[Music] hey everybody mike chavez here once again if you're new to my channel welcome if you've been here before welcome back today got a new toy got a vortex for my weber kettle and also got a new uh stainless steel grate so we're gonna fire this vortex up and our first cook on it's gonna be chicken wings chicken thighs and some kebasas so we're gonna get the wings and uh thighs prepped up we'll go out here fire up this vortex and see how it works y'all ready let's do it all right y'all as you see got several wings here and if you've been watching my videos for any length of time you know i like whole wings i love to munch on them tips man and i think they cook better when they're whole instead of in pieces but either way is fine either way is fine got some thighs here i'm going to trim these up right now i'm just getting them dry got a nice kielbasa here i'll probably cut that before we put it on the vortech so let me get these dried and i'll bring it right back now for these thighs we're not going to go real crazy with them but got all this excess fat and skin on here i want to get rid of that just go around all the excess fat and skin don't need it get rid of it all right y'all we got all this uh chicken on a rack so we're gonna want this to get as dry as you know we can get it here in a little bit all right y'all so some of my new toys got a new stainless steel great from slow and sear you see it's hinged on one side before you use the slow ones here we'll set this over here for a minute and here's the old vortec i'll leave a link below for the great and for this vortec actually it's this ain't made by vortech it's a facsimile thereof so look at my vents i'm gonna leave my vents about good halfway open down there actually first thing we got to do fire up some charcoal so i got my big charcoal chimney got a tumbleweed got some blue kingsford fill this thing up about three quarters of the way full humble weed fired up there we go put the chimney on and we'll let that get rolling and we'll bring you right back all right y'all for this first cook we're going to keep it simple got my homemade spg so give a good sprinkle [Applause] spg [Music] [Applause] all right get the thighs get this meat side nice and coated and go a little heavier on these thighs push it on down get this skin like i said i'm hoping this get this skin like nice and crunchy so we'll let these sit until the cooker is ready to go let's see if we can get any uh duck fat out of here at least on these thighs it's coming out a little bit all right say duck fatal get the crisp on [Applause] i still got a little bit in here kind of drizzling one out dribbling out i need to pay a visit to walmart ain't been to walmart since all the silliness has been happening kibasa we'll just leave that like it is we'll actually cut it and let's cut it again [Applause] here we go all right all ready to go all right y'all charcoals are fully lit so we're gonna set the vortec in there dump the charcoals in it [Music] all right then settle them down in there real good i think i might put a few more on there put our grate on now this grate's never been used so we're gonna let it heat up real good don't bring the chicken out all right all right y'all let's see what we got here so we got a bunch of heat coming out so whole idea behind this vortec the heat comes up off the whole vortec hits the lid hits the dome of the cooker and heat comes back down on the food so we're going to call this ready all right y'all so let's get the wings on [Music] all right there's the wings and go with the thighs it'll end up being a little closer to the heat spread them out a little bit all right now the cabasas there we go that's what i call a full grill right there all right now chunk of applewood right in the middle a little space here all right put the lid on we'll come back check on it in a little bit see how it's doing all right y'all this stuff's been out here about 15-20 minutes let's take a peek oh low those are looking wonderful ooh smoke in the eyes kielbasa is getting done needs to be flipped i want to put that back away back out the way it's getting done quick chicken's looking good though we're going to leave that alone for a while for about another about another 10 minutes or so here we go all right got the sauerkraut chilling out on the back burner on low so we got some butter melted let's get some buffalo sauce fired up got the old frank's original heck take the lid off dump you about a half a cup to three quarters of a cup in there there we go i like a little granulated garlic in mine maybe half a teaspoon and i like mine a tad sweet so we'll put a shot of honey in here about a fat tablespoon all right let's get a whisk get this whisked up you just want that warm you don't want that to come to a boil shut the heat off all right that's ready all right y'all it's been about 30 minutes let's take a peek man these kibasas got to go off let's take these kabashas off they got done quick all right let's turn all this chicken over [Music] all right [Applause] about another 15 minutes i'm gonna start taking temperatures all right y'all let's take a peek get another 15 or so [Applause] let's take some temperatures look at this chicken here oh man 175 see what these thighs look like ties are almost 170. so we're gonna go get the sauce let me flip these thighs back up man those look good let's go get the sauce all right y'all let's get these bad boys sauced up i think we can actually get rid of that piece of wood it's give all it's going to give it gave us all all right now let's start with the buffalo sauce let's do this take them and dump them in there here we go much better awesome so take these thighs cosmos cherry habanero on the thighs actually let me flip these over do the other side first here we go all right cherry habanero careful over that vortex thing is smoking [Applause] there we go flip them back over sauce them up y'all if you've been watching me any length of time you know i love my barbecue sauce ribs chicken it don't matter [Applause] here we go i'm gonna give these about ten minutes i'll pull them off all right see y'all in a little bit put this lid back all right y'all i'm gonna go ahead and [Applause] take these on off of there close it's all right so we'll get these thighs off over here man there's some good looking chicken i'm tell you what so far i'm thoroughly impressed with the vortec let me see something it's about crisp it up a little bit put a couple right there for a second not too long some intense heat right there in the middle [Applause] okay [Applause] here we go size i'll sacrifice a thigh in case it doesn't do good flip man i tell you what i think i'm lacking this vortex oh my goodness yeah let's do the rest of them [Applause] [Applause] all right we're gonna call that done all right let's smother this down all right y'all here we go got the kielbasa with sauerkraut buffalo wings and some cherry habanero chicken thighs all done on the vortex my new vortex man that thing is awesome so you all might notice the shirt i'm wearing armadillo pepper.com that's for my buddy jeff this y'all ready let me turn this around look man that looks so good got some good smoke on there you all ready i know y'all want a bite of that wine taste oh my god i'll tell you what the vortec get you one man that's good the thigh cherry habanero thigh i'll probably end up pulling the skin off with my teeth but that's okay let's see if it feels crunchy [Music] you all ready get your bite of that taste oh that's pretty high all right y'all let's try this cabasa out with the sauerkraut there you go is looking good up inside got a little dark on the outside but y'all ready let's see how this is looks good smells awesome tastes absolutely that is too damn good there you go on my new vortex i guarantee it won't be the last time i use that vortex that thing does the awesome awesome job
