today we're making pizza and the expression go big or go home has never been more true and I mean that from the bottom of my heart because we're making a stuffed crust garlic bread pizza and we're making our own sauce and our own pizza dough so if at the end of this you don't know your way around a proper pizza then you're blindfolded gagged and stuffed in a corner in a house in Cleveland unfair to Cleveland sorry there was one guy that tied up people and had him in their basement so shouldn't have referenced that suffice it to say you're gonna know what the [ __ ] is off when it comes to pizza after today we start with our pizza dough wait we start with our garlic bread pizza dough it just the whole thing starts in a processor and we begin with 2 cups of regular all-purpose flour that should look about like that to that we're gonna add 1 pack of instant yeast there's instant and then there's the not instant and we're definitely using instant and then it goes and then of course a big pinch of kosher salt tablespoon of regular sugar it looks like I know it looks like a lot but it's not coming out very fast something's stuck there yeah that the garlic bread part will begin with some oregano maybe a tablespoon and then a couple cloves of fresh garlic 1/2 and we mix so the goal here clearly is just mix everything together now we'll add our wet stuff and it consists of tablespoon of extra-virgin olive oil quick mix and then 3/4 of a cup of water somewhere between 110 125 degrees because any hotter will kill the yeast and we'll get it running drizzle it in slowly and you're gonna hear it start to sound different we let it go for a second we stop it we take a look still a little bit extra sticky so we're going to add a little bit more flour so we started with 2 cups of flour we're going to add up to an extra half a cup to get it where we want [Applause] [Applause] perfect it's exactly what I want okay so out it comes get it all into our hands yes you'll make a lovely little ball out of it coz we want it in a perfect shape love this the smell of this is insane right now chili from like five feet away commented on the garlic and the oregano on this we drop it into a greased bowl grease with just a little olive oil on the outside now we'll grab some cling film or saran wrap or whatever you call it put two pieces over the top because we want it to be snug could somebody make this look at this beat myself over the head with this Oh like a hole yeah convenient it's all snug and now this will go in a warm spot for 40 minutes to rise we just made pizza dough our own garlic bread pizza dough in three minutes look yes it's gonna take 42 rise a bit but come on before now some of you may have been going to the store and buying that tube of easy roll-up pizza dough I'm not saying there's anything wrong with that I'm just saying with a couple simple ingredients it's 11 o'clock at night you're sitting at home and you're like [ __ ] if I only had some pizza dough right now and then you go oh my god Sam showed us how to make it it takes three minutes by the time we we figure out what the hell we want to put on it this is gonna be ready we're eating extra special fun is that right max yeah okay now we're making as I promised our own tomato sauce I call this everyday tomato sauce recipes on the website the cooking accom this can go into so effing many things it's ridiculous but it starts with some onions sautéing in my pot to our beautifully sauteing onions it's but one medium onion diced up with olive oil we add garlic three fat cloves we mix that in and after about 45 seconds or a minute when it starts to get really fragrant we'll add our tomatoes and those are whole peeled tomatoes that I buy in a can they come like this but I like to squeeze them before I put them in just break them apart with my hand a little bit before I do that I like to just drain then I find it easier and then it's just a mess but it's the thing to do just grab one in your hand and squeeze it of course you could use a spoon or some [ __ ] like that but what God gave you the best implement ever right at the end of your wrist so use it but it does splatter bit so definitely be a little careful and these are San Marzano tomatoes and they're exceptionally good doesn't really matter what brand you buy but if you're gonna go for good I would look for San Marzano they come from the San Marzano region of Italy and they're the best s'okay those go in and after a quick rinse we had a couple tablespoons of tomato paste that I like to keep in a tube because it's easier than a can and stores simply a couple tablespoons of balsamic vinegar maybe a little untraditional but really good and it's worth buying a good balsamic vinegar and it's a little thicker a little more syrupy but a half a teaspoon of red pepper flakes like that tablespoon of dried oregano a tablespoon of sugar and kosher salt fresh ground pepper you know its next max okay correct and we mix so here's what we want to do we want to mix it well you're gonna bring it to a boil I'm gonna turn it down to a simmer we're gonna leave it for about a half an hour usually when I make this I make at least the double batch very often a