesos are about 20 cents a serving pasta is a super affordable and tasty way to fill your belly the Philippines loves barbecue and on the end of this bump filled Street one lower halal restaurant has made its mark over the last three decades thank you so much for having us today in this restaurant you sell many different kinds of halal food can you explain some of the foods you have here I have milk fish I have Donna reels I have any low can you go yes yeah love it Rebecca of the two sub-tribe is doing Filipino barbecue her way can you tell me a little of the history of your restaurant I'm now 34 years in LA 34 years ago when Rebecca had only a mobile BBQ cart the vice mayor helped her secure this lot where her restaurant still stands today what is the name of the vice mayor from that time did he go to why'd that happen the President of the Philippines right now yes he is the one who almost 34 years ago helped you establish this restaurant yes Wow in a row there's all these different barbecue restaurants but what is special about your restaurant what is different about what you're doing here I have a sauce it is my secret okay that's good you've been facing really quick just turn off the cameras turn off don't ya turn it yeah what's the secret can you just tell me she's pouring some of this sauce she's got a huge tub of the secret sauce thank you I'm a professional food taster I will taste your sauce and I will tell you what's in it it is my secret belt before years that is delicious it's almost like our caramel it's sweet is creamy is anyone else allowed to make this we I don't wanna be poor that is a real family secret right there no thank you so much this secret sauce is applied heavily to their grilled chicken or any other chicken parts this is the most delicious accident that's ever happened that's not a good way to start this place is full of different interesting Filipino foods that are halal as well today I've ordered up some tuna JA and I've never had this ever in my life I've had plenty of tuna and it can I've never had to turn a jaw like this and puso or hanging rice sliced open and eaten by it's really like a work of art the way they braid it together first up chicken hearts glazed in Rebecca's secret sauce it looks like um somebody killed seven vampire chickens in a row and is it vampires you kill at the stake mmm so yummy chewy little hearts that sauce is so delicious and I'm trying to figure out what it is what it is very comely ma'am I just have a quick question um I'm just wondering what is in this sauce all right good try thank you warded again toward it again but then we pick up some food so it's a little rich it's a little sweet we got to break it up a little bit more sauce I think they're just teasing me now next I'm gonna jump into this tuna John oh I have rice here it's okay hanging rice and then this is sitting rice okay yeah thank you love it so delicious I like that she kind of popped in for a halftime report the tuna jaw I'm just gonna grab at it and see what comes on oh-ho-ho Wow look at that dark Beauty it's very fatty very tender try it out it is melting in my mouth you know what it tastes like you know sometimes you go and get sushi and they torch it the torch has brought out the fat a little bit it tastes like that [Music] mmm smoky fatty and salty I absolutely love it that is delicious [Music] [Applause] [Music] [Applause] next up I'm headed to the vows tin hat to experience their take on porch arrow with Mary Lou but first they're roasting up some chicken spicy what is so special about this chicken we have these espacial ingredients like the lemongrass on Yuans and Carly put together inside the stomach how spicy does it get for me it's very spicy it depends of the level of the consumer when you look at me do you think I will survive this chicken of course okay you need to order more because it's more like delicious while the chicken spicy is rotisserie fine we're headed into the kitchen where Mary Lou will walk me through beef pochiro this Filipino dish starts with sauteed garlic and onion then tomato and water as it boils the chef adds salt brown sugar and tomato sauce now stir dad put the beef tasty already yeah then carrots sweet potato banana and potato Wow smells yummy already yeah that smells great we have to try first tastes perfect and now we have to put bag of beans additional bell pepper finally we will put that native be child this stunning Pajero is a celebration of color and freshness and I can't wait to dig in we have the whole chicken run up which is very spicy chicken leaped on my knowledge on meaning it's been on the rotisserie and then the Pajero here I mean vibrant so many fruits vegetables have there was a banana in there at one point I've never had soup with a banana in it I will show first the hassle so you can start eating the chicken I will squeeze fresh calamansi and what is in there some Chilean chili sauce you put some right on the Jia try this me laughs [Music] wow that chicken is so fragrant so flavorful flavors of the sauce very bold salty spicy ooh I feel that spice the salt is just enough not salty beep which era of the ha the best butcher in town I'm gonna try the B first and then I'm gonna try that banana try wrong yummy mmm delicious it just it tastes so pure the broth itself has taken on all the flavors of the vegetables it's beefy but it has a nice vegetable flavor in there too and I want to get to this banana because I buy a banana and it's too like this it tastes like a potato the sausage is like a gravy it's a little sweet very savory you know it's hard to believe there's no MSG in this they didn't cut any corners they found a way even with all these amazing dishes I know I'm only scratching the
