[Music] what's good at everybody and welcome back to my channel smoking and drilling with me angry China I know you guys have already seen your thumbnail today's the big game you know what so this is I'm going to do this chicken leave right we're gonna do them on the grill we here's the twist right here we don't do on two ways one we're just going to get them seasoned up we're gonna put them on the grill that way in the other other ones we don't go ahead and put them on there some kind of weight like huh you don't do some are flour cornstarch so we don't just do it two ways I got somebody in the background this my taste tester so whatever listen we gonna get out here on this video miss Ferguson hurry up get these seasoned up and let's get it cracking and I know it's last minute so listen if you guys gonna do it for those you guys and ain't no stuck under the snow and nothing like that go ahead get your wings put them outside get them grilled up put that flavor on and let's get it all right check it out look not a whole lot right I got four pounds of chicken wings you know actually I bought them from my local grocery store at the butcher so what I did was I had two pounds or beat you know flat and then the record right so we got flats then we got cheese right here you know we need a little dramatic now we gonna go over this check this out let me wash my hands since I touched his chicken all right so look this is what we're gonna do this right here is a quarter cup of flour and a quarter cup of cornstarch look we're gonna use this and let me make sure I got it right this right here these two go together so we're do it like that I'm using sweet smoky Joe's I hope you guys can see it right here I'm using sweet smoky Joe's look this is for yo chicken I know you got a saying I've been you know tough on them sweet smoky Joe products but I can promise you this he makes a lot of them and this is like my second go-to choice especially when it comes to chicken and look you see this Creole kick right here this right here is what we gonna season this and the black pepper we gonna season the other half like that so look at it go like this that all goes together and these are gonna go for the next ones we're gonna do them on the grill we gonna get some of that that grill flavor on these wings and then we gonna go from there but just super simple but the trick today is just showing you the flowered version on the grill because not a lot of people do that right and then imma show you the regular way we do it and then when we done with it is up to you if you want to toss them in something you can do that too now let's go ahead and get you set up all right first thing we're going to vide these wings up I'll put some in here we want to put about half of them so we want two pounds each in each different Bowl one of them is going to be seasoned bottom cells we'll just call them naked grilled you know wings and then the other there's gonna be a you know in the back we're gonna go ahead and get that that flour cornstarch mix so we'll figure about here they look about the same not too bad we'll leave it like this now we'll start with this one here let's start with your naked ones first so what I'm gonna do is [Music] we'll start like this take this I want to mix these together so the corn starts and flower right this right here just fill your chicken we'll just add that there all right look and get it you just want to blend it here so get yourself a whisk and don't forget you guys always tell you manage the best thing about cooking you no matter what you do if you got the right tool for the job you go there that's good enough I mean now we're gonna take this and what we're gonna do is we're gonna put it in here I'm gonna put it in this bowl [Music] now we gonna take these pour these in there just like that and now we're just going to work you know work it in a lot of people don't do grilled chicken wings or chicken you know chicken period starting off with you know our flour or cornstarch but we are today we can do them in the airfryer we can do them that way too all right that's what we're working with set that off to the side let me give me another set of gloves and let's move over to season the knees now we just call these away the neck it wings right so I'm gonna go ahead and just start grinding some of this pepper on top it might look like a lot to you guys but don't forget I gotta toss them right so I'd like to see pepper you know although you know I'd like to see that ground pepper on everything so we just keep running it back and forth and not to really say you know be all over sweet smoky Joe like I am but this is some of his a black peppercorn the smoked black peppercorn that's what I have in here now that's all I use you guys so that means listen that the peppercorns inside of here have already been smoking all right got that done now for the Creole kick [Music] now I know you guys are looking at it and probably thinking like dang that's a lot but don't forget I got a Tulsa we need to get those seasons on the back side and all of the chicken that's underneath so going out with my hand now look just doing it this way you could see the difference you can see you look no seasoning versus season look at the cover all right all right so we got both of these ready to go you guys can see that right let me get this one over here a little closer all right now let's go outside and let's get the station set up just get these coals going let's get them on the grill [Music] why I elected to stand right in front of this smoke I don't know but I just want to show you these right now I turn to starting to turn white right so what i'm gonna do is i'm going to use some lope lumped coals i will put these on top once we got fired then we're gonna go ahead and move over to the grill now you guys can get your fire any old kind of way you want it but i'm going to show you how many use a vortex style you know stainless steel sit under this that's just going hey you guys might want to run out and get one of these they're very inexpensive you can pick them up for 20 bucks you can get them on Amazon you can probably pick them up at your local barbecue store I'm not go over talking we finna finish this part we finna get right on that grill so that I can show you where the magic is gonna happen all right and now we getting ready to get started now look this is the disc I was talking about we're gonna put this this has got to be in the center right so what I'm gonna do is on my