hey everybody welcome back to my kitchen the holidays are here you guys the holidays are upon us and it's that time for even more bacon we've had a wonderful thanksgiving and now we are excited about the christmas holiday coming and i'm going to share with you a recipe that is one of my dudes dude number one's favorite he loves this dessert and this is a sweet potato pound cake he absolutely loves this cake and you guys it really is delicious any time of the year if you love sweet potatoes but especially around the holiday season so you wanted me to make it during thanksgiving but i told them sir that was not on the menu so i had to do it for christmas and wanted to share it with you guys now i've tweaked this recipe um until i finally i've gotten it the way we exactly absolutely love it and again i'm going to share it with you but any of the spices that i share feel free to tweet those to your liking because that's what i had to do okay and then a couple of other things that i did to you know really make it my own like we love it okay so you're gonna need some cake flour you need some regular sugar and also this recipe calls for light brown sugar as well and then we need baking powder and baking soda and we're going to use this new chatel cheese i don't know if i'm pronouncing it right right but it's not cream cheese you get it in the same area where you find the cream cheese but it is the new chatel cheese and then we're using eggs this recipe only calls for four eggs and of course i will have the recipe in the description box and then we have the flavors of ground cinnamon we will be having using ground ginger and nutmeg if that does not say christmas time or thanksgiving or anytime and then we have sea salt or just salt i'm just using my sea salt we have some pure vanilla extract we're using um unsalted butter and we'll only need one stick for the cake part now you guys one thing that oh also the sweet potatoes you guys are roasted sweet potatoes so they're here i need to take them out of the the sweet potato jacket and i've never used one thing i have never ever used i have never ever used sweet potatoes in a can never not for yams not for a recipe like this that calls for sweet potato i've never used sweet potatoes or yams that come in that can i always use fresh roasted sweet potatoes okay but i'm sure you probably could if you wanted to but that's i just like i want that i don't use that stuff in a can okay we will leave it at that now what takes this cake and my humble opinion over the top is this wonderful maple caramel pecan praline sauce that goes over the top of it and just soaks in the cake can we can we just pause a minute can you just imagine y'all it's wonderful okay so to make the praline sauce we're gonna need um some salted butter i will be using some syrup mrs butterworth and we'll use some pecans but y'all then i'd like to add some caramel so i'm adding some caramel chips to it y'all what you say you talking about some good eating so we're going to start mixing this cake up and it seems like a lot but you know it's it it is it's simple to do just follow the step by step um directions and it's just it's really delicious so we're going to get this mixed up so we can get it in the oven because i won't do number one when he comes in the house from work just to smell it bacon this is gonna smell up i love it i love it so let's get it mixed up now i will be baking this cake in my large this is a two pan and i'm gonna be baking the cake in it i think this cake is a little too large for like a regular bundt pan you really need this um your the larger tube pan to bake this in okay and as usual i don't want to try to talk over the mixer so the first thing i'm gonna have to do is get my sweet potatoes pureed so we're gonna get my sweet potatoes pureed and then uh the oven is already preheated to 350 degrees and then once we do that we're gonna cream the butter and the cheese and we'll get all that done and again i will like i say explain to you what i'm going to do before i get started so i will not have to talk over the mixer so let's get these sweet potatoes pureed up because i'm gonna need at least two and a half cups of sweet potatoes so i need to get them peeled and pureed okay now that our potatoes have been pureed we're going to start by adding this one stick of butter and then to that we're gonna add the new chateau cheese we trying to get every bit of it okay so we've added the cheese and we've added the butter and i'm getting ready to mix this until it gets a little smooth and then after i mix this i'm going to go on and start adding both types of sugar so i'm going to add the regular sugar and i'm going to add the brown sugar and then we're gonna beat that until it's like fluffy okay now this process is gonna take at least about 15 minutes [Applause] so [Music] [Music] [Laughter] [Applause] [Music] so [Music] so [Music] [Applause] [Music] [Music] mixed in our eggs and our sweet potatoes that were pureed now it's time