LOWER CARB MOUNTAIN MAN BREAKFAST FOR 2 IN THE DUTCH OVEN

hey welcome to the backwoods gourmet today working on to make a lower carb mountain man breakfast for two in the number-8 dutch oven so stay tuned [Music] well guys with all this stay at home orders you know figured we'd come out here and I've been thinking about this recipe for a while now I love a mountain man breakfast but I wanted to ease it back on the carb intake there so I come up with this and I'll show you what you're going to need to make a mountain man breakfast that's gonna be a little bit lower carbs so today's mountain man breakfast is going to be ham we got a nice slices to some we smoked we smoked a whole ham and then we slice it and in a vacuum pack it individually I got a couple strips of bacon those are going to be garnish and as everyone knows every good touch oven dish starts out with bacon I have a large sweet potato a medium onion a little bit of butter some shredded Monterey Jack cheese use your favorite and our 8-inch Dutch oven right there it's ready to go okay and uh then I'll show you how to prep so the first thing I want to do is go ahead and peel my sweet potato I bought with these magic feelers you might have seen them advertised on YouTube a while back they're not all that but they certainly don't work as well as they did on demonstration that had on the commercial but they do work pretty good this big one here is fairly good for doing tough items like a sweet potato you certainly do not have to take the skin off of it if you don't want to all right so there we go nice and peeled we clean this up I'm gonna move on to our onion let's take the bottom off take the top off this is a sweet Vidalia Onion outside layer on go by the way I have someone go ahead just cut my onion in half in this case I'm just gonna cut him in half again that's pretty small guy and I'm gonna chop them three course somebody left a comment I guess they think my new cutting board is made of glass it is not it is a plastic board all right now that was the easy part if you ever tried to dice up a sweet potato no it can be kind of difficult so I'm gonna try to take it off and about maybe like 3/8 of an inch to half inch slices and I found that's easier to get one side started then you got a flat side to work from and even with a very sharp knife like this one it still takes a little rocking action because I flounder that rocking action really helps [Music] all right so I have appropriate amount of coals I started about 15 just to have a few extra using Kingsbury so you know how it burns down they really need 16 actually I got about 19 here actually leave I counted properly so to start this out I'll just use my one layer method and keep a little space in between them all I like that because we're gonna start out with some bottom heat let's get the Dutch up I'm using our log Dutch on the table today and lodge four and one to put our lid on and I can't made 8 inch touch of it [Music] all right time to go in there with our friend bacon I want to lay these strips out I want to keep them nice and flat but these are gonna go back on top I'll show you that won't get there you've probably three of them in there at a time let's throw the other one they're just they're gonna shrink pretty fast [Music] all right so the one thing I don't want to do at this point is cook this bake until it's crisp I want to still keep it a little limp but I want to brown it you know on both sides but it's pretty good cuz this is gonna go back in our dish let's go get it cook a little more these fattier ones though I'm I'll leave just a little bit all right so we pulled our bacon out that will go and go ahead stuff our ham in there wanna feel a little bit of brown on that just stir it around just to kind of render a fat off of it just a little bit [Music] that smells good guys say that if you're here I in with our onions they're dead man give them a couple of minutes this point we're gonna head put a lid on still got all bottom heat this right now [Music] [Music] well there's onions to pick up just a little bit of that font and the bacon and a hamon box you see I'm already doing that little thing another three four minutes all right couple more minutes going really good in there go ahead might not need all these sweet potatoes we gotta leave a little bit of rim okay probably gonna be fine all right sometimes I find with this little 8 inch run out of real estate pretty quick but I want to definitely get them all mixed in there with the onions and ham really well [Music] alright one more thing and then with just a little bit of our butter help just get everything going now we're gonna set up with some top you pull up the oven there's a number eight and we're gonna go Cole count method on that so I always finds just easier getting pretty good already I'm just gonna go ahead put solid ring all the way around the top but we should have when we do that this is the number eight we're going to add three to the top we should end up with eleven coals and a number eight on the bottom we should have five left and we do we're gonna make a green just about this size actually have six I had remember I had an extra one or extra couple so we'll pull this little one little guy out five on the bottom eleven so we got twelve on the top well they burned down a bit now with all you've been able to get eleven on there if we just started her down with full-size coals right now we pretty much walk away with that from that for a little while about five minutes and I just realized we can put any seasoning on this yet so you know already soft enough no now we got some good season in they're gonna live back on some more time and a correction to back into the ingredients we forgot you know I need to beaten eggs large eggs so we got those ready [Music] keep it oh you'd be good are you gonna say hi to the folks on YouTube mommy put a dress on you I guess she calls it a t-shirt being lazy this morning are you trying to get that off yeah I don't blame me it's hot I actually put it on her cuz she's got a little spot on her side she's been digging at kind of keep her from digging at it the medicine takes hold [Music] so it's been a total of eight minutes since we put the lid on we're gonna go ahead and check it now these sweet potatoes do not take long as soon as they're fork-tender like that we can go ahead and put in our final ingredients comes our two beaten eggs with just love that a milk pour them right down in there that's going to kind of hold it together I'm gonna bring back our bacon kind of lay them out lie on top that sir unfolded alright I'll let that go just a little bit and that'll finish Crispin the bacon given that a few minutes to get our eggs moving in there and there are already looking pretty good now what that's why you put a little bit of milk in them they will puff up and make it nice and light and airy going on top with our cheese use your favorite alright this is some Monterey Jack mrs. backwoods can't for some reason tolerate yellow cheese's but she does white cheese is just fine so that's why I use them a lot and just a little sprinkle someone else mop right on the top we're almost ready [Music] I've been like a two and a half minutes three minutes to put the cheese in we don't want to overcook our eggs this want to melt that cheese down that looks freaking beautiful I'm going to go ahead and take it off let it cool down [Music] so since Makita died a welt little while back the Cuban and old population has pretty much grown unchecked around here and little Cabella is just now starting to get kind of interested in chasing them so we'll see how that all works out but McKee they used to keep these guys ran off quite a bit but so we got some big ones around here everybody always notices them up here on the screens of stuff and so I thought I'd show you this one don't they want to okay let's go ahead and put this on a plate get in there shot me on a nice piece of it [Music] and ham and sweet potatoes is already delicious on its own now we turn it in at breakfast garnish a little sage leaves right there there you go low-carb mountain man
