don't be intimidated by this little piece of meat we're going to show you a foolproof way to cook this filet Joyner filet we've all heard pretty expensive cut of meat and sort of intimidating at times to cook I promise you so let's show you how to do it the perfect way doesn't take much time and you will be a hit you can even do this for your first date have them come over cook the steak form how you this was waiting by the wedding ring because it's going to be over after that with a 6-ounce inch and a half thick filet i season with our original Red River wrench but you can use anything you've got salt coarse ground black pepper and salt all the way around the edges both sides really well I like to put it in a little bag set it a nice box let it set about two hours that lets that seasoning get in there and just take effect now I'm going to take it out then we'll set it over here and we'll let it warm up for about thirty minutes before we start this but right when I take it out there I'm going to come over to this oven I'm going to turn it on to 450 degrees you want to make sure that that thing is Jen and I'm telling you 450 degrees high you're going to need to some of these grabbers 1/2 of a tablespoon of butter and just a splash of canola oil I'm talking just something to give this cast-iron skillet just a little lubrication we're fixing to preheat the skillet and we're going to go to work let's light this I'm not used to inside the house mechanisms turn that thing up on high we're going to start to watch because we're going to let it preheat about two and a half to three minutes then we're going to put the oil in after it's hot you put it in there now it'll smoke it maybe before it gets done so pour a little oil in there just for the lubrication it don't take much give it a little slobber around there to where you know everything is covered take that fillet so that right there start the clock two minutes each side top and bottom then we got to fear their maples we've been in there exactly two minutes that's what I'm asked to see that color two more minutes on this side then we'll do them ages all the way around slipper and oven we've been in there about two minutes on this side but remember this side that's up it's got to go down here in a minute so remember which side that is we got to fear these edges we're going to let them go about a minute all the way around so we can get that color oh man the very first side that we seared you have to remember what we get here is turn that down because we want that to be back on the bottom again turning this out slip it into 450 degree oven center rack with that little slab of butter about two minutes folks and we'll be there according to this here fancy gadget it's been in there about two minutes so it's time to come out and forth it smells good and it is pretty now we're going to let this thing rest as you probably all know but to let it rest we got to take it out of that piece of hot cast-iron order to sit there and continue cooking too much we're going to let that rest about five minutes because we cut that thing I want all that stuff to stay in there I'm getting hungry come back here at about five minutes we'll eat this is what I've been waiting on I've been craving me some beef so let's see whoa look at that that is what I'm after and I'm going to check it to make sure it's good yep staying out a cut like butter and it does and this is what I would call rare he done died in one thing then kill him again now if you're wanting to go maybe to medium-rare lead him in that oven about two more minutes that's all you meat don't cook a full eight ever past medium-rare you're wasting your money ten minutes all it took after we let this thing come out ice box I know we're in a world that is in a rush but take time out for this he's melting your mouth goodness
