you're Taco Bell this should be a Crunchwrap supreme what if you took Taco Bell's Crunchwrap supreme but made it a surf-and-turf version and way freakin better and that's what we're doing I love the idea of this I haven't actually done it so today is an experiment ladies and gentlemen but I think it will be a successful one and if we learn anything if at the end of this it completely sucks you will be encouraged to try things that you don't normally do and we say that all the time don't make the same thing don't eat the same thing try different things getting out of our box today with something we've never made but the components of it make perfect sense but I'm gonna be honest with you there's a lot of stuff going into this here's a little sample some of the stuff right here I'm using three pieces of equipment I'm not just using the Evo which I use a lot I'm not just using my caliber grill designed by David Rockwell so the lid goes flat all the way but I'm using a Philips airfryer to cook something crunch wrap supreme we're bringing the crunch two different ways we're gonna start by marinating some beef and here's what I'm using I'm using beef boneless short ribs you look you've seen me do this before they're my they're kind of my my favorites beef de jour which means of the day in French and look it I've put them in the freezer they're not frozen but they're easier to cut so there's four pieces in here I'm just gonna cut a little bit of this extra fat off and then I like to just cut this stuff thin and you see the deal is is when it's frozen it cuts so much nicer so we've got a lot to do today so we're not I'm not gonna say so I'm trying not to say so we've got a lot to do today we don't need to take time showing 20 minutes of cuttings well snap our fingers and there it is and once it's done and slice in your bowl we add the following some neutral oil seasonings such as dried oregano garlic powder ground cumin that my friend Dave swears smells like stinky socks I think one of the best things ever and some red pepper flake and the one last thing that we're gonna add is a little soy sauce just that so we mix everything well use your hands I think I've said this before you know the amazing thing about hands is that not only are they extremely dexterous that's cannot be a word I just make that up dexterous not only are they extremely dexterous but they're right there you don't even have to reach for them they're just at the end of your wrist you reach it's there I need a hand here it's right there how fast that happens okay so you've got this right dime now off to the side and we leave it and we let that marinate now for well again how much time have you got did you forget and this is last minute then fine cook it's gonna be great do you have two hours or four hours put it in the fridge cover it up it's gonna be fine whatever you've got you've gots obviously the longer is better but now we move on to our Mexican dish rice we're making it ourselves we start with about a half of a medium onion diced up in a pot on the heat there's a little oil in there of course we wanted to soften a little bit and when the onions are softened we make a little space add a little splash of oil some garlic minced and let it start to get super fragrant and when it does we mix it in and oh how glorious the smell is and then we add our rice that's a cup you want to stir we want to start to toast it just a little bit and as you mix and spread it around now we'll add some seasonings that will consist of a little more cumin little chipotle chili powder come on come on come on come on there you go there you go there you go attaboy attaboy I have way too much stop salt and pepper that's supposed to go in the pot not on the Evo you mix this together the seasonings are doing all the right things to this rice as it toasts and right when you start looking at it thinking that's awfully dry we add our liquids a jar of diced fire-roasted tomatoes with liquid and those were petite diced a cup and a half of chicken broth and half a lime squeezed in beautifully so happy about this bring to a boil turn down to a simmer cover and leave for about 20 minutes it's shrimp time the surf and turf Crunchwrap supreme so we're making shrimp we could just easily like cook the shrimp on the evo you know and walk whatever but we're going for the double crunch we're gonna get these guys super crispy we're gonna bread them they are going to be so good here's how all this stuff goes down it's a standard breading station look we've done this before fried chicken sort of and whatever so I've got flour here I do need to season it a bit so I'm gonna give it some salt and pepper mix that together second stuff will be beaten eggs and when I say beat the eggs you hear me hitting the bottom if you just do this you're just stirring them and whether you use a spoon like I am or a fork that way everything's nicely beaten and you don't have a big you know huge whack of unbeaten white or yellow or whatever and our panko or favorite Japanese breadcrumb it replaces all breadcrumbs in my house honestly it's the only one that I have and I certainly do not work for the panko Marketing Board though I'm free to have a conversation any time you guys want look the panko Marketing Board and the QP people could come together and have a