hi guys and welcome back to my channel today i'm going to share with you guys how to make some delicious beef enchiladas in case you just want to help make this super easy and delicious recipe just stay tuned and i'll show you how alrighty guys so let's get started with our ingredients so for this recipe we're going to need two pounds of ground beef corn tortillas your choice of cheese 2 chile ancho 2 chile de arbol seven tablespoons of flour oil three roma tomatoes a quarter of a small white onion six garlic cloves two chile serranos three small carrots two medium sized potatoes four tablespoons of tomato paste four cups of chicken stock low sodium a quarter teaspoon of vinegar two bay leaves ground cumin two teaspoons of oregano four tablespoons of chili powder one tablespoon of black pepper and salt so these are ingredients now let's get started okay so first we're going to begin by chopping our potatoes chili serrano carrots tomatoes and onion all right so once we have our vegetables all nicely chopped we're going to clean out our chile de ancho all right so in a small saucepan we're going to bring three cups of water to a boil all right so once our water comes to a foil we're going to turn it off we're going to throw in our chili de ancho and chile de arbol and now we're just going to set them to the side and meanwhile we're going to work on our picadillo all right so for our picadillo we're going to make a garlic paste so we're going to throw in three garlic cloves in our molcajete and we're just going to smash them so smash your garlic cloves and to our garlic we're going to add our peppercorn oregano and bay leaves smash them as well so delicious all right so once we have our spices both nice and smashed we're going to add two teaspoons of ground cumin and i'm adding one and a half tablespoons of salt of course that's all is going to be all up to you and to that we're going to add half a cup of water so just make sure you get all your spices mix it together i'm out of breath all right so once we have everything nice and mixed now we are ready to make our meat all right so in a small frying pan i'm going to set it on medium-high heat i'm going to add a little bit of oil and we're just going to wait for that to heat up all right so once all is hot we're going to throw in our onion and we're going to fry our onion for a couple minutes [Music] okay so after two minutes we're going to throw in our meat break it down all right so now we're going to add our spices make sure you get everything so just break down your meat we're just going to brown our meat all right so once our meat has browned we're going to throw in our potatoes carrots and chili serrano so mix it all together all right so once everything is mixed we're going to cover it reduce the heat to medium and let that cook for 10 minutes all right so at this point we're going to drain the water from our chilis ready and transfer your chilis to your molcajete all right guys it's been 10 minutes so now we're just going to remove any liquid okay so now that you have removed as much liquid as we could we're going to add the tomatoes now we're just going to give it another five minutes or until the tomatoes have softened and then our picadillo filling is done alrighty guys so after five minutes our picadillo is done so now we're just going to set it to the side and now we can work on our sauce okay so now to make the base for our sauce we're going to um in our mocajete we're going to smash our chiles three garlic cloves so just make sure that you smash them all right guys so once we have our chili paste now we're going to add our tomato paste okay our chili powder one and a half teaspoon of cumin and salt the salt once again is going to be up to your liking i'm using two teaspoons and a quarter so now we're just going to mix it all together until we have one paste and if you don't have a molcajete you can use a food processor um i just know that the blender is not gonna do it at least not my blender but use whatever works for you all right so to our paste we're going to add a little bit of vinegar so that was about a quarter teaspoon right so now once we have it all nice and combined now we are ready to make our delicious enchilada sauce okay so now we're going to grab our pan we're going to set it on medium heat and we're going to add seven tablespoons of oil so we're just going to wait for our oil to heat up all right so once ours had we're going to add our flour and we're just going to mix it and incorporate the oil in our flour together and make sure that there's no clumps get all your flour alright so as soon as it's all incorporated we're going to add our chicken stock and whisk as you're throwing it in now we're just going to whisk until our sauce comes to a simmer alright guys so after five minutes our sauce should look something like this so it should have thickened so now we're going to throw in our chili paste throw it in there and now mix it with our sauce so just mix it until we have our delicious enchilada sauce now for this sauce the sauce needs to be a gravy consistency but if for you it feels like it's too thick just add more chicken stock or our water okay so just keep mixing it and we're going to wait for it to come to a simmer so once it begins to simmer lower down to low heat and let it simmer for five minutes and at this point you also want to try for salt and see if it needs any and if it does go ahead and add it for me this is perfect so i'm going to leave it as it is alright guys so after five minutes our delicious enchilada sauce is ready so now we are ready to make our enchiladas all right so now i'm going to grab a small frying pan i'm going to sit on medium heat and i'm going to add a little bit of oil we're just going to wait for our oil to heat up so like that we can begin frying our tortillas all right guys so once all you guys had we're going to throw in the tortilla and we're going to lightly fry it until you see the tortilla blister and we're just going to repeat the process until we have reached the desired amount of enchiladas that we're making okay so once we have a tortillas ready you also want to make sure that your cheese is ready so make sure that you shred it finely all right so now we are ready for the fun part to put our enchiladas together all right so since we're going to be putting our enchiladas in the oven we're going to preheat our oven to 325 degrees all right so now we're also going to get our baking dish and we're going to spray it with some nonstick cooking spray okay so now that we have that we're going to set it to the side and start assembling our enchiladas okay so we're going to grab a tortilla we're going to dip it in our enchilada sauce now we're going to add our picadillo filling so it just depends on how much filling you want then that's the amount that you're going to add so now i'm just going to close it just like that and now we're going to place it in our baking dish okay and now we're just going to repeat the process to all of our tortillas okay so now i'm going to grab my extra sauce and i'm going to layer it in the middle of my enchiladas okay so now we're going to grab our cheese and we're going to cover enchiladas with our cheese all right so now we're going to bake our enchiladas for about five minutes or until the cheese has completely melted alright guys so after seven minutes this is what your enchiladas should look like so now we are ready to serve grab it get all the cheese and of course you can serve it with beans rice whatever your favorite size are all right so i'm going to serve mine with some rice and inside of lettuce and some sour cream and now we are ready to enjoy our delicious beef enchiladas you guys and now for the best part the taste test i am so ready and i love enchiladas so anything enchiladas for me are just so enjoyable so now enjoy what's up
