[Music] how will I pay you to these different these Keith grilles back with another cooking video and today we are making smoked yard bird wings on the waiver ranch cap so just a few ingredients we're going with 10 pounds of flats those are the wings we'll be using no drumettes just class today so 10 pounds of flats and we're going to season those babies up really really good with one of my favors Plowboys now I hadn't had this in a rotation for a long time but one of my subscribers Trent he sent this to me and I'm gonna definitely give it a run for his paces I have used yard bird before but he sent me a three pack so we have thinning feathers we have bovine bold bovine bulbs awesome on beef tendon feathers awesome on chicken also fish mainly fishes within that disease but for chicken wings we're going straight with the art version let me get this opened up so this is Plowboys yard bird road we're gonna season up these wings you know what we're gonna do it would take to cut boys show you how we're gonna do it we're gonna go out and get that ranch tail fired up now remember I call them smoky your bird wings that means we have to hit them with smoke we will be hitting them with Applewood today I'm also gonna have a real good time with this cook I'm gonna use to slow in Sears I'm gonna use my low profile and then my original school is here on the other side we're gonna cook the wings right in the middle get those babies up to about 325 so they can get nice and crispy take you to the cutting board once we're done that shows some of the most magnificent wings you've ever seen one thing is always to join me let's do 30 okay so we are back and I want to take you up close with these beautiful 10 pounds of wing flats check these babies out now I've already washed patted them dry so all we're gonna do now start the seizing process so what I want to do of course has put something on for a binder that will be our olive oil for today so we're gonna get a generous amount of olive oil going and then we're just gonna mix these wings up so once it's all said and done these babies would be seasoned to perfection with the Yardbird road okay then I'll take you guys outside show you the awesome grill set up for today and then once that baby gets up to about 300 to 325 degrees these wings are going on so all I'm doing now as you can see is advocate and generous amount of olive oil now we're just going to mix so we want to get these babies coated really good and this is how you do it folks now you know when you're dealing the poultry you have to keep your hands clean okay so everything I do once I'm done doing this seasoning I wash it with hot soapy water to make sure we don't transfer any type of germs around here so this is what it's all about all right so we have a nice coat bottle blue now we're going to come on back with is your bird and what I think I'm gonna do folks what I usually do on stuff like this is I lay them out to make sure I get them seasoned really well and I think I'll do the same thing today so let's move this to the side real quick and we will get started on this cutting board getting these wings laid out so it's a little bit of a task but I'll tell you what the end result is well worth it so look at these laid out this way we get even seasoning on our wings this afternoon now these are party flats so they are a little bit bigger than just your typical flat so these are definitely gonna be Hardy really enjoyable alright so we'll start with that first okay so we'll go at our yard bird and we'll go on generous let's just get it on I'll do this batch right here for you and then just know that that's exactly what I'm gonna do to a second batch so generous Co bit of the Yardbird Plowboys really makes some great roll-ups and like I told you I'd love that bhava in bold I just really haven't used Plowboys in a while just kind of fell off my radar I mean really sure how it happened okay quick pat and flip easy enough we will apply the Yardbird to this side as well okay folks this is what we'll do to the next batch and I will catch up with you much time to go check out the grill Center okay folks we are back with this beautiful ranch kettle so let me show you what the grill setup is for today so what we have is to slow in Sears this is the slow in cearĂ¡ low profile okay this goes for my weber summit charcoal grill and this one here is the original slow interior that goes for the twenty two and a half inch kettle so what i have is both slow and Sears halfway filled with unlit charcoal so we're gonna leave those just like that in the meantime we're gonna fill up one chimney now I haven't posted my brisket cooked but what I found when I cook the brisket is that one slow and sear by itself didn't help me get to the temperature I wanted to get to to push through this brisket cook so I don't want to deal with that again with chicken wings and I thought about it well let me just make sure to use my slow in sear on both sides this is gonna allow us to have the heat coming from both slow and Sears and just encompassing these beautiful wings and bring them up to temperature a whole lot faster so the brisket cooked yeah I can't wait to show it to you I have to finish editing it but that was the very first cook I did one brisket and two slabs of ribs so let's go ahead get this chimney started what I'm gonna do is just put one wax cube right here we'll fire that baby up real quick there's so much room on this ranch cattle it is unreal it is eleven hundred and four square inches so you're talking about cooking space that's what you got here okay we're gonna go right on top you guys have seen chimneys being lit before so this is what we have going on once these babies get ashed over and start glowing we will pour half here and half on the other side and we're going to put a drip pan right in the middle folks then it'll be time to add 10 pounds of awesome yard bird wings to this ranch kettle I'll see you guys in a bit okay we are back we are asked over this chimney is piping hot so let's go ahead and do a half on this side and half on the other so here we go folks now this is going to be an awesome way like I said to make sure we reach those temperatures we're trying to achieve and also get a full range of smoking throughout the whole cook so we'll get this side out you know these chimneys they are tried-and-true when it comes down to definitely being a great device to get your grill started alright let's go ahead and put the last bit over here okay folks so we have piping hot coals on one side well we have piping hot coals on both sides with unlit coals on the bottom that's what we're after okay so we have that adit so what we're gonna do now is add our drip pan and let's play we'll add our wood so here's our apple what we're gonna use for this cook today let's take that to the side for right now so we're going to use this to put our wings and try to catch some of those juices that are gonna be dropping now let's come on back with our girl brain