to start mixing in the dry ingredients but also let me say this whenever you're mixing up a cake make sure that you periodically stop to scrape down your bowl i don't really have to do that with this mixer because if you'll notice that there's a scraper that's on the inside and the beaters move and the bowl as the bowl moves and turns it automatically scrapes it down so that's why i really don't have to do that um like i normally would and i still do it every once in a while because it's just what i'm used to doing okay so just make sure you always scrape down your bowl and always check the bottom two to make sure sometimes you have stuff that's that's not mixed up well and it's sitting in the bottom make sure that that is you stop and you lift your beater so you can get up under the beaters to make sure everything is has been well incorporated okay so now i'm going to get two teaspoons of baking powder and i'm just going to add it to my cake flour that i have here so that's one two teaspoons of baking powder so that we'll add one teaspoon of baking soda i'm gonna add one and a half teaspoon of my cinnamon snap one and a half i'm gonna add two teaspoons of my nutmeg all these spices smell so good and for my ginger i'm just gonna use only going to use about a fourth of a teaspoon of my ground ginger again with these seasonings you can make the necessary adjustments that you would like if you'd like more cinnamon less nutmeg or more ginger and less cinnamon hot whatever you want to do whatever tickles your fancy and then i'm add about a fourth teaspoon of salt mix this together now you guys i like although you know cake flour they say it's already sifted i still like to sift at least one more time that's just what i like to do so now that i have kind of slightly mixed up all of my spices i'm just going to sift it one time and again even this is personal preference it's just what i prefer to do so let me get it's gonna take too long let me give me a slightly bigger bowl it really does not take long to set this at all okay that's better see how quickly we can get that sifted and that's just one time and then we'll just put our flour back in our little measuring cup because that way it'll be easier to pour it into the mixer we have our flour and then all of our spices mixed in here the only thing we need to do is add this to the batter and then once i add it to the batter and get it very um mixed in well and well incorporated then we just add our vanilla flavoring and then we are ready to bake [Music] [Music] [Music] [Music] [Music] [Music] so [Music] [Applause] so [Applause] [Applause] you never want to over mix your cake batter you just want to make sure everything is well incorporated and i think it is so we're ready to get it in our cake pan guys make sure you get your cake pan spray very good and i'm using baker's joy this batter is very thick now that's my baby calling me wait a minute you interrupting my video make you say hey everybody say hey everybody i'll be back you guys let me talk to my baby i'm back so now we're gonna get this cake as level as we can get it smoothed out and you guys i like to try to kind of pull it back a little bit from the little tube that's going down the middle and y'all this pan is let me tell you this pain is special to me too i'm just telling y'all i have been blessed i was blessed to have two wonderful mother-in-laws the first joker i was married to didn't do right so we had to get rid of him but his mama my mother in love was absolutely a wonderful sweet lady she has since gone to heaven but she was even after i divorced that rascal of a son she had she was still my mother in love just as sweet but she did catering and this was actually one of her cake pans you guys so i have several of her cake pans and even professional catering dishes if you saw my video where i fixed my turkey where i used the i fixed fred in that commercial gray pan that pan was hers too so oh that's just that's just sweet so i have so many sentimental things that i use in my kitchen from my mom my mother in love my um you know just just sweet things you guys so anywho this pound cake pan was from my first mother in love okay so i usually you know beat it on the bottom get some of the air bubbles to release and now we are ready to go in the oven we will be cooking in a 350 degree oven and we're going to cook for about an hour and 15 20 minutes all right you guys it's time for the cake to come out and it's beautiful it's beautiful okay we're gonna start on our maple pecan praline sauce i've added one stick of butter and then to that we're going to add some brown sugar and i'm using the light brown sugar so yeah this is so good it's definitely a diet buster honey if you're trying to die then this this is not the case for you add our heavy cream doing half a cup out a fourth cup of maple syrup and then about four teaspoons of our kosher kosher salt and then i'm just going to see and a few pecans so just gonna kind of get them broken