line all of my wings on the outside of my grief so we got this this is ready this is where I like it it's a nice little flame and now you guys can see up close what look coals look like alright so we gonna put this right here in the center and look that's stainless steel right so what it's gonna do is it's gonna radiate the heat you know from a cone shape it's gonna come out of it to the top hit the dome and spray it on all of the you know on each side or the complete cylinders on now you can see it just a little bit better got lump coals you see the charcoals you know recast that I got on the top but you know the lump coals are hurting these the bottom so now I'm gonna put this on the top I'm gonna just my fence down at the bottom and adjust this right here let me turn it this way so you guys can see and we gonna get this thing up to ten so we're gonna wash this temp I'll bring the food outside we're gonna go from it now when the just from your you know your kettle grill this is it pulls air from the bottom and then from the bottom it passes through the coals you know it gets hot and then it goes out to the vent top right so we're looking for four hundred degrees which I have there and you want to make sure that it holds 400 degrees for at least five minutes now that I have my events and everything adjusted properly I'll go ahead and add my chicken and you can see that's on the indirect side you know I just super easy all right then you saw the arrangement I know it starting to make sense to gazet it like if this is something new having this cylinder and $20 investment you know if you got a kettle style grill maybe no matter what kind of grill you got if you can get this vortex in there this is nice hey you live and I like the way I look when you know when you're cooking so all you're gonna need is a pair of tongs right here this right here gonna be our best friend we're gonna need a history which I'm gonna go ahead and get out of my kitchen and then I'm gonna put this top on here we want to make sure they're at least 165 degrees if they've 165 degrees Fahrenheit I promise you'll have some juicy crispy at the same time you know chicken wings so let's get this top on here let's adjust these vents go ahead look right now we have 400 degrees we're able to maintain that heat right so I'm gonna take this off now as you can see the ones on the right side the ones with no flour and cornstarch on them those live normal and then the ones on the left side that you have it you know what you can see that you can still see some of the flowering on there right but trust me once you flip them it all comes together alright take a look I got them all flipped over right this was just the first did we just say the first 12 minutes this is how they look there's something about when you flip them that you know when you flip them over next time we're going to look at it after about another 12 minutes then we gonna start tempering these right here we want to look at these and just see where they are you'll see that a lot of this corn starch and flour starts to go go away all right so we gonna get this back on top we're gonna wait till our temperature rises back and then we're gonna go for there I'll see you guys in about another 15 12 to 15 minutes so after you know really a real good 15 minutes I mean I was solid I went ahead and put my instant-read thermometer on there and then check the other drumette because it'll be the thicker ones and they were ready to come off right but as you can see I took all the ones that didn't have branding on them you know no flour or cornstarch and I left I took those off and I left the others on just a game on a bottle another five minutes it's just so they could like crisp up you know and as you can see right there that all of the flour and cornstarch is gone now I'm gonna show you guys a close-up look at that right there those right there are fire hey I can tell you this I'm gonna give you a spoiler alert listen the flavor was deep into the meat and that right there is a good time to toss them in whatever type flavor you know flavor wins you like so tell me what you guys think you guys just seen okay let me just say it this way when you saw me out there on the grill it was really about using that you know that little vortex style you know cylinder stainless steel cylinder right so listen you put it in the middle listen the heat rises up it's the Dome of the kettle grill and comes down this way on all sides right and it allows it just to cook like that you know it just super simple and you know we were big on talking about like the different zones you got in direct and then you got direct right and by having it in the center like that everything that was on the outside that was on the indirect heat and the fact that I bred it a couple of you know a few of these now I'm gonna go ahead and just take here we'll just go like this I'm gonna show you the difference listen to this you can just hear that these right here is it's like super I'm gonna just say it a real crispy but these are the ones on the right side or the ones that I put the flour and the cornstarch on right that's the right side and these right here these were just grill you know I mean I might have to like bring them a little closer so you guys can see you can see the difference right here just look at you know I mean this right here you can see that this has a more crunchy exterior and this right here listen this one crunchy - but it's a different type of crunchy now once you make your wings like this then you can put them in whatever type of sauce you want toss them and you want to serve them mildly hot but for me I'm gonna go ahead take just flat just the one that's been breaded right here and we're gonna get a bite of this mmm that right there is fire and don't forget you guys look use fo yo chicken that's what I put in the ones that have the other flour and the cornstarch this right here you guys gonna start to see a lot of this and then of course we all know about the Creole kit right the Creole kick this is on one of these wings right here these are the ones we I just call them like the Nikki wings no type of braiding or flowering on them at all you know what I mean they just ready to go you know outside I got two kettles going a lot more wings and oh let me address this reason you don't see Mad Dog a Mad Dog I'm gonna get you hey he went to go make a story Ron had to finish this up so I can get out here to tending you know defenders are tending to these
