someone decided to put a can of beer up a chicken's ass guess what hey it's a pretty damn good idea so we're gonna do that I just wonder how that happened you're sitting around one day gonna cook a chicken you're drinking beer and you go hey why don't we just take this and it seems a bit odd at the result though is a pretty good chicken so a couple steps we make a rub we insert the beer and then we cook it in our case we're gonna smoke it I will tell you exactly what to do if you don't have a smoker and it will still come out delicious first the rub and it consists of some of my favorite rub friends chipotle chili powder I always love garlic powder some cumin clearly we're going in a Mexican direction here kosher salt what's your fresh ground pepper and for a little sweetness little brown sugar we take our finger and we mix now for the chicken here's our chicken it's about a four pound little organic guy it's gonna be fantastic I could just put the rub on it now and it would be fine but I like to put a little oil on first to help it stick but there's one little thing I like to do the oil before I put it on so in my small bowl and using our chosen foods avocado oil we'll put a little in here and then we'll add some of my favorite little hot sauce Cholula I say little because it's literally the end of the bottle but that's okay and then oops and then we do this and then we'll paint look it's not gonna do a ton but it's gonna definitely add a little bit so this guy gets all the way around we want to go under in the armpits suppose if that's what you call them they'll turn on if one little addition of the hot sauce brings more flavor then let's do it shall we why not turn the kid over and we're brushing and we're brushing and once you've got them nicely done the seasonings gonna be a mess so let's go straight to a baking sheet and take it from there so we go like that go like this now we season and we want to season generously so cooks and crannies and this side leggies wings under in this section the neck everybody gets this all of this guy will even throw a little in the cavity and when he's nice and covered you know it's time for max it's don't call it a [ __ ] be polite it's time to get it on the can doesn't it check it on the can okay here we go so the traditional thing to do is get a can of beer open it up and then take some out you don't want it full you wanted about there which is about there now there's two ways to do this one is the oldest school way you pick up the chicken so the traditional way the old school way you take the chicken and you take your can of beer and you set it down and then in this larger bottom cavity you put this over the top set the chicken down and you've got one leg and a second leg and the can and you basically have a little tripod the problem with this system as stable as it looks is that I can't tell you the number of times I've opened up the oven or the smoker and it's been laying on its side the beer all spilled and it's just a mess it's one easy cheap little fix for it and it's this a proper little Beer Can Chicken stand so here's the deal we remove the chicken like this we take our beer can we set it in here and then we inserts like before except this time look nothing's tipping this kid over no matter what you do it's perfect right so we're here we're ready he's all good he seasoned up now we go to the smoker lift him up pick up a stand bring our little friend in and in this case we're gonna take our thermometer probe come right into the breasts close the door and leave them and as I wash my hands I can tell you that the smoker is set to 350 degrees exactly where your oven could be set it's the same principle the only difference is going to give a little extra smoke through the process that's fine if you want to do it on a grill you can do that we've talked about cooking indirectly so if you have two burners like this turn one side off and this is where the chicken would go in that case you just have to turn the kid every 15 minutes or so so it gets evenly cooked if you have three burners you turn off the middle one you set the chicken in the middle same concept little turn little turn and you're happy so probably an hour and a half or so and it's gonna be amazing we want to pull it when it's about 160 degrees and then it will come up a few more degrees and stay moist and tender and absolutely delicious but before we pull it off we'll make one quick little dipping sauce just to have on the side with it when it comes out this is very simple sour cream a little Chipotle a little not a lot juice of one one aash juice of a lime both halves a little of the seasoning that we already made for a little punch and a big fat clove of garlic with super extra flavor and we mix like this is a familiar combination for me I like this a lot it will always be delicious for anything but just a little bit extra on the side to dip this chicken into I think you'd be surprised at how great it is done and the lime the garlic the little extra seasoning powder it's tremendous it's tremendous and it's a little bit lighter because we added a whole lime Institute's a half a lime if I was making this for a a taco I probably leave off the extra half a lime because I'd wanted a little thicker but in this case I wanted a little bit lighter and it's so good now pretty much we're just hanging and wait and we'll take a look in a little bit but for now sit back relax and wait for it to be done and after about 45 minutes here's where we're at give him a little turn outside why am I surprised at that forget it there's a backside you just can't see it Wow alright leave him alone he's doing this thing it's a hot [ __ ] chicken that's what it is but it's looking beautiful and it's coming along nicely smokey nice seasoning this is gonna be great and our little friend is ready we're somewhere between 155 and 160 let's take out harder take out the probe I think this is what I'm gonna do sit our fellow down oh it's gonna be fantastic close the door and away we go so here's what we have look at it go do a little fashion show spin was this and for fall this year our chicken is wearing a delightful coating of cumin chipotle chili powder garlic and salt what's a little brown sugar thrown in for good measure yeah so hot right now so let's get our little friend off if we can look destroying everything under the arms nope not don't want the can I don't want the can let me think about this there we go I got it on two one and two keep going keep going don't get stuck sorry and on two one to get pieces come on buddy come on buddy come on buddy and on three and on two and on Oh God like that simple so get this guide here go away hot can and now here's our guy we sort of want like this so here's what we want to do look at how gorgeous that beautiful leg like this little just this meeting here juicy out hot as boss they make these things called Forks I'm not really sure why I just one little bite one a little dark meat bite okay I'm talking about having chicken mmm let me show you if I can do this I could let it cool yes I should let it cool but I can't because I have to have it so let me just see this do you see right here max I went to pull the wing off it just it just separated like that because it's so freakin tender oh my god I mean look at it it's just this is some skin some okay if I can do this because it's so damn hot here's how I like to take off the breast there's the Norman Rockwell school of carving is this way I adhere to the door golden school of removing a breast which is to take the whole breast off I spin this guy Rama I'm just following the breast bone here oh it's so hot this is why you do this stuff wow what you've let it rest a bit and then or the final couple cuts wow it just lifts off in one final cut lets you take the whole breast off in one piece look at that that is glorious and now you want to cut a piece like that you've got some beautiful pieces right there but remember a little sauce come on let's have the sauce then like this then a beautiful bite juicy frickin tender you can just see that see the moisture in this this is not dry at all this has this chicken can't even spell the word dry and then that and that's a bite mmm okay both of these the chicken is a must the sauce is a mess and don't forget you can do this in your oven you can do this on your grill you don't need a smoker does it give them more flavor of course it does there's there's wood burning underneath but it gets plenty plenty from that seasoning rub that we put on it and this sauce well we've done it again I mean I've done it again I mean we of course it's we so thanks for hanging and thanks for