up a little bit so [Music] i don't want them too too small and i'll bite into a pecan i'm like no i just did a pecan but you can definitely get them as small as you'd like just add those in and we need to allow this to start boiling and bubbling keep stirring it for about 10 or 15 minutes and after a while the sauce is going to resemble caramel you can already kind of see it all right i'm going to remove the from the heat and a little bit of vanilla flavoring let that sit a little bit and then we're gonna get this cake out of this pan and flip it over and then i'm going to flip it back and i like to have it in this plate because it has that little bit of a rim on it where it can really hold the sauce that praline sauce is gonna be drizzled all down the side and that little rim on this plate helps to catch all of that isn't that beautiful and i've not even put the sauce the praline sauce on it yet and i have some of these premium baking chips they're caramel flavored chips and i'm just going to put some down in this praline sauce and it's going to melt and then i'm just gonna after it melts i'm going to just pour it over the cake and it's already started to melt so and then you see the thickness how the sauce is kind of thickened up let me tell you something if you just if you're trying to diet i'm just you just need to forget it right now okay just just forget it just get started after christmas start off with a new year 2021 and just do the doggone thing okay don't don't be trying to do it right now i'm just telling you okay and then what we're gonna do is just pour this over this cake that's all we're gonna do y'all [Music] so now i'll just let it cool for uh probably at least maybe about an hour so before we before we slice it do you know how to cut a pretty slice let me tell you something there's no such thing as a ugly slice look at this notice how i went through it this is not what a sample piece i don't want you if you make it too thin baby it doesn't cut right don't cut right that's perfect honey we trying to show the people the cake and you don't cut that little play play slice you supposed to cut a big old look at that that's what i'm saying people that's what i'm saying people that's i'm i'm like i'm a journalist i'm a cut aficionado are you trying to be stingy with it yeah okay everybody what's that a pecan that's a pecan this one you want some syrup on it just a little bit this is good drizzle um whistle whistle get some drizzle that nutmeg and ginger and what is it nutmeg ginger and cinnamon maybe you're gonna have to back up you're cutting your head off cutting new hair hold it wait i have to put it way me y'all in let me lean y'all back a little bit bit better i'm going to eat my cake wait a minute i didn't put the um you guys i like to save a little bit of the sauce so i can the praline sauce so i can add it to oh do i just eat the praline sauce well you hold it and then i can put it on there i don't want that much i know it i'm just going to give you a little bit of caramel okay now let's get yours yummy that's all you want i don't know you're not making a good slice for my presentation you know see he didn't cut his little thin slice but i like to add a little extra water i like to add a little bit of extra caramel sauce on the top of but he's trying to be stingy sort of kind of cuz you know we're taking cake to work tomorrow he's taking some with him and i'm taking some to share with my work family so me you're one of the man hannah i don't know like that well i don't know yours like that but i fixed it how about that how about your folks on your job get samples when you fix something what y'all think about that that sound fair how about if that's what my that's what my word family says you cook something then your people at work get something how about if i pay for the cake you ain't paying for no cake i don't it's not for sale why because that ain't what i do but i'm saying this is me i don't care yours is free why would you have to pay for it so is it mine i can do what i want to do with my cake and i want to get your co-workers name [Music] y'all that's that's cool but i said i'm gonna do better because thanksgiving i showed out so we gonna um bring it in so anyway just wanted to share you guys the recipe is absolutely wonderful so [Music] we have to wait we have to wait and let it cool before we cut the slices so we can take it to work tomorrow so that's probably what we will be doing we'll be cutting cake slices at six o'clock in the morning so we can take it to work because the cake is still too hot now to cut slices and and um get down packaged up i have all your co-workers now i do i really have their um the best interest whatever thank you guys so much for watching therefore me helping them with their figures because they don't worry about you ain't got no reason to worry about nobody they don't wait they said they don't they wanted they said they were upset about how they ate during thanksgiving what tell the
