if our first garlic bread steak sandwich was fantastic how much better could we make it well you're gonna have to watch because we're making one major upgrade look i'm a firm believer that a steak sandwich must have caramelized onions and that will happen i like the idea that we crisp things up a bit we'll be adding a small french fry component texture crunch deliciousness our steak sauce combo underneath will be ridiculous and now that leaves us with our choice of steak and you know me i love a rabbi nothing like a ribeye but i've been shooting uh the photographs for my next cookbook all this week and max said shall i go to the store and pick up something for us i go great we decide on the steak sandwich want to see what the kid came home with oh yes this ladies and gentlemen is 2.16 pounds of a5 japanese wagyu strip damn look at that thing beautiful no of course your child brings this home and what do you say we do [ __ ] nuts how much is that 310 and we're doing this so you don't have to only the best for our people he goes only the best for our people well how many of our people will be consuming this maxwell three yeah by the way we're not gonna cook this is not the steak sandwich we will cut a piece from here a reasonable size piece do it on the flat top quick it's gonna be buttery and delicious it's gonna be great here's what we're gonna do we start the onions we start the potatoes we make the sauce and then we'll get to uh the steak because look at how much fat is in there it's gonna cook like that okay so here's what we've got we've got a potato of course i decided to change the order and make it easier for everybody so let me just cut the ends off and i cannot find my peeler so i now have to peel this way and no i'm not pimping the knife i'm just showing you that it's a paring knife you can pair things down with it i'm not very good at it probably going to end up leaving a lot more potato on the counter than i would normally but you're allowed to pimp the knife by the way i know i know i know i know but you know me i don't i don't like to promote and then seven hours later we were ready with potato ah [ __ ] how do you not have a peeler i can't find it where did it go i don't know why do things disappear i don't know you i heard you say why can't people put things back where they found them well it might be me yes exactly you're the person that did that no look it's been a busy week please please all right what a pain in the ass please can you just like fast forward so i don't have to do this for ever i mean i still have to do this but i'm sure that music will get claimed and actually yeah stop i think you can play like two seconds of it or something well we'll find out all right welcome to sandler cooking guide where we remember we did this in miami when we made the cubano fritta frito and they were great and light and crispy and oh so wonderful i'm just gonna shortcut as fast as i can but you have to be careful when you get down to this amount because you don't want to lose skin i've done it i'm telling you this is one of the most painful things you can ever do to your fingers and i'm prepared to call it a day when i get down to a little nub like this so you got the potato in here and now i don't want any of this liquid so i'll just gather up my corners and watch i can do it right here for you this potato pea you don't want because think about it next these are going in hot oil and you know oil and water especially oil and potato potato pea potato don't mix all right fryer let's go okay but first i know we're getting to the fryer we've got to start some onions caramelizing because they're important and you know they take a while so always put we're making one sandwich so i don't need too much but always put in more than you think you need because they shrink down so much all right so give them a little a little love like this so they all get a little bit of oil and then we can leave them and then as we say over the next 15 minutes they're gonna start to caramelize the natural sweetness will come out and they'll be amazing boys now the fryer and now when we go separate separate separate oh god the steam holy crap whose idea was this not going to take long they're small and on their way to getting crispy this is going to add this gorgeous little texture and if you haven't seen the frite cubano or cubano fritta you should go check it out it was a great episode in miami deliciousness all the way around see poppy see they're getting there awesome huh bird's nest it's like a bird's nest all right we're almost say another 30 seconds not even 15 seconds 10 9 8. fine call it a day out you come everybody right on here paper towel line baking sheet spread these gorgeous kids out all right one more and i think we're there let's uh make a little sauce we begin our garlic bread steak sandwich sauce with a little mayo then we're gonna add steak sauce i'm adding one from my homeland well great britain actually but you could use whichever one you want hp is a fave so about half as much steak sauce as you have of your mayo and then to that we're gonna add a bloop of dijon mustard a little bit of salt and pepper and we mix tangy and oh so delicious that gonna be the best thing ever while we're here we need some garlic for our garlic butter on the outside and it goes because i think it always looks nice on the outside i like to throw just a little chopped up curly