alright I'm gonna grab just a straight-up piece of crocodile meat and we're gonna try just the crocodile meat welcome back to palawan one of the most beautiful places on earth but the only scenery I want to see is served on a hot plate [Music] I've traveled here just for the food last time we made our way through the mangroves to hunt down palauans infamous woodworm that looks bizarre this time it's all about unexpected deliciousness as we dig into Paula wants crocodile seen what are your feelings about people eating crocodile are you okay with it and some local classics too so before we head to the crocodile Zoo I'm dropping by a culinary landmark kina boots restaurants where Arlene will school me on their famous crispy pata we use the front of pork hock we believe in the Philippines that if you use the sign for coughs it's contaminated is nearing the front ones are fine there and a cure and they're beautiful they're clean cleaner cleaner greener crispy pata starts with boiling ham hocks or you can call them piggy ankles like I do boiled in a mix of onion garlic star anis ginger salt and pepper for about an hour we take pride in saying that we have a healthy crispy pata we don't use cooking oil kena Booch bakes it in a convection oven for 30 minutes golden brown crispy pata golden brown that looks awesome we're trying to preserve the the skin you know this reminds me of what I had electron and devil it's almost the same thing because the meat is tender but the skin is really crispy oh it looks like a work of art to the front ankle of a pig I knew it could be so beautiful oh there's so there's a tattoo of a flower on the ankle right here I don't believe you Wow this pig was a troublemaker as with many Filipino meals our crispy pata will be served with white rice and a dipping sauce consisting of vinegar soy sauce sugar and fresh chiles there's only one kind of papa here it's crispy Padma but do other places make like a soggy pop oh I wouldn't say that no all right those are like fighting words here in the house do we use our hands yes okay it's so warm and toasty still we're done keeping the dip and then heat it yes so let's hoping that was next Cheers [Music] amazing super crispy it's not dripping in oil it's just that right amount of fat with it this was not thick right it's basically how food guys yeah we're basically on a diet uh-huh on a pigskin tiger it looks nice it feels tender already it's steaming Hans you're gonna throw it on the fork yes but in this house a Filipina way of eating where's this been all my life I'm so happy I'm trying it now but I'm so sad I didn't really because it's it's just so quite rich and crispy fatty meaty all in one but this is not what we're here for we are here for the crocodile and I'm gonna go see how that is made next to really understand the crocodile I must get to know the crocodile so I'm headed to a nearby conservatory to get the full scoop today we're in palawan wildlife rescue and conservation center a place it's special because you can not only see the animals but you can eat them too but you can't eat all of them actually can you tell me which animals you can eat how does this work uh here the saltwater crocodiles can can be eat but it's those products like crocodile see see crocodile in which is from ter-ezza result in Davao so the crocodile meat that people are eating on this island it's not actually raised on this island no because this is for conservation purposes only [Music] so are these freshwater or saltwater that's what they're crocodile oh we can't even eat these then what's the point in our serious note that are critically endangered they're doing good work here they're trying to make them breed they're doing lots of breeding he's going yeah Oh jeepers I feel like these small ones are more dangerous than the big ones oh I got it hey what is that sound does that mean he's happy does that mean he likes me I got to be honest right now he's not a phen he's trying to bite me and he's making a weird sound can I kiss him okay I'm not guys I promise I'm not even gripping its neck at all it's just he's trying to make choking sounds he's trying to make me to look like a bad time not even so here we see the 17 feet long nails water crocodile beasts how old is estimated 70 years old so Papa crocodile 70 years they can grow six to seven meters that's for comparison it's that big six months for one year without eating good that's really good I can't I can survive about one more hour we're on our way to the restaurant in a moment what are your feelings about people eating crocodile because you're part of the conservation but is it okay that people are eating it too ah those are not from the wild they do farm crocodile for crown for me so it's okay naturally many people fear crocodiles but like approaching any fear I suggest you chop it up into tiny manageable pieces and then throw it on a hot plate that's what we're doing next time Quinta boots restaurant let's go see seek is legendary in the Philippines usually made with pork bell pepper chili pepper onion and a host of seasonings and sauces and served on a hot plate today kina Buchi is showcasing their sea seek replacing pork with crocodile and cracking an egg on the top but we're not stopping there Arlene is back to walk me through another classic of the Philippines Bicol Express we saw it in pocket Isles today they were a little bit scary yes do you think they're scary looking oh not only the this portion this is already cockney this is hey guys I was telling like my audience if you're ever scared of something you should chop it into little pieces there egg and then you don't have to be afraid anymore and so you're not scared of this or no no no see okay here instead of pork we substitute it with crab meat it is actually the tail part of the crowd Oh a chef makes quick work of the crocodile tail cutting it into bite-sized pieces when they have crocodile for the first time do they try to compare it to something else straw that is a league of its own right you could say it tastes like alligator maybe he'll the Bicol Express a la crocodile starts with cooking oil garlic ginger and onion the crocodile meat vinegar and soy sauce bagua own there it is our smelly friend bottle all bell pepper and eight lot of chilies on the spicy skin Oh am I gonna be able to handle this house why Caesar of course you will be able to handle it it's not medium medium spicy okay I just saw a lot of chilies going in I got a little scared I mean excited I got excited then finally the coconut milk oh oh this is with coconut see oh what a beauty looks so fresh like a true art it and we're giving a a wipe how do we get out of this team can I just go sit down and eat now do I need to tell you something clever [Music] I couldn't tell this apart from any other meat it's a white meat it could be pork it could be chicken although today it happens to be an animal that could eat some chicken and also eat some pork it is the crocodile okay how many times we need to say that sisig is legendary right here we're just gonna jump right into it the meat is kind of crisped itself onto the skillet it looks freaking awesome I've got a pile of rice here oh wow that has a ton of flavor there's a ton of lime coming through or probably the color Muncie probably someone's gonna tell me I should have mixed the egg in am I supposed to mix that again Kars I don't have a Filipino nearby me I want to mix this up a bit super fresh light salty it's honestly it there's such like a tornado of flavor and seasoning that I can hardly distinguish like the pure crocodile taste if it tastes like it could be pork or chicken mmm oh I'm chose to have some rice right I don't know I just like having the mean I got my big ole Express over here look at the spoon I think this is for serving several people cute all right I'm gonna grab just a straight-up piece of crocodile meat and we're gonna try just the crocodile meat mm-hmm oh we got the creaminess from the coconut milk it's peppery it's hot it's spicy the texture and the flavor it's a lot like frog it is it's somewhere in there on the spectrum between a chicken and a frog it is the perfect amount of heat some onions some veggies some crocodile mmm give it up for crocodile in the Philippines guys we went to a crocodile farm and then we ate actual crocodile what other food review show is doing stuff like this we're taking it to the next level we're bringing it from a 9 to a 10 do you know what I'm saying so this is
