actually what i did was i went to the bathroom so that's another little bit when you're in the kitchen cooking and you go to the bathroom if you have an apron on and april take your apron off don't go in the bathroom with your apron on that's nasty too [Music] hey everybody welcome back to my kitchen y'all already know i don't know what time it is y'all see me feeling these potatoes y'all know it's time for that tater salad it is time for the potato salad y'all okay so this is video number four in my thanksgiving 2020 series so i'm going to share with you all how i make my potato salad like my mama used to make hot potato salad okay so right now i have nine eggs and i'm getting ready to put this stuff on so you know because i'm be talking so i need this stuff to go and start doing what it needs to do so right now i have nine eggs in this pot and you guys a trick that i usually do to help me peel my eggs easily is that i add a little bit of pure baking soda okay so i'm just gonna sprinkle just a little bit in the water just a little bit get it coming out just a little bit in the water and once they boil it helps me peel them a lot easier okay so i have since then i've peeled my potatoes i have my eggs that i just put on and we're gonna once those get to boil and i guess we're gonna let them boil maybe about eight nine ten minutes i have my water here that i'm getting hot for my potatoes and i'm getting ready to turn that up so it can start getting hot now you guys i'm using russet potatoes this is a 10 pound bag i don't need 10 pounds so we're doing about half of it so we're doing about five pounds of potato salad i'm looking for the name there it is russet potatoes that's what we use okay in addition to the potatoes i'm going to use duke's mayonnaise y'all that's what my mama used to use so we're using duke's mayonnaise we're going to use some sweet salad cubes i have an onion here and i know some people don't like onion and it's okay i have some celery here some people don't like celery it's okay i told y'all this is how my mama used to make it okay and then for the holidays like thanksgiving and christmas oftentimes she would add the diced pimentos just a little bit to give it a little bit of color okay and then i have let me see did i say salt and pepper and y'all know we can't forget the sugar sugar we like a little sweetness to our potato salad okay so this is everything that i'm going to use let me see have i forgotten anything i don't think so now with my water that i'm going to boil my potato salad cubes in you guys i like to salt my water like it they have a little bit of flavor so what i'm going to do is i'm going to put some of my my better than bouillon uh chicken base in here and it's just like for those of you that like to boil your potatoes in like a chicken broth just to give your potato a little bit of flavor now my mama didn't do this part but this is what i'm getting ready to do okay just a little bit we're not trying to make no mashed potatoes but you know it just rather than me using salt and um salt or chicken broth i'm gonna make my own chicken broth and add this to the water okay and i'll probably taste it in a little bit just to see if i can taste just a hint hint of this in there okay i always you know salt your water a little bit when you're doing potato salad okay so now while i'm waiting on my water to boil um i have to dice up my potatoes and you guys even with everything that i'm adding to my potato salad oftentimes i'll use celery seed if i don't feel like cutting up the celery but you guys it's thanksgiving so i have to go all out like my mama used to do so that's why i'm using real celery probably will not use all of this but i just have it my mom used to definitely put enough onion in there so we're going to chop all that up because i don't like hunks of celery i don't like hunks of celery and i don't like hunks of onion but i like to have that flavor okay so we will make sure that it is definitely diced up enough where you won't be biting into humps of it okay so let me start by uh getting these potatoes i have them as i peel them you guys i put them in cold water so they won't start turning brown okay so i'm gonna drain this water off i'm gonna fill it back up and let them stay in the cold water and that will give me time to dice them i just want them in some fresh water right now okay okay you guys we're just going to get our potatoes diced up we don't want them too small but then by the same token we don't want them too large because what's going to happen as you start mixing up your potato salad some of the potatoes are going to you know break up even more so this is about the size of potatoes that i usually you know usually like to have and like i said once you start mixing them up they're going to break down a little bit more okay i don't like my my potato salad too chunky but then two i don't like it either i want potato salad and not mashed potatoes so we're just going to get all of these potatoes diced up and then we have to boil them and let them totally cool [Music] so okay you guys i'm done dicing my potatoes and you can see that they're all just different sizes which is fine so i drained them and now i'm getting ready to add them to my water and as a matter of fact let me pour just a little bit of this water off because i don't want it splashing over while it's boiling okay that's better meanwhile while my potatoes are boiling i'm going to prepare my celery and onion and although i like to taste the celery i don't like um i like the flavor of the celery i don't like big hunks or chunks of celery in my potato salad okay so coach so i'm just going