conversation with this boy from Canada suffice it to say we're fans but now we have our shrimp and here's what we've got 31 40s which means there's between 31 and 40 per pound I like the idea of a bunch of smaller ones than bigger ones and I'm not being cheap I've got big-ass shrimp inside I could have used them but I like the idea of these and it's a very simple process we go into the flour into the egg into the panko flour egg panko flour egg panko like this so I'm just gonna drop a bunch of these in we get them coated with one dry hand and then when they're good and brushed off into the egg use me as a guide you want to change something change something you don't want to use shrimp use pieces of lobster you don't want to use pieces of lobster use tofu use bits of chicken what do I give us how you do this just think of me as a guide and it goes now you got to get a hand wet so I'll use my other hand for the way and then a couple at a time will come out we'll get the extra egg off we'll drop them into the panko will repeat will coat I like to make sure they're coated well and then we'll put them on a plate then finish off the rest of them our rice is looking gorgeous and I can tell you right now the chipotle chili powder is making all the difference in the world in here it's got a little more cooking to do but it's gonna be great so that will sit there over here I have old-school refried beans honestly they're my favorite I know the black pinto beans are very like in their healthy it comes with a side of beans Oh are they refried or they the black pinto through the black Pinto oh I'll have those give me refried beans any day and I'm a happy boy so I didn't make these I can make these but I figured I had enough going on that I didn't need to make my own beans so we're warming this rice is finishing the the beef is marinating the shrimp are ready to go into my air fryer that I'm gonna get heated up and I know I said I was using the caliber grill designed by David Rockwell but I got confused with another episode that we're shooting we like to shoot two at a time so well technically I'm using it because it's holding my rice spoon I'm Matt so while that heats up and I heat up the middle of this thing because we're gonna cook our beef to get everything happening let me just tell you something that happened last night I was at a charity dinner that had been auctioned off at some of us Cystic Fibrosis event that I was at a few months back there was a dinner for 26 people I was paired with Fleur Franco a really good female Mexican chef here in San Diego and I was there to do cocktails really I was just the I was the help and it was super fun so just imagine a long table 26 people boom 12 down on each side and a guy at that Inn and a guy the same so my first round of cocktails as they come in they all sit down is a Mitchell I died a Pacifico beer mixed with the Clamato juice which is like tomato juice but a hundred times better and some pickled green beans and some lime and a little oyster Shire sauce so I make all these I've got a tray and I now start to deliver them and the first guy go to right at the head of this table and I put it down he ignores me in fact he doesn't say anything and I say because I'm a stupid smartass I go you know now would be the time to say thank you and he turns then he looks at me and he pushes a button on his throat and he goes thank you I'm not kidding you it's a hundred percent me and so at that moment you have a decision to make well how do you deal with it do you just go oh you just go to the keep delivering drinks I go out loud because at least I used half the groove heard me I went great the first guy I serve has to be this guy and then everybody laughed and he was my best friend the whole night we bonded like that here's the lesson just embrace that head-on try not to put your foot in your mouth look every time I I made it at an event and I have to speak in front of a group of people and they go ladies and gentlemen Sam Zion Sam the cooking guy if Kelly's there she grabs my arm and she goes oh my god were you gonna say and I go I don't know I hope it's nothing stupid I have no governor on my mouth I really don't know hashtag no filter what comes out comes out okay so come over here max we're gonna put these in the airfryer so this is one Phillips earlier airfryer's still a great one and really think of it it's just like a convection oven here that you hear the fan spinning when I open it up so now we just take the shrimp and we set them down inside and because it's this little wire rack that lets the air heat all the way around we don't have to turn them which is clearly a bonus but if you look in there do you see that star shape thing so what happens is is that there's a fan in the top it pushes the air down it hits the star and then the air comes back up and heats evenly and if it sounds like I know what I'm talking about it's because I do and I did a Philips infomercial for this air fryer and I'm a fan and I'm not being paid anymore so I can say anything I want and I'm only gonna say good things because I believe in them and if you have an air fryer and you're not using it get off the stick Johnny and pull it out and do something with it okay they're in we're set to 400 and now we're gonna turn this to about 10 minutes it's that