hey everybody I'm Guy Fieri and we're rolling out looking for America's greatest diners drive-ins and dives this trip hey homie and a shrimping in Lackawanna New York the neighborhood joy beyond belief is this wonderful where homemade Italian trying to mom's over her feet major-league meatballs the meatball to just fantastic and monster lasagna I don't know if I want to eat it or climb it that's all coming up right here right now on diners drive-ins and dives so let me throw some numbers at you how about seven eleven and 200 see I'm in Lackawanna in New York right by Buffalo where this guy grew up and lived in seven different houses in this neighborhood now over the course of 11 years he made over 200 trips to New York City to sample taste and research the finest Italian restaurants now you add up those numbers what do you get 218 right now that's not what I'm talking about what you get is a neighborhood guy that comes back to his home turf and is serving up handmade Italian food welcome to Mulberry Italian Ristorante designed for Table seven this place is awesome lot of Italian food in Buffalo how does this rate he gets the bus no Kimo very if the food beyond believe is this wonderful no surprise there I do all the time if you learn to cook with your mom and your grandmother down the street but owner Joe your table for figured out its favorites in New York City every time you go down you do what beats eat like crazy till when you open this place writing noughts over there Pete pride is two worlds to get all the different things that I've tasted and tried with a little bit of grandma's touch and mom's homemade lobster ravioli there's more lobster in this that if the last lobster dinner that I have second meatball please I don't know what he does but it's beautiful but it's delicious what size is your meatball little bit bigger than that all right fresh breadcrumbs now is this leftover bread that you have here in the restaurant you got it Parmesan cheese fresh basil okay first parsley Italian no that's curly that's curly curly I like the texture a little bit better garlic dry oregano kosher salt coarse black pepper we mix that off like the fresh breadcrumbs 80/20 ground beef how many meatballs this make us approximately forty five fresh ground pork you're using just a regular burger Ryan so this is gonna be a little bit more of a delicate meatball right little finer grind on everything extra virgin olive oil I dig it make sure okay there's the liquids I'm looking for them though water and why the one water I'll tell you the truth I don't know really yeah always use warm water never ask don't over mix a little bit olive oil I feel like woo that with a little bit of sound a piece of bread a set your a for the whole day that's what I'm saying bacon these frying these we bake up three-quarters of the way all we bake them all the way about an hour ten minutes let's see if I don't get the pic sure I pick that one look at all that juice certainly a big look people all right I know he's gonna do that to me that's a great meatball ma'am really nice and tender melts in your mouth big flavor cut it with a fork it stays together yet when you put it in your mouth the dog delicious but the meat puzzle dissolve and the meatballs huge it's fantastic whoever you order the best it could be caprese salad please this is making the Motorola's up thank you so much it makes it so much safer if you stretching it out rolling it into itself that is beautiful it's fresh it's light its flavorful it just melts in your mouth until made like the gnocchi beautiful the sausage the ravioli and the Italian sausage in their hand stuffed pepper mmm feel like this is my bucket of popcorn mmm I don't know what he does back there but I'll leave it at the magics in the kitchen and for his next trick Joe's doing 45 pounds of handmade lasagna handmade pasta handmade sauce but dudas alright so we've got the all-purpose flour double zero double this is double zero zero yes sir double zero flour is the optimum really high gluten so we're gonna create a well get the eggs in the salt now are you doing food processor this is always how you do it always buy it because that's the right way to do it the oil is about as old-school as it gets right here how much will this make us two layers of lasagna and how many layers you got before you got to double that up right now you'll let this rest 1/2 hour what's all over okay so we got our dough rested work your magic will semolina flour and then cut a little bit off so you got somebody back here full-time I'm most doing this we do it by committee just making it to a workable size so you can get it into the machine I think you could use a little of course you nice and thin that's about it run down brother all right come on the porter of this pant and I'm gonna pull some panko in there just get me fresh sheets filled the wall first I feel like I'm at some cake decorating competition and you're making the lasagna cake how many of these you make a day coulomb every day three on Saturday sauce you make the tomato sauce - absolutely meatballs breach all that time and attention you did to those meatballs you just go and slice them right out throw them right on the bottom of this thing that's right Wow little mops and farm combo another sheet of pasta a little bit more sauce on there now chicken we get the whole coop in there more mops in parm right another sheet of pasta and then what you stuffed hot pepper mixture this needs a little bit of software now sausage and peppers I feel like I'm in lasagna surgery here at flavortown Memorial dr. Joe's been working feverishly then another layer of the pasta and then the record on top yes sir which is tossed with a little rice parsley and a little bit of garlic oh there are patients progressing nicely with just a little bit more sauce on there and then we're just gonna fold this over bake it up a nice C will cover the patient I expect a full recovery within the next hour or so at what temperature 375 Mike we're getting here spot me that's seriously the Porsche garnish with some parmigiano-reggiano and some fresh baby mr. bunion I don't know if I want to eat it or climate it's where we do it look at this right here sticks together hmm Wow that's not good right it's rich it's flavorful everything you want to lose on YouTube it in quality mmm I man nice job though I have to get you your tattoo that's some gangster lasagna dinah that lasagna that deserves it just a lot of meat it's nice and spicy it's got the hot peppers in there did you really eat that whole mountain I'm trying to finish the rest I'm not even a what were your son Luca Brasi please say you guys will be back oh yeah within the next couple of days this was a kick they kind of some monsters on you dude alright alright Cheers good dude what a great road trip but don't worry we got plenty more places to check out I'll be looking for you next time on diners drive-ins and dives welcome to Mulberry Italian restaurant eh like Jason