to use my little ninja here and get them chopped up [Music] [Applause] so so so so and what i usually do with my eggs once i take them off of the stove they boil about 10 minutes then i um pour off the hot water and then i put cold water and put ice cubes in the water with the um cold water and edge y'all look who back in here in my way in my way i just took a shower and my hair washed my head but this is her thanksgiving meal and so i'm fixing me some fish yep that way i don't have to mention what you could do i told them your breakfast family good it's awesome i mean i did the best i could to make sure you made it properly y'all just a commercial until i come back you know it's a commercial thank you guys for joining us and eating with us we hope you guys look at that guys don't nobody want to see no fish that's not what we're talking about okay go goodbye okay let me warm my fish and i'ma leave y'all i'm gonna leave everybody i promise no get out of here stuck i'm sorry i'm getting more stuff out the way sir i'm moving i'm moving i better come again come and get them in the meantime you guys i'm checking these potatoes y'all don't overcook your potatoes you gotta have some mashed potatoes and they are so tender so we are turning them off sir i'm sorry babe please forgive me i'm getting out your way husband i'm getting out your way back i'm moving i promise everybody my i got 18 seconds well you guys see that these potatoes are smoking hot we cannot do anything with them right now they have to totally totally cool so i'm telling you guys if you're making potato salad and you do not let your potatoes cool i don't have mush don't have some mushy potato salad so i am dicing up these um eggs right now i mean did i say head nine how many hair one two three four five six seven eight i have eight eggs i used nine when i was doing my past that's why nine was stuck in my head but i didn't want to put them in the my little mini processor because i didn't want them to get too diced up you guys i forgot to i took an information and then forgot to put my um um apron back on actually what i did was i went to the bathroom so that's another little bit when you're in the kitchen cooking and you go to the bathroom if in and forgot to put my apron on so now i have it back home don't y'all be in the bathroom with your aprons on and then come back in the kitchen trying to cook somebody something that that's nasty too and just to think some of y'all do that y'all know y'all do honey that's why i tell you can't eat everybody cooking you cannot eat everybody food you just can't just okay so i have eight y'all that was just a little sidebar i'm sorry y'all i just realized i didn't have my apron cause i've been in this kitchen all day y'all this has been all day in my happy place but i didn't want my eggs real real fine you guys we love eggs i like to i now that i do like to taste in my mouth a little piece of eat in my potato salad i don't like them too too chunky but let me show y'all what i'm talking about can you see this right here see that right there that's fine for me so i didn't want to put it in that um little chopper because i didn't want it to be well no pureed eggs okay so after y'all that's my pot still jumping yeah that's my pot with my put greens in there told y'all i've been in here all day let me get these videos done for y'all and actually my potato salad is video number is it four i need the turkey brine then we had the sweet potatoes then the collards and now we're doing potato salad so this is video number four in my little mini thanksgiving series okay so for right now i'm going to start with six eggs i think that's gonna do me so we're gonna start with six eggs again if you don't like that many eggs don't put that many eggs in there you totally have options and since i'm not getting ready to cook the cook mix up the potato salad right now i just don't want my eggs to sit out so i'm gonna let them um cool my eggs just a few more minutes before i sit them in my refrigerator but in the meantime in between time what i will do while the potatoes are cooling you guys i really be trying to give y'all some kind of measurements i do i've been trying so hard oh let me try okay so while they are cooling what i do like to do is let me see i'm getting ready to add my onions on top just let them sit there my onions and my celery but i'm trying to measure so i can try to kind of give you guys some type of measurements y'all know this is challenging for me because i don't oftentimes i don't measure when i cook i just do it but i'm trying to give you a little foundation a little base okay so okay so right now we're gonna start this is a half a cup of onion okay it's a half a cup of onion and with the celery we're going to do half a cup of celery too that just makes it easy okay so that's my base that is my base a little foundation for you guys so we're gonna start with a half a cup of onion and a half a cup of celery half a cup of onion half a cup of celery and six eggs so we're gonna let that be our foundation okay in the meantime in between time we're gonna let this cool um and i'm probably going to sit it in the refrigerator because i can't do anything with that for quite a while yeah i was coming out here to put the potato salad in the refrigerator and then i thought fred is out here so let me y'all know fred the turkey brian today is tuesday i did the dry brine yesterday so he been out here hanging out here in the refrigerator in the garage myself so i figured since i was coming out here y'all i bring y'all out here with me hey y'all y'all can take a look at fred we see how he doing let me get this ouch