simple hey look it's just a giant drawer you set the time you set the temperature and you walk away in fact we'll put a link if you want to go check them out well now that that's cooking we can think about cooking our steak so that's gonna take 10 minutes we're gonna wait five then we're gonna cook I could just eat this right now why can't you who says you can't eat this steak tartare what's it made from it's made from raw beef that's got some seasonings holy crap is that good if you had issues with my using soy sauce in the carne asada this is not called carne asada I just want you to erase those from your mind and use this think of soy sauce or Maji I think that's how you say or Kitchen Bouquet as one of those things that you can add at the last minute just to boost your flavor that's what it's for you dig three minutes from now this steak is going on that Evo just before we put the beef line check this out oh hello and look same-same no need to turn it hey Phillips you got your down I I can eat one oh my god yes I'm crunch no oil therein lies the beauty of an air fryer no well okay the beef right here oil spread send the beef so we want to spread it out [Music] this is not gonna take long it's super thin doesn't need a lot it spit on what like a minute I have this thing pretty hot but come on when you cut it this thin it doesn't need much get on a plate oh look it a couple pieces fell one for me oh grop max ready mm-hmm Oh what what mmm how good is that right and just before we build it stir a little cilantro into the rice and if you hate cilantro leave it out but all I can say is if you hate cilantro grow up and learn to love cilantro because it's fantastic let's put it off to the side and just get our tortilla ready we start by warming our tortillas slightly hello darling not a lot I don't want it crispy I just want it pliable so you know 10 15 seconds on one side then we flip and remove one of the things that makes a Crunchwrap supreme a Crunchwrap supreme is the crunch and for that we're using tostadas and we'll use three because this is a little bit bigger than a normal crunch wrap supreme because I'm using a giant tortilla on top of that we're gonna put the refried beans oh gosh I'm so happy about this so happy next up is our rice and I'm concerned I'm gonna make this thing too big so I'm gonna try and like hold back a little bit nice so far at this point let's add a little layer of cheese little not too much and then some of our delicious beef and then if it wasn't obvious the piece that's going to make this a surf and turf or run cheese shrimp if you could just hear them in my hand right now you'd be like oh my god I gotta make those you know as I spread this out I'm starting to worry we're gonna have enough tortilla one more layer of cheese and the folding looks like this oh gosh look what I've done I made it too big I've got a gap in the middle dang it there's a gap yes might be okay look we're gonna be okay it's gonna be very tight and very tough but here's what I want to do I want to add just a little bit of oil watch here to help this thing stick shoot I think I made it too big well here's what's gonna happen that's just gonna melt and be like a super crunchy little layer I have no choice I have to go with it I can't really make this thing fit anymore okay ready come on we're going face down on the flattop and we go say step there we go I think we're gonna be fine and after a couple minutes you hope that you can flip it in look at that you can even see into the little crater a little bit oh come on baby come on look at this hard melty cheese on the side this thing's gonna be the bomb and when the bottom is crispy and beautiful like this it's time to eat but you know as I put it down it's so a heavy hold on I gotta get the scale okay so here we go I have no idea what a proper Taco Bell Crunchwrap supreme should weigh but this one weighs was that say 30 ounces that's a 29 26 ounces so that's almost two pounds two pounds would be 32 ounces I can do that math we're two and a half ounces shy of two pounds I don't think they're that big this isn't ridiculous but then there's are also not a surf-and-turf version all right it's enough already it's wing there's another thing what did you hear that hey ready bless you Lewis all right here we go oh snap look at the crunchy shrimp look at the rice look at the beans look at that steak that's in there okay I need a bite I'm gonna make a wedge cuz it seems like the thing to do and then look what I get I get some of everything steak cheese shrimp rice beans everything in one perfect bite use all your senses when you eat and when I pick something up put it to my mouth and I get a sense of the smell of what's in it I get so excited mmm oh my gosh you know sometimes you can you get certain things first the spice the sweet though it's just a cacophony of everything delicious these bites of crispy shrimp insane the rice with the chipotle chili powder takes it over the top the beans are just a delicious rich layer at the bottom and that's take your Taco Bell this should be a Crunchwrap supreme sorry your Taco Bell this should be your new surf and turf Crunchwrap supreme by Sam the cooking guy a little credit I mean fine by s TCG that's cool - all right we may have outdone ourselves and by we I mean you guys and