triple batch I use it for things like pizzas it's outstanding for that have you ever made shakshuka have we ever made sure yes chuck chucka is like a Mediterranean breakfast dish eggs that are nestled gently in a really rich absolutely amazing tomato based sauce like this and it's baked in the oven it's an credible look there's just a million uses for a meal of course pasta yes you just even like an amazing good garlic bread dipped in and then eating that kind of thing so I make a triple or double batch and then I put it in you know these containers and I freeze it you you want to do this just make a [ __ ] ton of it it did look out with five minutes of five minutes of work thirty minutes of waiting and then it's perfect and now wait till the people where you get those containers by the way Oh max says tell where I get these containers so I have a bigger one look I haven't I haven't been all sizes any any chef store any chef store and regular people civilians can go to any chef stores or order them online they're called deli containers they're perfect look they nestled perfectly you can fit them into each other the lids are all exactly the same you get the biggest one this lid will fit it's not like purple lids for that size and orange lids for this one and glass in the weird snappy [ __ ] on the side so if all that forget it just get these get delis as we call them in the restaurant business or this business or this nonsense that I'm in just get delis you'll be very happy with them we can put a link there in my list of must-haves kitchen must-haves they're in there go to the bottom of the video it'll be there so now look the sauce is working the pizza dough is rising when these things are finished we put this thing together we slide it into the oven unlike sliding into my DMS we slide the pizza into the oven and then 15 minutes later we're eating large super large all right we're there but I just want to show you the sauce first because it's thickened up so beautifully just check look it look it and the thing is is if you wanted it smooth look you could put it in a blender you could put a hand blender in here you'd do whatever you want I like it with texture so I leave it like this but I'm telling you this is absolutely the oh it's heaven and I'll tell you why it's heaven it's heaven because there's the sweet that comes from the little bit of sugar and the the really good cuz that's called happens about three times in Episode Bible what is that stuff called that black stuff I poured in here pepper Noah poured liquid salmon it gets the sweet from the sugar and that balsamic vinegar and of course the vinegars got that little thing it's got the the spice from the the red pepper flakes and then the acid that the tomatoes I'm telling you if you said to everything in this episode except this you'd be a winner you'd be set you're the one sauce that does about 14 things but we're not stopping there we're not by the way you want to add sausage to this go ahead you wanted meat to this go ahead okay but here's our dough here's our pizza dough and after about 45 minutes this is what it looks like drum roll please and boom okay look I know it's not that exciting but it has basically doubled in size and that's what we're going for and that this you get you get that yeasty smell in here which is really good and now you get to do this cool thing called punching it down that I do with two fingers and I poke it and that deflates a bit and it looks like this goodbye so here's what I'm gonna do I'm gonna take some flour put it on here and get the dough out again making into little ball and you see the Flex you know what that is what is that everybody come on say it with me garlic well yeah and the green thank you it's oregano okay so now here's the problem we have is well not that the least of which is that rip that just happened but I need to spread this out and I've got to get it on the something to bake on so maybe I shouldn't have done this so here's what I'm gonna do and the boy I've kind of screwed myself here man you get some parchment paper out she's gonna pick this up put on the parchment and now we should be okay so now look please don't put in that so I say too much we round it out as best as we can remember I said stuffed everybody remember I said stuffed here's what stuffed means stuff means that I reach back into my childhood and I bring out cheese sticks and in this case jalapeno cheese sticks I say it all the time if you're gonna add something one you had something with extra flavor mozzarella sticks would be fine sticks with jalapeno in them is cheesy and a little peppery it's extra flavor so this should be simple we peel each of these oh boy oh my gosh should have started the video like an hour ago to do this so here's our goal we're gonna take a stick they're not really curved we're gonna put them all the way around the outside so I know sometimes I say this max please speed the [ __ ] out of this up cuz I'm even struggling getting these damn things open so there's awful can you imagine the little kid the mother throws him one of these things the kid can't get it open she thinks she's calming the child down he's screaming I'm hungry