y'all that's hot okay let me let me let me show y'all fred let's see how he doing look at him this is hard yeah he's just hanging out out here just as dry so he doing what he's supposed to be doing y'all seeing him he's supposed to be looking brown and rich like that [Music] this is hot so i just thought i'd let y'all see how he doing i got my potato salad up there y'all see we can change what am i not my potato sad but you know my potatoes so we're gonna let that sit up there and um and do what it need to do y'all i just figure i figured i'd bring y'all laddie with me so i just wanted you guys to come out here with me so y'all can see fred hanging out in the dry bride and if i change you don't have a clue as to what i'm talking about that mean you need to go back and look at my first video in this thanksgiving series where i or uh uh did the dry brine on fred the turkey okay go back and look at the videos all right you guys it has been several hours later and my potatoes are totally cool okay so i'm just going to take them and put them in this bowl at least most of them i want to save it i'm going to kind of mix okay so let me start by adding my ingredients i'm going to try my best to give you guys a foundation of some measurements again once you get it in there you can't take it out okay so of course i have some residue of the onions and the celery in here but it does not matter it's all on the same place so let me start with my mayonnaise my dupes and i'm starting with oh we're going to start with about a cup cup of mayonnaise okay i don't know some people get their dressing if you will together and get everything mixed up and then they add it to their potatoes but that ain't how my mama did and that's not how i do it so but feel free to do that as well okay so that's a couple mayonnaise uh sweet cubes see we're going to start with half a cup of sweet cubes and yes i like that extra juice i don't drain the sweet cubes before i add them i like that extra juice okay for sugar let's see this is one tablespoon two tablespoons of sugar [Music] let's start right there uh cracked pepper just to taste cracked pepper let me grab my eggs this is my we did the six eggs y'all i like eggs so we're gonna add all the eggs add them all so that was six eggs let's see we're gonna add why i didn't have this off already the diced pimentos huh oh yeah it's tight okay let me run this under some hot water while that's running under hot water is there anything else i wanted to and when i mix and i start off just kind of folding all of my ingredients together open now thank you honey y'all i had to call for reinforcement i could not get that open okay so the pimentos drain some of this juice off here okay with the pimento that's about a tablespoon okay so [Music] now we will continue to fold so okay let's see i need a little salt a little salt i'm going to go on and add the rest of this onion since i have it here we're going to add the rest of it celery hmm i'm going to put the rest of these potatoes in here [Music] a couple more tablespoons of sugar let's see where we are now i think i'm gonna add some more [Music] um some more of the what it called um cute that's what i'm trying to say but this time i am going to let them drain a little bit before i add them because my consistency is good as it retains to my mayo okay and then sometimes if i feel like it's a little chunky i'll just kind of go through and just smash it a little bit okay let's see okay let me add more of the sweet cubes and most of the time you know unless you're cooking for a big family most of the time most people won't make five pounds of potato salad every time i wouldn't think the meat potato salad goes a long way and what so with me adding the rest of this relish i mean sweet cubes it was probably about a cup so we say about a couple sweet cubes so we had a cup of mayo a couple sweet cubes three-fourths to a cup of um onion cause i added the rest of that onion and then about three four cups so give a give or take of um okay so we used all of the relish i mean sweet good with the egg 60 i think i want to see a little bit more of my pimento so we added two tablespoons of pimento again you guys your personal taste anything i've added you do not want it to knock us that one cup of mayo was perfect okay let's see what we're tasting right them i'm sorry guys don't y'all have a fit don't go in with them sugar so this is five tablespoons of sugar you don't want that much sugar don't put that much sugar just go if that's not how you like it don't do it don't do it oh my my you are potato salad tastes even better after it gets and no we do not mama did not add mustard to her potato salad i know a lot of people do that help yourself but we don't do mustard we don't do vinegar some people do that don't do that again whatever tip is your face okay so let's do this taste it again that's good that's good and it really helps and makes a difference when you season your potatoes okay so let me get this bowl cleaned up so we can make this look presentable and now y'all know good and well it ain't potato salad without that paprika sprinkle sprinkle on top of it y'all already know right gotta have that paprika on top of your child and ordinarily i would not have this in this plastic bowl like i would not serve it in this but i have to separate it for my family to pick up so just to chill it right now and get it cold i'm gonna leave it in this plastic container and just put a top on it and put it in the refrigerator [Music] just a good okay of crack pepper on the top oh already no look at that there y'all know the dill it's that tater salad y'all so until next