parsley into this we'll be using white bread and it will help the color pop and this we will mix grilled bread great grilled bread with garlic on the outside grater as i was squeezing the garlic into the bowl with the butter using this garlic press i was reminded of the fact that i had collected out of this package for now all right put it on here so i can open it up and what you're going to notice is the fat content which is very very high i mean honestly i feel like my fingers are starting to melt the fat just by touching it but of course this is a big gorgeous piece that we don't need all of so here's what i'm gonna do god what am i gonna do my bread is this big i really need like a piece like this okay so what i'm gonna do come on buddy come on you are so beautiful to me so if i say this is my bread good yeah so i cut here down and then a thin piece right yes we like this we feel confident in this yes yes wow it's like butter look at this oh hiya yay a little bit of fat here just gonna take this off i'm gonna use this piece of fat right here to grease up the the flat top and these this is fine this is fine so here's what i want i want a piece about this thick this the rest of this is getting vacuum sealed for another day a rainy day a gorgeous rainy day okay our onions are beautiful coming along nicely slowly caramelizing love them they're gonna be perfect but now now let's just try a little tester of our beef shall we let's take a little bit of this fat make a small spot right here wow and then i have a small guy that i cut off we'll just see how long this takes i think really it's going to be a couple minutes maybe total but we'll see look you don't want this thing overcooked at all in fact you sort of want to way undercook it i think we let it cook about a third of the way up the side you can see nicely here and we're almost there and then we're going to take it off so it's been about 45 seconds so if we go a minute on this side and then flip the kid and do a minute on the other side i think we might have it so let's go shall we yeah let's give it a goo oh oh lordy lordy yeah i think it's a minute aside guys i want to keep it rare in the middle here we go and we're down now look we haven't seasoned it so we got to give it a little bit of salt and pepper right just a little bit and now we need a bite or ten let's just see what we've done here boys on three one two and oh my god um how rich is that it's so incredible it's wrong look at here boys again you must this is raw it's so good but it's completely wrong it's not completely raw you don't like it it's beautiful but it's raw no i don't want it too much more than that and i'm cooking it here we go first up we're gonna put our bread on because i want it to be ready when the steak comes off it's going to get quickly toasty but we're going to be fine next we'll take this little bit of fat we'll give it some of this love and we'll put our steak on like this bread i think oh yeah beautiful on both sides oh and i smell the gorgeous briocheness of it oh boy so we're like uh maybe a minute and a half aside now the onions i pulled they're looking gorgeous the tatties are looking gorgeous look how beautiful i'm telling you this crisp way that is the way and here we are looking loverly loverly oh my oh the bread comes off uh oh i'll take the bread off it's crazy how much fat is coming off of this i mean it's not really because look at it but all right i'm gonna turn this guy over not too much longer on this side lay flat my little friend lay flat this nice crisp is gonna be amazing all right i'm taking it off and we're building let's go nobody get mad okay i forgot the garlic butter it can't be a garlic bread steak sandwich without the garlic butter so see what i mean about the the parsley flecks such an amateur god i forget something almost every time that's the drinking game right there all right these guys face down here we go please it's too hot do your thing no it's fine i smell it that smells amazing it's going right towards you chance oh god where do you see it oh lads wait you have a wee look at how gorgeous this is look it yes not quite flip oh snap all right that side gets crispy the bottom then we can build all right and here we are wow our first guy will go like this and he can face up because it doesn't matter because he's going on the bottom our sauce is tangy rich oh lordy and then the onions and i'm definitely not going to forget the oh god i'm not going to forget these seriously i think they really make a sandwich especially a steak one and i know it looked like a lot of onions in the pan but look perfect amount for this now this kid our bud right on top gorgeous last but very not least look it let's make the pile even shall we and then our guy on top the garlic bread on top all right well there's only one thing to do ladies and gentlemen that would be to have a bite just want to stab a knife into it i don't know why here we go oh the guard i can smell this come on come on everybody oh it cuts like you know what oh damn it cuts like butter i know that's rare for max but i'm telling you this is what it's all about this this right here snap oh my god oh my god and i'm in it's like a 20 bite everything works the sauce the tang the onions the crispiness of these crazy little things and of course that it's too much it's almost too much it's too much but it's delicious and once again we do this for you