I'm hungry she hands on one of these and gets know where the kids screaming louder what's wrong what's really can't open it it can't open it I just want my cheese stick and then the kid gets it over he digs a bite and he's like four and it's a jalapeno and it burns them hard being a parent they're really not gonna Bend for me are they oh I could put like a little crack in them but I suppose they need to touch right yeah that'll work okay so six hours from now when this is done it looks like this okay we're good now we do this now we take our dough we spread it over the top and once we get it there what I can smell the garlic and the oregano in this dough and it's making me very happy so once you get your dough spread over the top then we go back and we pinch so it's closed you close the circle of cheese ladies and gentlemen is what we do we're closing the circle of cheese so that's done or a crust is stuffed I'm just gonna lightly poke some holes I'm not going all the way down just to try and keep it from getting too puffy in case it wants to because it does sometimes now comes our sauce and that's gonna look like this now look I'm not trying to put on 25 pounds of sauce I got enough stuff that's about to follow it but I do want this really super delicious layer on here so this is gonna be enough okay sorry try not to say okay now we had some cheese first up we're gonna go maybe a cup of Parmesan cheese and on top of the mozzarella because we can and because we should will add another cheese or another two cheese's it's actually a combination of parmesan and Romano or as Giada De Laurentiis would say putting me chung all a tied channel all over that not too much we don't need to go crazy and then ladies and gentlemen what we've all been waiting for or what max has been waiting for boom our pepperoni that we're gonna cover this pizza with watch too much max is it too much you think you're good here look I mean there's a legitimate concern about not enough pepperoni you know sometimes you'll get a pizza and and then the the pieces don't cover everything and then there's like two slices left and one's got three pieces and one's got one and then you're kind of like fighting and who gets it and you don't want to be a creep but you want it and you don't want the shitty one and you don't want to pull one off and then so when you got decent coverage and I think a lot of hundred percent certain max you be the director at this point you tell me when you're comfortable with enough pepperoni on this baby really it's not even a pepperoni pizza anymore it's just a pepperoni we can hate one child stinking pepper oh that works that works one last little touch oregano dried because why not beautiful and then we just have to slide this kid onto a baking sheet I'm not f it up so max if you don't mind how about if I go right in front of you just like when you see they pick up a guy that's fallen and can't get up on that blanket thing and put them on a gurney that's the goal good lord tell me when you're ready one two three perfect and there she is my oven has been heating for a half an hour I wanted good and strong it's at 450 degrees it's gonna go in for about 15 minutes until it's gorgeous we bring it out and then then you know what happens I did all Mexicans nothing and after about 15 17 minutes there's our child yes it leaked a bit and that's okay frickin gorgeous but we have one more thing to do look what I made max garlic butter and where's this going on the crust just to shine it up a bit like what do would we garlic bread stuffed pepperoni pizza I mean we're just enhancing the garlic bread aspect of it a little bit because the cheese is in the crust the crust is gonna be extra good so we'll make a triple e extra good triple e extra good and when that's all on now let's try and get this kid off might be trouble in paradise max nobody freaked out nobody freaked out let's do this let me get them off of here first now off of here oh here we go there we go there we go there we go are you ready one two and three holy mother of pearl and we need to have a bite so let's not waste any more time let's do this you look at our melty hole in there melty hole a jalapeno cheddar cheese ring on the inside melty cheese back here garlic butter crust garlic butter dough the whole damn thing max please can I have a bite please please please clearly it's time I've got cheese melting in the the tunnel I've got garlic butter on the outside I've got garlic bread style type crust with oregano on the inside and I got a bite the sauce the crust is a 12 out of 10 it's a 12 out of 10 this is luxurious oh my god I don't know why I've never put garlic and herbs in my pizza dough while I was making it before but I can assure you ladies and gentlemen from this day forward with God as my witness I will do that anybody get that Rugrats nobody remembers Rugrats you watched it when you were little that's that's that's what the the little girl would say yeah not witness witless there's a funny line that oh my god okay thank you thank you and thank you I got nothing I got pizza to eat another episode to shoot crushed to savor okay okay so now look please don't put in that so
