welcome to the backwoods score made today we're out at our sporting clays Club it's breakfast time and today we're going to do sausage gravy with biscuits right in the same Dutch oven we're gonna do it for two so stay tuned [Music] like I said today we're going to do sausage biscuits and gravy today we're going to do for two people around to use the little camp made number 8 or 8 inch Dutch oven I did a video some time back and I leave you a link here where we made a Dutch oven meal for two mountain man breakfast for two and that same Dutch oven it was very popular so I figured you know a lot of times a lot of times you know it's just me and mr. backwoods to go out to the woods and want to want to make a meal but we don't want a bunch of leftovers so that's where that little number 8 comes in real handy and I've already got it going over here on some charcoal I'll show it to you real quick started getting hot the little number 8 this is a camp made maybe I'll get one from Lodge 2 and do a little review on that I've already got that preheating over here on the large Dutch oven table right behind me so let's get after it so here's our initial setup I just got the coals spread out okay and we're free heat and we're looking for bottom heat we got that bottom heat going in there I'm gonna go ahead and start putting in some of my homemade sausage now I'm just about a pound in this package might use about 3/4 of that maybe a little more you've got it remember I got to leave room from a biscuit we're gonna go ahead and start just cutting that in seems like it's going breaking it all up [Music] over here I have my lid and my Lodge four-in-one it's important when you do biscuits their short work time a cook time so I like the I like to preheat this lid just get things going a lot faster and you're gonna get a lot better rise and brown this on your your biscuits you know if you cook biscuits in the stove and cook them in 450 degrees so we want to put as many coals and will actually fit on that lid all right we might have to move a few of those pick it up and get it on the pot once we put the biscuits in we got plenty heat going over here on the sausage but we want to do that as soon as our sausage is starting to brown go ahead get that lid it's more hot so this is my homemade sausage and it's very lean so in order to get enough oil in there to make gravy gonna have to put some butter and I got some more if we need it we need to you're gonna make gravy you gotta have a wolf to make gravy and this place said this is made from straight pork butt so all the fats got in there whatever it was in that pork butt we're gonna have to put some more in there to make gravy with [Music] let's cut down very nicely now I'm going ahead go ahead and just spring start sprinkling in some flour and then break make gravy you need the same amount of flour as you have oil basically we want to soak up all the oil with the flour and they want to cook that flour and oil completely so it doesn't have a raw flour taste so it looks pretty good and we're gonna keep stirring that around make sure all that flour gets cooked so just to make sure just facilitate that cook them of the flour I'm gonna go ahead and put the lid back on art on there for the first time for just a little while we'll keep an eye on it all right spend a little minute there and I think all my flowers cooked nicely go ahead and start adding some milk I like to add it gently and you want to bring that glaze up off or that bond up off the bottom of your pot for this cold Mill now it's also suck the heat out of your pot so I like to get it come up with gravy start thickening first make sure my ponds up all the way [Music] all right and then we can go ahead and then add it back to consistency [Music] looking pretty good I did put some black pepper in this [Music] I want to get it to soupy though that's looking just about perfect what we're gonna do here we're gonna cook up this Keats right on top of this cheers to another tablespoon [Music] now obviously you can do your biscuits in a separate Dutch oven but I learned how to do this and got several videos already on our channel how to cook your biscuits right on top of your gravy and it always for me turns out awesome but if you don't want to do that go ahead and took the biscuits in a separate dish of it so I've made some biscuits from southern biscuit mix I did that it at home because I knew I wasn't gonna have a good place to do it out here at the club so I went ahead put him in a cut him put him in a container and keep him cold in a write on ice in the cooler so they won't rise on you alright and then we can get maybe five we'll see I think we can squeeze them in there five in it got one left but that's okay now let's go ahead with tap it first drop any ash off the edge I'm going to keep an eye on that because uh you know with the level and this is a actually eight inch shallow so that lids gonna be pretty close to them biscuit so we might have to pull a few out of this metal here matter of fact I'm gonna fill had to do that now until they've had a chance to to come on up cuz that that middle is already hot from those cold feet and laying on there so maybe we'll put one now at the edge but the thing we got to do now is get something to heat off the bottom so I'm gonna go ahead and lift it off all that bottom heat I had it all a lot of bottom heat alright and I'm gonna reduce this down to one ream about the size that the oven whatever size you're using so it's early it's uh time of day where everybody likes to come out in sheet so you're gonna hear a lot of sheet even though there's only members today but we have quite a few members and everybody has their directions to stay separated from each other [Music] so we'll let that go for a little bit then we'll keep an eye on it so going in there and taking a peek and we're starting to brown a little around the edges so make sure I rotate that lid and I may just pull a few of these toward the middle and make sure they're spaced out very evenly all right let her go a little bit about four minutes just go ahead take a look they are starting to brown that really nicely so what I'm gonna do right now is just go ahead and I'm gonna just butter those tops a little bit got some softened butter here I smeared all over [Music] smells tell you that the butters gonna let them keep going a little bit without getting tube around to cook it nice and evenly now set a 1/8 inch deep would be awesome for this but we're using what we have so they will try it again stir after we get us a new large 8 inch deep [Music] so it's Buppy bomb time this I think it's gonna be one of those rare occasions no hey that's my microphone not smarter toy no it looks like a cat no you just won't let me film you will well that's your off-camera [Music] I'm going to go in and take a look those biscuits look friggin perfect so I'm gonna go ahead and I'm just gonna set this thing off the fire leave it on that nice warm table just take these coals out from underneath leave it right there let's let that thin off a minute and we'll be ready [Music] all right let's go in there and get us some of that that's Gradius oh nice and thick then we're just gonna serve it right up on her plate just like that nice and steaming hot so yeah I mean steaming hot biscuits look beautiful let's go ahead and give it a try Wow I would talk but I can't stop eating this you want to buy two that I know you do you know the gravy is not soupy and it's kind of what I was shooting for since this camp food you know and it helps the biscuits cook better but it turns out really nice and thick like that taste Wow so if you like what we're doing please smash
