hi guys it's Claudia with cabin talk and we're gonna make a no need bread I know I made a video of it before with my friend Karen I feel like I refined the technique so what we need is the ingredients are still the same what we need is three cups of flour you can use all-purpose flour you can use a mixture I like to use sometimes a mixture so I'm using like two and a half maybe cups of white flour or white unbleached whole wheat whatever flour and then I'll add a little bit of whole wheat flour with the whole mixture so the recipe is really simple it's always kind of the same it's three cups of flour one and a half cups of water now I'm gonna start the water up we need warm water like really warm water like like the hottest it kind of comes out of the tap but not boiling water and then we need a quarter of a teaspoon which thanks to my friend Deb I got a real set of measuring things which is a miracle so we need a quarter teaspoon of yeast and this is not like a sourdough naturally fermented bread no this is like the fast slap it down version so we need that and then we need a teaspoon and a half of salt and anybody who knows me knows that I like to use Himalayan salt I use rock salt I never ever ever use white salt never do so we need about a teaspoon and a half of the salt and now the water I had it running a little bit if you hear chickens in the background it's because there are chickens in my house they're rescues so they're recovering the in recovery so if we have three cups of flour we need a cup and a half of water so we need a cup and a half of water and those are all your ingredients I'm just gonna grab a fork and with the fork we sort of just leave it around and the dough will be kind of a little wet kind of a little sloppy and wet see this is not fight enough water so I'm gonna add just a little bit more a little bit more you can add like a tablespoon more at a time just to know what the what the recipe will be but those are all so if you use the whole wheat flour you need just a tad more water so this is it this is our no need bread this is as much as we do with it I actually added a little too much water but the whole wheat will suck that up and that's it and then you have to cover it now you could use saran wrap but I don't like using saran wrap for anything so I use a lid that fits pretty well in here and this is the dough and if you see it see it's kind of wet a little sloppy and even sort of run see that so this could be a little less wet but it'll be fine and then I just cover it and now we let it rise till it at least sort of doubled in size you put it in a warm place I will put it in front of the heater and and then I'll be back when that is ready okay guys I'm back and the bread has risen quite a bit and I'm use a Dutch oven I have a couple different one this one is cast-iron and I have another couple pots out of clay so what you need to do is you need to put that in the oven and heat it up with the with the oven as it is heat s it is heating up and we want to do 450 degrees Fahrenheit so in the meantime check what has happened here it's gotten pretty big and so we need some flour on a surface and I'm just gonna use my my little cutting board here because it's easier to move around with that and so we want to put some flour on that and then we gotta scrape it out and I usually just use a big spoon to scrape it out and I hope you can see this it's basically just oozing out of here it's very soft no real blubbery and I had and also while it was rising I had it basically standing in front of her in front of a heater because otherwise it can take a long time to rise so there it is and then we use a little bit more flour on the top and where is my trusted spatula oh shoot hold on guys that's right I'm used that a moment to go for some rice dish okay so what you want to do is and I hope you can see this let me move the camera for this part a little bit so you guys can see that better here we go let's see so what I do rid of this by keep my flower usually you just kind of sort of fold it in a little bit and pull it together kind of a few times and then what you want to do is you want to let it rise Wilder Albany's heating up and I'm just gonna cover it again with the same bowl and oops and then I'll be back when we throw it in the oven okay okay guys um oven is warm and the Dutch oven is hot that's this thing here the cast-iron Dutch oven and importantly let me turn this a little so you guys can see a bit better okay so we'll take off the lid and now we need the bread which it's out of control here we need that little thing I get into loosen it up likes to be sticky as all get-out and almost there well fold it over a couple more times and this blob is gonna go into the batch of it you just shape it at all and there it is and look okay lit goes oh don't touch the lid without your and it goes in for half an hour and then we take the lid off and do it another ten minutes so set the timer for half an hour and I'll be back okay hi guys we're back and it's been half an hour so let's see what our bread is doing in here I haven't looked yet so here it is Oh honestly it's so good looking check this out but now we need to put it back in for about I would say ten minutes without the lid on and it'll crust over really nice so I'll be back and show you the end result okay guys we're back and the bread is ready I peek to make sure that it's nice and brown and check this out it's hot but isn't that beautiful you can make that so easily you saw how easy that is it's just a bunch of waiting and then it's finished so it's too hot to touch with just my hands but isn't it a beauty and it's beautiful on the bottom too so before I would take it out of the Dutch oven and not leave it in there I found out that it's much better if you leave it in there the bottom doesn't burn as much so good luck making you know need bread and enjoy and there it is guys I already cut it in half but it's super duper nice and spongy yum-yum