I'm gonna walk through the cameras oh excuse me for that we're gonna go ahead and get our place in place that up a little bit then we'll come on out with the Maverick xr-50 and go ahead and start checking our internal grill temp we want to get up to about 300 degrees before we get these wings on so I'll get the lid closed right now go and get the maverick xr-50 and then we'll come back and start monitoring the grill temperatures together I'll see you guys in a second okay we are back I just grabbed the Maverick xr-50 I'm gonna move this back a little bit so you guys can see where I actually mount this thing during cooking as well so let's get this baby opened up first all right now what I do is I just go ahead get this baby right on the end so there's our probe we'll just put our probe right here all right and then as far as mounting I just go right on the bracket right here so I mean we have plenty of room here we just go right on the bracket right this baby is good and mount it I'm gonna get the grill close back up we'll start monitoring the temperatures and then I'll let you guys know when we hit 325 we'll add our smoke wood and then our awesome wings are going to be going right in the middle right here cooking indirect with awesome Heat awesome smoke everything just infusing those babies with flavor okay folks we're back I mean literally three minutes later check out where we're at we have 303 degrees on the ranch kettle it is time to get the smoked wood at it and add these beautiful yard bird wings to the ranch kettle okay so let's do it now folks okay I'm gonna start off getting some smoke wood at it got a little bit on this side yeah it's a few more pieces on this side as well let's do that okay folks that should have the smokey environment we need so now we're coming with the wing kind of try to get these babies in place and get this grill shut back down that Applewood is gonna start smoking so good so here we go folks beautiful yard bird wings on the ranch kettle okay so here's our setup we have 10 pounds of Awesome Yardbird flats on the ranch kettle I'm gonna cross again excuse me we'll go ahead and get the lid closed up as you can see our Applewood is burning we're gonna get a nice smoky environment I'll get back with you guys in about 30 minutes and we can see how these awesome wings are coming along okay we are back we are 30 minutes in I want to show you how these beautiful wings are coming we're not gonna flip them we're gonna cook them just the way they are we are currently at 350 degrees if you can see so the grill is cooking perfect to make awesome crispy yard bird wings for today so let's get it open up and show you guys how these things are coming along look what we got folks absolutely beautiful nice bark on all these babies they're crisping up perfectly these things are gonna be absolutely amazing so what we'll do we'll get back together in about 30 more minutes these wings will be done and then I'll meet you guys at the cutting board thanks for hanging in there with me okay YouTube we are back we are about 45 minutes in and what I want to do now is go ahead and start saucing these awesome wings let's get it opened up and we'll go ahead and start saucing them my daughter is about to head off to college in about the next two weeks she loves barbecue smoked wings so we're gonna do barbecue on these again you can see these things look absolutely amazing so let's go ahead and start stocking them right now so just regular store-bought I have sweet baby Ray's this is a favorite at the house everybody loves sweet baby Ray's so we're gonna coat one side with the sweet baby Ray's and we'll flip them over in about ten minutes and do the other side and then we'll call these wings done folks I'll meet you guys at the cutting board but all I'm doing is putting a light glaze on all of them so it can kind of soak in these wings absolutely amazing you can see the ranch kettle it's up to the test with the two slowest ears that may be the way I use this thing since they stopped making the ranch kettle addition slow and sear to slow and Sears seems to work just fine these things are crispy I can tell just by putting the barbecue sauce on them I can tell the firmness of them so they've come along really really well and again we'll just get them flipped over in five minutes do the other side meet you guys at the cutting board thanks for hanging in there with me I'll see you guys in a bit so as you can see we have the ranch kettle up to 360 degrees and we're gonna go ahead now and get these wings pull it off and then we're gonna meet at the cutting board but look at this so the too slow in Sears gives us the heat we need to get a nice crispy wing we use Applewood if you remember we did some really good stuff here folks let's go ahead and get this opened up look at these babies they're absolutely amazing smokes through and through beautiful barbecue sauce is actually embedded in these babies so there's more flavor happening we'll just take them off I'll drop them all in this container then I'll show you the finished product at the cutting board but let's go ahead and get these babies off so think about it ranch kettle ten pounds of chicken wings not a problem in the world love the capacity of this thing so you think about it we're talking about large crowds here right you fire this baby up you got 15 20 people coming over there's not a problem in the world when you have to ranch kettle so I'm very excited about this grill I've got a whole lot more cooks to do I'm even thinking about doing it small suckling pigs because just the way you see this setup right here we would actually have two slowest ears on the side and have our 15 pound pig you know maybe 20 pound max sitting right here dead in the middle how awesome would that be that's something I'm looking forward to doing and I promise you guys we'll get that on this ranch level folks with the capacity I don't want to bore you with me just continuously taking these things off but as you can see we have about 80 slats on this grill maybe even more but at least 80 and plenty more room to add more if we wanted to I'll see you guys at the cutting board okay we are back I want to show you guys the final product of our smoked yard bird wings made on the Weber Ranch kettle check out this beautiful sheen this of course is from that barbecue sauce that we put on look at this folks all we did we actually clean these babies we put olive oil on them we hit them with a heavy dose of the yard bird road by Plowboys we cooked them for about 50 minutes then we added barbecue sauce on one side for five minutes flip them over and add a barbecue sauce to the other side so total cook time one hour these things look amazing I'm gonna move this to the side we're gonna get one out open it up and show you guys the final product okay these things look just great they are crispy they are cooked through in through check it out folks look at this look at these beautiful beautiful wings if you like what
