chef ramsay is giving a tutorial on meatballs in an italian restaurant they're gonna have a color on there that adds richness a nice deep flavor okay and are we ready to order or do we need a minute what are you doing oh come on plus you said he was working and he couldn't watch him oh come on i know get me tatiana please please darling is it not cooked they're all kind of burned on one side i didn't say throw it away come on sweetheart i showed him how to cook one off my back's turned to two minutes and that's what i've got burnt [ __ ] stuck to pam he turned around to danielle hold on and said to danielle i've got uh i'm busy i can't watch my meatballs that's what i'm going to work for what's your complaint on the meatballs they said it was like toasted on one side but not twisted on the other really how about telling your [ __ ] chef okay you're good here now he's getting upset with me because i've caught him out when a guy can't make a meatball or even season one i'm sorry i'm really sorry and then when i watch a chef that cooks and sticks food up there holds it and we're not even talking homemade food we're talking bought in store bought my god it hurts okay you're cooking look at that for a stinking attitude look at that a disgusting attitude ask him to put his house in the [ __ ] mix if his house was on the line he wouldn't be cooking like a [ __ ] idiot now he thinks it's funny you think it's funny get your head out of your ass you okay yeah i'm okay i'm okay gordon you sure i just ask before you make any judgments i'm not making any judgments on you at all i'm i'm listening nobody's here at eight in the morning when i'm here and and and there is there is a job that's endeavored i mean all the way you know and i get back behind here you know i get underneath there i get the plates i get up there and it doesn't take that long it takes about an hour or so and then i started doing the prep work it's just a poison it's just stuck to my jeans no oh my gosh do you have a look at that under there oh my gosh how many bits of gum are there there is uh four pieces of gum so you do this cleaning i haven't looked down there i don't think you should do that during the business hours in front of customers what time do you like me to do it come here to eat in the morning with me i shouldn't even be able to do it tomorrow morning and i wouldn't do that in your restaurant either you wouldn't find gum under my tables nino is a ball of excuses he's just wacko god there's full of cobwebs bloody hell didn't get to that one bloody hell definitely didn't get to that one everybody else was done right yeah right have you seen the size of that cobweb there have you seen that that's dust no that's the culprit didn't see it without the lighting really yeah oh god how often did you clean every day i you know this is something that takes a lot of consideration i i you know you can be on this here for months i start at one end and then finish at the other end and then i come back and this one oh god this is the eight in the morning effect five days a week for years buddy hell is there a bathroom nearby did we wash my hands yes sir he should have shut up about cleaning i don't know what he's cleaning but i wouldn't hire him at my house i promise you that oh what the pictures of these are me cleaning and pulling down all the all the bottles every single bottle i've never seen pictures of cleaning that's a first for me well that's because my brother's always questioning that i do it i don't know in the first place why he took pictures if it's clean you don't have to prove it with pictures you see it right this is shocking what was the last time this was clean inside my goodness today look at that the floor is caked the grime oh christ [Music] oh my god when was the last time oh christ almighty what on earth is smell you know what you do wrong take more control of these guys and i feel that you don't if you want me to take the control don't go check and guess me about anything that i do [Music] behind here oh my god [ __ ] look at that there that is mouse or wrap droppings oh my god a couple of hours ago i was feeling slightly embarrassed for them slightly concerned in a big way but now when a chef let go of his kitchen like this it proves he doesn't care i want to be more involved in the business end of things forget the business aspect and your portion is the hosting portion right here yeah i was going back to the hotel couldn't sleep had a look in the kitchen and i am absolutely [ __ ] gobsmacked how can you do that when that is say that again what is that what is that come here anthony how can you cook in this when was the last time this was cleaned the kitchen oh we try to do it on a daily basis i mean what have you seen under there underneath underneath here joseph would you mind having a look i don't think you've actually seen this down there i see it look at that oh god please anthony talk to me give me some form of feedback don't [ __ ] me give me something please oh they're asked to do it every day the staff they're what they're asked to do what everything we're on our ass with half a million dollars debt and you're telling me now that you don't even clean that's what we have staff for right oh my god what's this then what's that on there the droppings they're not [ __ ] caraway there oh my gosh it's um zero for zero 15 minutes in nothing i'm starving we got some appetizers coming right what appetizers coming it's cooking [Music] that's what snapped down we got to get rid of all these dirty dishes killing me [Music] spend more time cleaning up after his ass with the [ __ ] [ __ ] that's better i'll prop a seat just turn that one turn it's done no it's not turn it why is the kitchen so slow [Music] if somebody wants me i'm not back we're past half hour mark now so hey things are looking uh [Music] you got your appetizers in there nope hey what about appetizers they're all cooking you want to start on those pizzas relax take a chill i might as well keep fit do something couldn't i know go for a jog go to bathroom coming up nothing wrong with working off for lunch when you get it today could be summed up in one four-letter word lazy i can't even start to help both of you when you're not helping yourselves i really need you to do something both of you go through your kitchen and clean it not your staff you both of you got it yep good night get to work we weren't lazy now we're paying for it we're failures yay i'm just making a turkey here can i do this what's wrong jim i can't clean anything about failure i'm making a mess [Music] i feel bad we are in trouble i really don't know if we can fix it that's the problem [Music] go take a break jim no i can't take a break because i'm too lazy as it is [Music] okay it's been so obvious that you've been handcuffed by daryl and here's what i want you to do show daryl how creative how inspirational how exciting you can be with seafood there's a grocery store literally two miles away from here okay have a look at the ingredients get inspired come back get creative i want to see that on a plate yeah thank you good right now i'm pretty jacked up gordon ramsay himself said jason time for you to be inspired go let it happen let's see what you got all right let's see what they got fresh how may i help you redfish fresh and just put it out hour and a half ago that's what we're looking for it's extremely liberating to have this freedom to showcase and do what we want to do cook good food very nice to meet you thanks guys i am uh looking for red onions with uh asparagus let's do a red pepper this will be the last thing i get and we're ready to ride there is there it is showcase the skills so happy think of something creative and really let it go yeah yes okay off we go guys yep yeah i'm gonna do a chicken fried steak at the same time okay brilliant own it yeah yeah sure you could put a little lime juice in there yes i'm not done yet with it okay good i love the idea the bacon and cheddar nice so in terms of the inspiration tell me what it is try to keep it southern with the grits fresh with the salmon and classic with the capers with the onions with the tomatoes good keep it with the new orleans theme redfish and then grilled vegetables fresh rice fresh ingredients it's just a fun dish pretty good job the difference of night and day let me tell you that beautiful now you say nothing you didn't cook them i cook them you understand yes okay let's go come over guys please wow look at that you think of louisiana first thing you think of is freshness but when i walked into your restaurant what i didn't expect was frozen seafood so i got my team to get some ingredients for me like you both just have a little taste taste of freshness a beautiful chocolate salmon done with grits creamy tasty it's absolutely phenomenal and i got a hold of some red fish marinated zucchini with some rice and a really nice mango salsa oh my gosh this red fish is delicious it's phenomenal it's absolutely phenomenal phenomenal absolutely watching them eat my dish and not knowing that it was mine and to say that you know it looked like it was from their heart i'd like you to have a little taste of that chicken fried steak i just lightly pounded it and then fried it twice so it should just melt in your mouth it does melt yeah literally literally melted chip and couldn't believe how good it was the presentation was beautiful and it was fresh ingredients and they tasted wonderful they're all absolutely phenomenal you taste the difference absolutely there's something you need to know about the seafood dishes i didn't cook them the two chefs put those dishes together wow the seafood dishes are your boys delicious absolutely they really are they're phenomenal it really opened my eyes to what i i wasn't letting them do honestly food is art and i was not letting them create their art these aren't just delicious they're beautiful and they come from right inside you i know that you did a fantastic job it feels really good that daryl and ellen recognize my potential and i think that my abilities have been shown and hopefully this is the first step forward this is the music i can see that's what we're looking for and all i could really think to myself was about [ __ ] time you see it really good job well done so let's get cracking on with the fish soup cook off your mussels and we'll save the juice yeah have you cooked mussels before no you're pulling my plonker now aren't you you've never cooked a mussel all right we can shower you can [ __ ] help i don't mind what do you mean i can help hey what did we do for the last yeah okay fine you're right i'm sorry what been doing the last two hours fine so what we want in here i'm just amazed you've never cooked a mussel don't take the piss at me for it though go on yeah finish it then finish what what are you back no i haven't got one right okay right so shall i show you how to cook a muscle oh at last thank you yes please right are you gonna tone your voice down or you're gonna shout like some dick i'll shout like something and then i'll calm down right now why don't you [ __ ] off to the bookshop read how to cook a muscle and come back and see me yeah and i'll run your [ __ ] restaurant thank you plonker
