hey I'm Matt with meat church tonight we're smoking pit beans [Music] well we're back in my outdoor kitchen at night because it's over 100 degrees in Texas as you can see by the end of this video I will definitely sweat through this shirt and the night time also helps keep the flies at bay what we're making a side today it's a very very good side don't sleep on it and I usually say you guys have been asking for more sides and desserts we just released chocolate pecan cobbler a few weeks ago and shockingly you actually blew that video up so we made sweet coleslaw along with North Carolina pulled pork few weeks back and that was my buddy Michael lechworth's recipe and hey we're gonna keep it the same and do another Michael recipe today so the history of this um he comes to my house on Memorial Day weekend to smoke a cinder block whole hog and we cook this on the pit and spoiler it's going to start out with a canned bean and look my perspective on cooking is sometimes you don't need to be afraid of some store-bought stuff because there's some of you that don't want to take the time to do everything from scratch but this the point to this is it's very easy and it's very good in fact I just made this side a few weeks ago I was in heidegwa Canada for guest Chef dinner and I made this to be eating family style and people absolutely loved it so at that moment I thought you know what we need to do a video on it now this comes from the legendary Skylight Inn in North Carolina they've been cooking this forever and ever and ever if you know eastern North Carolina style barbecue you definitely know Sam Jones and his family and that's where this recipe comes from and it's super duper simple so let's jump into it so really it's very basic we're going to saute half a bell pepper and half this is a sweet onion but the key here is that we're going with one three pounds three point seven ounce can of Bush's Baked Beans so for this size can all you need is one pound of ground beef the half Bell half onion and 16 ounces of sweet barbecue sauce that's it and some seasoning so super simple so we're going to jump over here to a grill all you're going to do is saute these and cook this meat season it up then you're going to incorporate it together to go on the smoker so let's jump over here to the grill you can use anything you want today we're using my Mill scale Yakitori [Music] put a little oil in the pan and what I'm going to do is just cook these onions and bell pepper tiller translucent and then I'm going to drop the ground meat in all right these look good just a few minutes I'm gonna move this over and drop the meat in foreign 93 7 meat I wanted a really lean meat so it wouldn't have you know a lot of fat and a lot of juice to come out actually there probably won't be hardly anything that comes out of this let's add a little bit of seasoning use your favorite barbecue seasoning I'm using our gospel which is kind of our OG all-purpose best color and barbecue amazing taste so I thought this would go really good on it but like I always say use whatever the heck you want we're just going to keep cooking this away until the meat is completely browned and I'm going to pull it off and we're going to add the beans and move on to the next step all right that looks nice and brown let's move on to the next step clearly you can make this whenever you want I'm using the new Yeti cast iron skillet a lot has been made of this Skillet but just so you know I'm a total cast iron geek I've got generic pans handed down for my family I've got 20 something dollar Lodge pans and I have a plethora of vintage Griswold Skillets you guys have seen them in these videos and I do love this pan just so you know it's made by butter Pat it's 345 pan with butter Pat butter Pat pans you can't compare them to Lodge pans that's like comparing apples to bowling balls yes the lodge is great love them have plenty but it takes 90 minutes to make one of those it takes 21 days to make one of these it's the smoothest pan in my Arsenal so it is expensive it comes with three more accessories than a butter Pat pan comes with but as always clearly you can cook on whatever you want you could make this in a disposable steam pan if you want in fact that's what we have done at our various barbecues especially with Whole Hog but it fits nicely in this pan so that's why we're doing it today I mentioned earlier 16 ounces of your favorite sweet barbecue sauce naturally I'm going to use Sam Jones since it's their recipe we sell this at meat Church barbecue supply in Waxahachie if you guys ever come to my Flagship barbecue supply shop um we've made it with other sauces are great as well it's just a preference thing and then the entire can of beans and we're going to mix it up this is so simple I'm going to add a little more barbecue seasoning and put it in the pit here's a great thing about this all you gotta do is heat this up but you also could cook this half the dang day if you want to so when it comes to cooking what temperature you know how are you going to do this well I mentioned we did this when we cooked a whole hog so you know we smoked this at like I don't know call it 250 degrees there's no gauge on that cinder block pit and we ran it for hours when I cooked this in Canada recently I cooked it for half the day really low on a Traeger on super smoke today I'm running my mil scale 94 gallon offset with Post Oak it's dead on 250 degrees and I'm going to smoke it for a couple hours but you can go lower to add more smoke if you're in a hurry you can blast this at 375 and be done in somewhere around 30 minutes so you're again you're just trying to heat it up that's it so in the pit we go and I will see y'all when it's warm and time to eat foreign it's been about 45 minutes and I like to get in and stir periodically whatever you like 30 minutes 45 minutes every hour or something like that you've got smoke hitting the top of this just mix it up and let it keep going we've been cooking the beans for about two hours so let's go ahead and pull them out heavy and hot now like I said earlier you could you could cook these a long time like all day you can see a nice little film has formed across there very warm I actually like them when you cook them for hours get more smoke and it's not going to hurt them but we're making a video tonight and these have come together enough for me but I'd recommend you know two three four hours you can see it two hours we're steaming nice and good and it's gonna be great so I'm gonna put some in a bowl here this is very Hardy obviously with all the meat in it I'm gonna just do this so that this can kind of cool off I'm gonna go get me something else to drink and then we'll give it a test okay well I've let them cool off uh somewhat they smell amazing by the way love this pan Dennis the founder of butter Pat we met a couple years ago he was in one of my barbecue schools down in Lockhart Texas and I should have said this earlier but he started the company that yet he chose to make this pan because he couldn't find one as smooth as he wanted to make so you know yet he's not going to half-ass anything so kudos for this gorgeous pan I'm gonna have ton of fun cooking with it but with that said let's jump in a lot of meat in there I mentioned earlier it's hearty with the vegetables so you know mom's happy I hate beans and these are awesome so it's sweet obviously baked bean we added our sweet barbecue seasoning to it Sam Jones sweet barbecue sauce these are awesome I honestly could eat a ton I never eat beans anywhere I go but I promise you if you make these you'll love it I told my crew the story that when I made these for West Coast fishing club in Canada people from all over the place ate these and everyone begged for the recipe which is why we decided to finally make the video today so Michael thank you for allowing us to share you guys recipe thanks for
